GREEN CABBAGE SLAW WITH DIJON VINAIGRETTE
Everyone needs a go-to coleslaw recipe in their back pocket, and this one is mine. Whether served with my fried pork chop sandwich, fried seafood or pulled pork, it's an ideal make-ahead side that complements so many main dishes.

Steps:
- Whisk together the mayonnaise, mustard, vinegar, garlic powder, mustard seeds and sugar in a large bowl. Add the cabbage and shallot and toss well to coat. Season with salt and pepper. Cover and refrigerate until ready to serve.
GREEN CABBAGE AND YOGURT SLAW
This recipe lightens up average coleslaw by replacing mayonnaise with low-fat Greek yogurt.

- In a large bowl, toss together cabbage, bell peppers, and scallions. In a small bowl, whisk together yogurt, vinegar, mustard, and sugar; season with salt and pepper. Pour dressing over cabbage mixture and toss to coat completely. Season to taste with salt and pepper. Refrigerate 20 minutes (or up to 2 hours). Toss slaw before serving.

COLESLAW WITH YOGURT DRESSING

Steps:
- Remove any wilted outer leaves from the cabbage. Quarter the cabbage and slice off the cores. Shred the cabbage into a large bowl. Fold in the scallions and carrot.
- Mix the yogurt and mayonnaise together and season to taste with salt, pepper and sugar. Pour the dressing over the vegetables and mix. Refrigerate for at least an hour and up to 24 hours.
- Check seasonings and add the parsley just before serving.
