This is my favorite casserole for when I need to bring a dish to pass. It is always requested! It's a cheesy broccoli and rice casserole that is oh-so-good!

- Preheat oven to 350 degrees F (175 degrees C).
- In a 2-quart casserole dish combine soup, cheese sauce, rice, milk and broccoli; mix well.
- Bake in preheated oven for 1 hour, or until lightly browned.

I found this recipe in a casserole cookbook by James Villas and made some changes to suit my tastes. This makes a great potluck or buffet dish.

Steps:
- Preheat oven to 350 degrees F.
- Butter a 2-quart baking dish and set aside.
- In a large bowl, combine the rice, 3/4 of the cheddar cheese, ricotta, sour cream, garlic, salt, and pepper.
- Mix until well blended.
- Add the spinach, bell pepper, chiles, and green onions.
- Mix until well blended.
- Transfer to prepared baking dish.
- Sprinkle the remaining cheddar cheese over the top and bake until golden, about 30 minutes.

GREEN RICE CASSEROLE
I grew up eating this at family parties and requested the recipe from my Aunt while I was in college. It is tasty and transports well if you're going to a potluck. Use it as a side dish or a vegetarian one dish meal with some crusty bread. I like it cold though it designed to be served hot.

- Cook and drain the broccoli.

Steps:
- Cook rice according to package directions.
- Stir cheese whiz into hot rice.
- Meanwhile heat margarine in skillet and sauté celery and onion until soft but not brown.
- Cook broccoli according to package directions and drain well.
- Fold celery, onion, broccoli, and soup into rice mixture.
- Pour into greased 3 quart casserole.
- Bake uncovered 1 hour in 350 degree oven.

- In a large bowl, combine the rice, parsley, 1/3 cup cheese, onion, green pepper and garlic. In another bowl, combine the eggs, milk, oil, lemon juice and zest, salt, seasoned salt and pepper. Stir into the rice mixture. , Transfer to a greased 2-qt. baking dish; sprinkle with remaining cheese. Bake, uncovered, at 350° for 40-45 minutes or until golden brown.

CREAMY GREEN RICE CASSEROLE
I don't remember where I got this recipe. I think I cut it out of the local newspaper years ago. It's really easy and I think it could be modified easily to meet your tastes. I often use boil-a-bag rice for easy preparation, and have often used dried parsley (still using 1/2 cup) and it always turns out great.

- Preheat oven to 325 degrees.
- Mix together all ingredients except olive oil and garlic.
- Place olive oil in the bottom of a casserole dish or square glass baking dish. Rub the dish with one bulb of chopped garlic and leave the garlic in the dish.
- Pour mixture into baking dish and bake for 30-40 minutes at 325 degrees.
