GARDEN VEGGIE FRIES
The crunchy baked veggie sticks are sure to be a kid pleaser!

Steps:
- Heat oven to 300°F. Line large cookie sheets with cooking parchment paper. Place flour and beaten eggs in separate shallow bowls. In another shallow bowl, stir bread crumbs and Parmesan cheese until well mixed.
- Toss vegetables in flour, coat with egg and toss in bread crumb mixture. Place in single layer on cookie sheets.
- Bake 12 to 15 minutes or until golden brown and vegetables are crisp-tender. Serve with ranch dressing.

GREEN BEAN FRIES
These are tasty alternatives to both regular french fries and also a way to get in your veggies! I make them by the truckload and freeze them. My husband hates green beans but gobbles these up! Serve with Ranch dressing or another favorite dipping sauce.

Steps:
- Heat the oil in a deep fryer or electric skillet to 375 degrees F (190 degrees C).
- Combine the green beans and water in a saucepan. Cover and bring to a boil. Cook until the beans are bright green, about 4 minutes. Drain and transfer to a bowl. Cover with cold water and set aside.
- In one bowl, whisk the egg and milk together. In a separate bowl, mix together the bread crumbs, chili powder, garlic powder, and onion powder. Drain the green beans and toss with flour to coat, shaking off the excess. Dip the beans into the egg mixture and then into the bread crumbs, coating thoroughly.
- Fry beans in batches so they are not touching. Cook until golden brown and crispy, about 2 minutes. Drain on paper towels.

GREEN GARDEN FRIES
Fast food meets the backyard! These crispy green "fries" are made from fresh garden veggies. Oven fried and served with a lemony Greek yogurt dipping sauce, they are the perfect summer side dish.

Steps:
- In small bowl, mix dip ingredients. Cover and refrigerate.
- Heat oven to 400°F. Line large cookie sheet with foil and spray with cooking spray; set aside.
- In small bowl, mix bread crumbs, Parmesan cheese, 1 tablespoon fresh herbs and the salt. Line up 3 baking dishes or shallow bowls. Place flour in first dish. Place eggs in second dish. Place bread crumb mixture in third dish. Dip and roll vegetables into flour to coat, dip into eggs, then coat with bread crumb mixture. Place coated vegetables on cookie sheet. Sprinkle any remaining crumb mixture over vegetables. Drizzle with melted butter.
- Bake 18 to 20 minutes or until vegetables are tender and coating is light golden brown. Serve with dip.

GREEN BANANA FRIES
I learned about this when I was in Kenya. I've never tasted better fries nor more nutritious fries. Potatoes aren't that common in Kenya but bananas and roots are. They taste as good as any fast food French fries and are healthier. Green bananas are the healthiest because they have all their vitamins where ripe ones lose most of them because they're too ripe. Green bananas do not have a strong banana flavor at all. It's very deceptive and very healthy. I couldn't stop eating them.

- Peel the bananas using a knife, as they are not ripe and will not peel like a yellow banana. Slice into long thin wedges or strings to make fries.
- Heat the oil in a heavy deep skillet over medium-high heat. If you have a deep-fryer, heat the oil to 375 degrees F (190 degrees C). Place the banana fries into the hot oil, and fry until golden brown, 5 to 7 minutes. Remove from the oil, and drain on paper towels. Pat off the excess oil, and season with salt. Serve immediately.

- Wash green beans and dry thoroughly.
- Whisk together eggs and egg white in a shallow bowl until just frothy. Whisk in 1/4 teaspoon salt and 1/4 teaspoon pepper.
- Combine seasoned and regular panko, Parmesan cheese, garlic powder, and remaining salt and pepper in another shallow bowl; mix well.
- Coat 1/3 of the beans lightly with the egg mixture, then toss in the bread crumb mixture until well coated. Place in a single layer in an air fryer basket and spray lightly with olive oil spray.
- Air-fry at 400 degrees F (200 degrees C) until beans are golden and crunchy, about 6 minutes.
- Repeat Steps 4 and 5 to coat and air-fry the remaining beans.
- Stir together mayonnaise, Sriracha, and lemon juice in a small bowl until well combined. Serve with the air-fried green beans.

GREEN CHILI FRIES
I love green chili, and french fries, and cheese 3 of my foods. All in one dish can't get any better than that. I make green chili at least once ever 2 months. I do not eat legumes (beans)......except for green beans. Any way this is how I like to make my chili cheese fries. Hope you all enjoy.

Steps:
- Peel and cut potatoes into french fry sticks.
- Either fry potatoes in oil or bake in a 400 oven for 15 to 20 minutes.
- Heat green chili in a saucepan.
- When potatoes are done place on a broil proof pan, I use a metal pie pan, pour green chili on top then sprinkle with cheese.
- Place back into a broiler for 5 minutes to melt cheese.
- Optional toppings: sour cream, onions, jalapenos, or guacamole.

- Heat a few cups of vegetable oil in a deep pot or fryer over medium-high heat.
- Pour chicken broth into a saucepan and bring to a boil over medium-high heat.
- Add the green beans and let boil for 5 minutes.
- Remove beans from broth with a slotted spoon and set in a bowl of cold water.
- After beans are cooled down, pat dry with a paper towel.
- Whisk the egg and milk together in a shallow bowl.
- In another shallow bowl, combine flour, breadcrumbs, onion powder, garlic powder, salt and pepper.
- Dip the beans into the egg mixture, followed by the flour mixture and place in hot oil, a few beans at a time. Cook for 2-3 minutes or until golden brown.
