Steps:
- Bruise the lemongrass using the side of your knife (or a pestle). Slice the white part only into 0.5cm / 1/4" slices, thick enough to pick off later if any stick to the wings.
- Combine lemongrass with the rest of the marinade ingredients and mix well.
- Combine marinade with wings in a ziplock bag. Remove as much air as possible from the bag and seal. Massage marinade into the wings to evenly disperse.
- Marinate for at least a few hours, preferably overnight.
- When ready to cook, pour the wings and marinade into a large bowl.

Steps:
- Preheat the oven to 120C/250F and place a rack on a large baking tray.
- Cut each wing at the joint so you have a mini wing and a drumette. Dry the wings with paper towels, then place in a large bowl and add the baking powder, salt and pepper. Toss to combine. Note - it's important to dry the wings first so they only get a light coating. Discard any remaining coating once tossed together.
- Place in a single layer on the rack, skin side up. It's fine for them to be touching. Place on the lower shelf of the oven for 30 minutes.
- After 30 minutes, turn the oven up to 220c (425f), rotate the tray and place on a higher shelf (higher middle) in the oven for 45-50 minutes until the wings are golden and crispy. Take out of the oven to cool slightly.
- Place all of the sauce ingredients into a saucepan, stir and bring to the boil. Allow to bubble for 5-10 minutes until the sauce reduces and thickens slightly (it will thicken more as it cools). Turn off the heat.
- Place the wings in a large bowl and very carefully pour over the sticky sauce (be careful, it will VERY hot). Toss to combine, then serve topped with chopped spring onions.

GRILLED ASIAN WINGS
The crew and I really loved these wings! The marinade was great and had a little kick to it. The honey sriracha sauce takes these to another level. You still get the sweetness from the sauce without the sriracha being too overwhelming. Take these to your next tailgating party and you'll get many high fives.

Steps:
- 1. Wash and remove any excess fat from the chicken wings (I usually buy organic and they're pretty clean). Place the wings in a shallow dish to marinate and add the steak seasoning, soy sauce, garlic powder and Sriracha. Move around so they're all covered with seasoning. Do not add salt, soy sauce has a more than sufficient amount of salt. Allow the wings to marinate for at least 30 minutes, preferably longer, overnight would be best.
- 2. Remove from the fridge about 10 minutes before you're ready to grill.
- 3. Prepare the honey drizzle - add about 1/2 cup honey and 1 tbsp Sriracha and set aside.
- 4. Pre-heat the barbecue, once the thermometer reaches the desired temperature, about 350 degrees; grill the wings for about 10-12 minutes (or until done).
- 5. Once the wings are cooked, drizzle with the honey Sriracha mixture and sprinkle with cilantro.
- 6. Enjoy these tasty bites as an appetizer or accompany with a delicious grilled corn on the cob!
ASIAN ENOUGH GRILLED CHICKEN WINGS
This recipe's a winner - it's got enough flavour for the more adventurous in the crowd and yet it's not spicy at all. It is a sweet and oh so tasty recipe. I did NOT include the overnight marinating time. Enjoy!

Steps:
- Mix up the marinade ingredients. Toss in the chicken wings, stir and then let marinate overnight. It's a good idea to reserve some of the marinade (before adding the chicken) and keep it for basting your wings as they come off the grill.
- Preheat grill to medium heat.
- Place your wings on the grill. Remember, there's lots of honey and sugar in this recipe. So, don't let the heat get too high and keep the wings turning.
- After about 15 to 20 minutes your wings should be cooked through, depending on your grill. Remove from grill.
- Baste the wings with your reserved marinade and enjoy.

- Combine the rice vinegar, sesame oil, soy sauce, Sriracha, Korean chili flakes (Gochugaru), sesame seeds, sugar, and pinch of salt to a non stick pan.
- Once your wings are done, toss well. You want the wings to be completely covered in sauce. I serve them in a bowl with a spoon on the side so you can add more sauce if you so choose.
