1-1/3 cups chopped sweet onions
1 tablespoon butter
1 can (8-1/4 ounces) cream-style corn
1 package (8-1/2 ounces) cornbread/muffin mix
2 large egg whites, lightly beaten
2 tablespoons fat-free milk
1/2 cup reduced-fat sour cream
1/3 cup shredded sharp cheddar cheese

Steps:

  • In a small nonstick skillet, saute onions in butter until tender; set aside., Meanwhile, in a large bowl, combine the corn, muffin mix, egg whites and milk. Pour into a 9-in. square baking dish coated with cooking spray. Combine sour cream and onions; spread over batter. Sprinkle with cheese., Bake, uncovered, at 350° until a toothpick inserted in the center comes out clean, 25-30 minutes.

1 cup, plus 3 tablespoons stone-ground cornmeal
1 cup whole milk, more if needed
2/3 cup heavy cream
3 tablespoons unsalted butter
2/3 cup buttermilk
1 teaspoon salt
1 teaspoon freshly ground black pepper
4 ounces sharp Cheddar cheese, grated
4 eggs, separated
1/4 cup finely chopped green onions, green and white parts
1 teaspoon chopped fresh thyme leaves
1 teaspoon baking soda
1 teaspoon baking powder
2 teaspoons sugar

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9 by 13-inch baking dish with 1 tablespoon butter. Add 3 tablespoons cornmeal to the dish and tilt the dish to coat the bottom and sides with the cornmeal. Set the baking dish aside.
  • Combine the milk, cream, buttermilk, salt, and pepper in a medium saucepan, and bring just to a boil. Whisk in the 1 cup cornmeal and cook, stirring constantly, until the mixture thickens and has the consistency of grits, 1 to 2 minutes. Remove the saucepan from the heat and immediately transfer the mixture to a heatproof bowl. Stir in the cheese, and set the bowl aside until the mixture is lukewarm, stirring often to prevent a skin from forming on the top, 10 to 15 minutes.
  • In a small bowl, lightly beat the egg yolks. Then stir the yolks, green onions, thyme, baking soda, and baking powder into the cornmeal mixture.
  • Combine the egg whites and the sugar in a mixing bowl, and beat until stiff peaks form. Fold 1/3 of the whites into the cornmeal mixture to lighten it. Then gently fold in the remaining whites, taking care not to deflate the whites.
  • Transfer the mixture to the prepared baking dish, and bake until the spoonbread is puffed and golden brown on top, and a knife inserted into the center comes out clean, about 30 minutes. Serve immediately.

2 tablespoons butter, unsalted
3 1/2 cups milk
1 cup yellow cornmeal
1 1/2 cups green onions, finely chopped
salt & freshly ground black pepper
1/2 teaspoon hot sauce
5 eggs
1 1/4 cups cheddar cheese, coarsly grated

Steps:

  • Preheat the oven to 400 degrees F.
  • Butter an 8-cup gratin dish or souffle dish with 2 teaspoons of the butter and set aside.
  • In a large heavy saucepan, bring the milk and remaining butter just to a boil. Whisk in the cornmeal, little by little, until smooth and thoroughly combined. Return mixture to a boil, reduce heat slightly so the mixture remains at a low boil, partially cover pan and cook until quite thick, 4 to 5 minutes. Transfer to a large mixing bowl, add the green onions, salt and pepper and hot sauce, to taste. Let stand, covered with plastic wrap, for 10 to 15 minutes.
  • In a separate bowl, whisk the eggs until light and fluffy. Whisk the eggs into the hot cornmeal mixture, along with 1 cup of the Cheddar. Turn mixture into the buttered dish and place entire dish on a baking sheet. Sprinkle the top with the remaining 1/4 cup of cheese. Bake until firm, puffy, and golden brown on top, 35 to 40 minutes. Serve immediately.

1 teaspoon each salt and sugar
2 tablespoons unsalted butter
1 cup yellow cornmeal
2 teaspoons baking powder
1/2 teaspoon baking soda
1 cup buttermilk
3 eggs, separated
2 green onions, thinly sliced

Steps:

  • Preheat oven to 375 degrees. Butter 2 quart baking dish. In a 3 quart saucepan heat milk, salt, sugar & butter to boiling point. Slowly add cornmeal and stir with a wooden spoon for a few minutes or until mixture is thick. Remove from heat and transfer to a mixing bowl. Beat in baking powder and baking soda, Beat in buttermilk, scallions and egg yolks, one at a time.
  • Cool to room temperature. Whip egg whites until stiff and fold in. Bake 40 minutes or until top is puffy. Spoon out onto plates alongside salad. Serve with soup of choice.

I am going to show you how to make naan Chef John-style-when I want it fast and I don't want to use yeast and wait for a dough to rise but I also want it just as good as if I did. While I originally tried this method to save time, it produces what might be my favorite style of naan. It really is incredible whether you use garlic and green onions, or not. As naan are made, they must be stacked and wrapped in a kitchen towel to keep them soft and supple.

1 ½ cups bread flour, plus more as needed
½ teaspoon kosher salt
2 teaspoons baking powder
1 teaspoon plain Greek yogurt
4 cups crushed garlic
½ cup thinly sliced green onions
2 tablespoons melted butter

Steps:

  • Place bread flour in a bowl. Add salt and baking powder and give it a good whisk until evenly combined.
  • Add in Greek yogurt gently, followed by garlic and green onions. Take a wooden spoon and slowly start mixing everything together. Keep mixing, stirring, and pressing until a shaggy dough forms.
  • Transfer dough to a work surface and use your hands to press dough together. Knead for a few minutes until dough becomes elastic and a little bit sticky. Add a bit more flour as necessary but try to keep extra flour at an absolute minimum. Knead until dough is a little bit stretchy, 3 to 5 minutes.
  • Wrap in plastic and allow to rest on the counter for 15 to 20 minutes.
  • Take a bench scraper and cut into 6 equal pieces. Take 1 portion and roll into a ball. Place onto a generously floured surface. Use a rolling pin to roll out nice and thin, about 1/8 inch or less. It's ok if the naan is not a perfect circle. You will need extra flour for rolling out as the dough is sticky, but try to use as little as possible.
  • Heat a cast iron skillet over medium-high heat until hot. Transfer dough circles into the hot dry skillet and cook until little bubbles form on the surface and the underside is lightly browned, about 1 minute. Flip naan over and cook for 1 more minute. Press down slightly with a spatula to increase the heat during cooking. Flip over twice more and cook for an additional 15 seconds per side, but make sure not to overcook to preserve the texture. Naan should still be flexible when you remove it from the skillet onto a plate.
  • Cover with a kitchen towel to keep warm and moist while you cook the other naan breads. Stack all 6 naan breads on top of each other and keep covered with a kitchen towel.
  • When you are finished cooking all 6 naan breads, unstack breads and brush the first naan bread on both sides with a little bit of melted butter. Stack second piece of naan on top and only brush the top side. Keep stacking and buttering all the naan breads. Fold each naan into a triangle and serve.

This is a soft corn bread type texture that needs to be served with a spoon. It is excellent with roast chicken, roast turkey and roast pork. It is often served spiced up with Jalapeno peppers and is also excellent warmed up the next day. This recipe makes excellent leftovers.

1 tablespoon butter
1 small onion, finely diced
1 pinch cayenne pepper
salt
2 cups milk
2/3 cup cornmeal
3/4 cup cheddar cheese
4 eggs, separated
1 cup corn kernel (fresh or frozen)
1/2 cup of hominy corn (both found in cans) or 1/2 cup creamed corn (both found in cans)

Steps:

  • Preheat the oven to approximately 375°F and have ready a casserole dish, approximately 8x10 inches, lightly buttered.
  • In a clean saucepan, melt the butter and lightly sauté the finely diced onions. Add a pinch of cayenne pepper and salt.
  • Add the milk and bring to a simmer. Add the cornmeal and work briskly with a wooden spoon to prevent any lumps. Cook the cornmeal for 6 to 8 minutes, stirring gently over low heat. Remove from heat and allow to cool for 15 minutes.
  • Next add the cheese, the egg yolks and the corn and stir well so that everything is thoroughly mixed.
  • Whisk the egg whites so as they are at a soft peak stage and then incorporate 1/3 at a time to a corn mixture.
  • Pour everything into the casserole and bake for approximately 20 to 30 minutes. Let cool for 5 minutes prior to serving.

Steps:

  • Preheat oven to 350°F.
  • In large bowl, whisk together all-purpose flour, whole wheat flour, baking powder, sugar, baking soda and green onions.
  • In smaller bowl whisk together buttermilk, butter and egg and pour over flour mixture, tossing with fork to form sticky dough.

3/4 cup instant cream of wheat or 3/4 cup quick cream of wheat
1 cup shredded cheddar cheese (may use low fat if desired)
1/2 cup milk

Steps:

  • In large saucepan, over high heat, heat water to a boil; slowly sprinkle in cereal, stirring constantly.
  • Return mixture to boil; reduce heat.
  • Cook and stir until thickened, about 2-3 minutes.
  • Remove from heat; stir in cheese until melted, then milk, egg yolks and pepper.
  • In small bowl with electric mixer, beat egg whites at high speed until stiff peaks form; then gently fold egg whites into cheese mixture.
