5 cups baking potatoes, peeled and cubed
¾ cup milk
2 tablespoons unsalted butter
2 teaspoons curry powder
1 teaspoon salt
½ teaspoon ground turmeric
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon ground coriander
¼ teaspoon cayenne pepper

Steps:

  • Place potatoes into a pot and cover with salted water. Bring to a boil at medium-high heat and cook until tender, about 10 minutes.
  • Remove potatoes from heat and drain. Place potatoes back in the hot pot. Add milk, butter, curry powder, salt, turmeric, garlic powder, onion powder, coriander, and cayenne pepper.
  • Using a potato masher, mash potatoes until smooth and seasoning is evenly distributed.

If you like curry, you've got to try this. It's perfect with a simple roast chicken, beef or pork. It's hot and spicy, tart and tangy, creamy and comforting, as only mashed potatoes can be!

3 lbs russet baking potatoes
salt
3 tablespoons butter
1 large onion, finely chopped
1 tablespoon minced fresh ginger
1 clove garlic, minced
2 tablespoons curry powder
1/2 cup sour cream
1/2 cup plain low-fat yogurt
1 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Peel the potatoes and cut them into 1-inch chunks, dropping them into a large pot of cold water as they are cut.
  • Add a big pinch of salt, cover, and bring to a boil over high heat.
  • Boil until tender when pierced with a fork, 15 to 20 minutes.
  • Drain and return to the hot pan.
  • Meanwhile, melt 2 tablespoons of the butter in a large heavy skillet over moderate heat.
  • Add the onion and saute until softened, about 5 minutes.
  • Add the ginger and garlic and cook for 3 minutes.
  • Add 2 tablespoons water and stir constantly over high heat until the onion browns, about 3 minutes.
  • Stir in the curry powder and cook for 3 minutes.
  • Stir in 2 tablespoons water and remove from the heat.
  • Add the spice mixture to the potatoes along with the remaining 1 tablespoon butter, the sour cream, yogurt, salt and pepper.
  • Beat with a small electric mixer or mash with a potato masher until fluffy.
  • Serve hot.

POTATO AND COLLARD GREEN HASH

Potatoes and greens are a classic, rustic combination, and a very comforting one. The greens are blanched, and then cooked with onion and garlic. After a while, cooked potatoes are added and crushed into the greens. The dish isn't like mashed potatoes, more like a hash. Serve it as a side dish with fish or chicken, or with other vegetable dishes.

Number Of Ingredients 7

1 large bunch collard greens, about 1 1/2 pounds, stemmed and washed in 2 changes of water
Salt to taste
3 tablespoons extra virgin olive oil
1 onion, sliced very thin in half-moons
2 to 4 garlic cloves, green shoots removed, sliced thin
1/4 to 1/2 teaspoon crushed red pepper flakes (optional)
3/4 pound yellow-fleshed potatoes, such as Yukon gold

Steps:

  • Bring a large pot of water to a boil. Fill a bowl with ice water. When the water comes to a boil, salt generously and add the collard greens. Blanch for four minutes, and transfer to the ice water with a slotted spoon or skimmer. Drain and squeeze out extra water. Chop coarsely. Set aside the cooking water.
  • Heat 2 tablespoons of the oil over medium heat in a wide, lidded skillet or Dutch oven, and add the onion. Cook, stirring often, until it begins to soften, about three minutes. Add a generous pinch of salt, the garlic and crushed red pepper flakes. Continue to cook, stirring often, until the onion is tender, about five minutes. Stir in the collard greens. Mix together for a few minutes, and then add 1 cup of the cooking water and salt to taste. Bring to a simmer, cover partially, and simmer over low heat for 45 minutes to 1 hour, stirring often and adding more cooking water from time to time, so that the greens are always simmering in a small amount of liquid.
  • While the greens are cooking, scrub the potatoes and add to the pot with the cooking water. Bring back to a boil, lower the heat and simmer until the potatoes are tender, about 25 minutes. Remove the potatoes from the cooking water, and allow to cool slightly so that you can peel them if you wish. Cut them into large chunks.
  • Uncover the greens, and add the potatoes. Using a fork or the back of a wooden spoon, crush the potatoes and stir into the greens. Add a tablespoon of olive oil and salt and pepper to taste, and stir over low heat until the greens and potatoes are well combined. The potatoes should not be like mashed potatoes, just crushed and intermingled with the greens, like hash. Taste, adjust seasonings and serve.

These addictive mashed potatoes are equal parts potatoes and greens, lending texture and fresh flavor to the classic side dish. The amount of oil here is significant, but we all know that what makes mashed potatoes really good is fat. Use the best olive oil you have. 2 large starchy or all-purpose potatoes (about 1 pound), peeled and cut into quarters
Salt
1 pound dandelion or other greens, washed and trimmed of thick stems
1/4 to 1/2 cup extra virgin olive oil
Freshly ground black pepper
1 cup homemade bread crumbs

Steps:

  • Put potatoes in a large, deep pot and cover them with cold water. Add a large pinch of salt and bring to a boil. Cook until soft but not falling apart, 15 to 30 minutes. Remove with a slotted spoon and drain; meanwhile, add greens to water and cook for about 1 minute. Rinse under cold water. Drain well, then chop.
  • Heat oven to 400 degrees. Rice potatoes, run them through a food mill, or mash them with a fork or potato masher, adding enough olive oil to moisten them well. Mash in the greens, adding more olive oil as needed. Sprinkle with salt and lots of pepper.
  • Put mixture in an ovenproof dish and top with bread crumbs. Drizzle with more olive oil, sprinkle with salt and pepper, and bake until bread crumbs are golden brown, about 15 minutes. Serve hot or warm.

Steps:

  • Peel and chop up the potatoes.
  • Boil the potatoes until they are really soft.
  • Lower heat and drain.
  • Mash the potatoes.
  • Put the potatoes back in the pot along with 2 cups of water on low heat.
  • Add the curry roux and mix really, really well.
