Sautéed Greens with White Beans and Garlic image

Fresh greens combine with pantry classics of olive oil, crushed red pepper and canned cannellini beans in this simple, nutritious side dish that pairs well with hearty entrées. This dish can be made with a mix of your favorite greens such as spinach, mustard greens, curly endive, escarole, kale and broccoli rabe.

Number Of Ingredients 8

2 tablespoons extra-virgin olive oil
3 cloves garlic, thinly sliced
1/4 teaspoon crushed red chile flakes (optional)
1 1/2 pound mixed greens, trimmed and roughly chopped, such as escarole, curly endive, mustard greens, spinach, kale or broccoli rabe
1 cup low-sodium chicken or vegetable broth
2 (15.0-ounce) cans no-salt-added cannellini or other white beans, rinsed and drained
1/4 teaspoon fine sea salt
1/4 teaspoon ground black pepper

Steps:

  • Heat oil in a large skillet over medium heat.
  • Add garlic and pepper flakes and cook, stirring often, until golden brown, about 5 minutes.
  • Add greens (in batches, if needed), and cook, tossing often, until wilted and bright green, 3 to 4 minutes.
  • Transfer to a colander as done and drain well. Return skillet to heat.
  • Add broth to skillet and deglaze, scraping up any browned bits.
  • Add beans and simmer until hot throughout, 2 to 3 minutes.
  • Return greens to skillet, toss gently and season with salt and pepper.

This is a very garlicky salad. A nice fast dinner. A slight adaptation from a recipe in "Weight Watchers Miracle Foods" cookbook. Each serving is 3 points as written. Though I suggest a tad more sauce, which would make the points go up a smidge. Red onion is preferred because of the milder taste. If you like the taste of raw onion, then yellow is fine too. The original recipe called for serving it immediately. I like to let it sit a few minutes so the tastes will meld, but it would not keep for more then an hour or 2. If you don't have baby greens, spinach would be excellent.

1/2 cup sliced onion
1 tablespoon olive oil
1 tablespoon apple cider vinegar
1 garlic clove, minced (or more to taste)

  • Mix them, the rinsed and drained beans, and the onion in a bowl.
  • In a smaller bowl or shaker combine the vinegar, the oil, and the garlic.
  • Add the salt and pepper and mix it all well.
  • Add the dressing to the greens and toss it together.
  • Let it sit about 5 minutes so the tastes will meld.

2 teaspoons Dijon mustard
1/4 cup extra-virgin olive oil
Salt and freshly ground black pepper
Pinch freshly grated nutmeg
1 large or 2 small heads escarole, cleaned and dried, roughly chopped
1 (15-ounce) can cannellini beans, rinsed and drained

Steps:

  • Combine lemon zest, lemon juice, garlic, mustard, olive oil, salt, pepper and a pinch of nutmeg. Toss with greens and beans and serve.

2 pounds fresh green beans, trimmed and cut into 1-1/2-inch pieces
1/4 cup olive oil
3 tablespoons lemon juice
3 tablespoons balsamic vinegar

1/4 teaspoon garlic powder
1/4 teaspoon ground mustard
1/8 teaspoon pepper
1 large red onion, chopped
4 cups cherry tomatoes, halved

After they are soaked, drain the beans and add them to a large stockpot with 6 cups water, 1 sprig of rosemary, 5 sage leaves, and bay leaves. Bring to a boil. Reduce to a slow boil and cook until the beans are tender and creamy on the inside, 60-90 minutes.
  • Once the beans are almost finished cooking, in a large skillet heat oil over medium-low heat. Add the onion, chili flakes, salt, pepper, remaining rosemary, remaining bay leaves, remaining sage, and garlic. Cook until the onion is softened, 5 minutes.
  • When ready, drain the beans, discard the herbs, and add the beans to the olive oil. Stir and coat the beans in the oil mixture. Remove from the heat and allow to cool for 15 minutes.
  • To the slightly cooled beans, add the ribbons of zucchini, arugula, and Parmesan. Stir and serve with a fresh squeeze of lemon juice, lemon zest, and Parmesan on top.
