Green Beans with Peanut-Ginger Dressing image

Bring a bit of Thailand to your table with a ginger and peanut butter dip to serve alongside garden-fresh green beans.

1 lb fresh green beans, trimmed
1/4 cup creamy peanut butter
1 tablespoon sugar
2 tablespoons rice vinegar
2 tablespoons soy sauce
1 tablespoon vegetable oil
1/4 teaspoon crushed red pepper flakes
1 piece (1 inch) gingerroot, peeled, finely chopped (2 tablespoons)
1 clove garlic, finely chopped
Chopped peanuts, if desired

Steps:

  • In 3-quart saucepan, heat 6 cups water to boiling over high heat. Add beans to boiling water. Cook 4 to 6 minutes or until crisp-tender; drain. Rinse with cold water; drain. Cover; refrigerate while making dip.
  • In medium bowl, beat remaining ingredients except peanuts with wire whisk until smooth. Cover; refrigerate at least 30 minutes to blend flavors. Stir before serving. Garnish with peanuts. Serve beans with dip.

For the green beans:
1/2 tablespoon toasted sesame oil
2 cloves garlic, thinly sliced
1 pound green beans, rinsed and ends trimmed
For the sauce:
1 tablespoon reduced sodium soy sauce or coconut aminos
1/2 tablespoon toasted sesame oil
2 tablespoons creamy peanut butter
1 teaspoon freshly grated ginger
1 teaspoon rice wine vinegar
1/4 teaspoon red pepper flakes
1/4 cup water
Salt, to taste
To garnish: Green onion, sesame seeds and a tablespoon or two of cashews/roasted peanuts

Steps:

  • Place a large skillet over medium heat. Add in 1/2 tablespoon sesame oil and garlic, saute for 30 seconds or until garlic is fragrant. Immediately add in green beans; stir frequently until beans are slightly golden brown, about 5-8 minutes.
  • While the beans are cooking, make the sauce: In a medium bowl, add soy sauce, sesame oil, peanut butter, ginger, vinegar, red pepper flakes and water. Stir to combine.
  • One green beans are cooked and slightly golden and al dente, reduce heat to low and pour sauce over the beans. Stir to coat the beans, then cover and simmer for a few minutes to allow the beans to continue cooking.
  • Taste and add salt, if necessary. Garnish with sliced green onion, sesame seeds and a tablespoon or two of cashews.

SAUTEED GREEN BEANS WITH CREAMY LEMON DRESSING



Sauteed Green Beans with Creamy Lemon Dressing image

2 tablespoons olive oil
2 shallots, chopped
2 pounds green beans, trimmed, cut into 1 1/2-inch pieces
Kosher salt and ground black pepper
1 cup heavy cream
6 sprigs fresh thyme, leaves only
1/2 lemon, zested and juiced
1 cup chicken broth
2 tablespoons sour cream

Steps:

  • Heat the olive oil in a large skillet over medium heat. Add the shallots and cook, stirring, until softened, about 1 minute. Add the green beans and salt and pepper to taste. Saute, stirring occasionally, until crisp tender, about 5 minutes. Transfer to a serving dish and set aside.
  • Return the skillet to medium-high heat and add the cream, thyme, lemon juice and zest, and chicken broth. Bring to a simmer and let reduce by half, until thick enough to coat the back of a spoon, about 5 minutes. Remove from the heat and stir in the sour cream. Add salt and pepper to taste.
  • Pour the dressing over the green beans to serve.

One of the only ways I like green beans! This comes from Japanese Home Style Cooking, a book given to me by a girl who lived with us. Prep time includes allowing the beans to stand in the soy sauce.

1/2 lb green beans
1/2 teaspoon soy sauce
3 tablespoons sugar-free chunky peanut butter
1/2 tablespoon sugar
1/2 tablespoon soy sauce
1 tablespoon dashi (I use instant granules for this-about 1/4 teaspoon mixed in a tablespoon water)

Steps:

  • String the beans and cook uncovered in plenty of boiling water until they turn bright green.
  • Do not overcook.
  • Drain, spread out to cool.
  • Cut diagonally into 1 inch (2cm) lengths.
  • Sprinkle half a teaspoon soy sauce over the beans and stand for 10 minutes.
  • Mix the beans into the dressing and serve.
  • DRESSING: Mix the peanut butter, sugar, soy sauce and dashi well.

Green Bean and Tofu Salad With Peanut Dressing image

Inspired by the combination of peanut sauce with vegetables in southeast Asia, found in dishes such as gado gado in Indonesia and summer rolls in Vietnam, this streamlined salad would work just as well as a vegetarian main dish to eat with rice or noodles. The green beans are cooked for only a short while so that they stay crunchy. If you prefer floppy beans, you can cook them longer. And if you want something more refreshing and don't want to turn on the stove, you can skip the beans altogether and use cut-up cucumbers and tomatoes instead.

1/4 cup crunchy peanut butter
2 tablespoons hoisin sauce
1 tablespoon fresh lime juice
1 teaspoon granulated sugar
1/4 teaspoon red-pepper flakes, plus more for sprinkling
12 ounces green beans, trimmed and cut into 2-inch lengths
1 (14-ounce) box extra-firm tofu, drained and cut into 1-inch cubes

Steps:

  • Bring a large saucepan of salted water to a boil. Meanwhile, stir the peanut butter, hoisin, lime juice, sugar and red-pepper flakes in a large bowl. Add 2 tablespoons boiling water from the saucepan to the peanut dressing and stir well. The dressing should be runny but still thick. If needed, stir in another tablespoon boiling water.
  • Add the green beans to the boiling water and cook until brighter in color and just tender, 2 to 3 minutes. Drain well, rinse under cold water until cool, then drain again. Transfer the green beans and tofu to the peanut dressing and stir gently until evenly coated. Season to taste with salt, then sprinkle with more red-pepper flakes. Serve immediately or refrigerate in an airtight container for up to 2 days.

1 1/2 lbs fresh green beans
1/2 cup water
2 tablespoons creamy peanut butter
1 tablespoon gingerroot, peeled and grated (may substitute 1 tsp ground ginger)
1/4 teaspoon ground red pepper
1 large garlic clove, minced (make sure it's large, or substitute 2 small)
1 teaspoon peanut oil or 1 teaspoon sesame oil
1/2 teaspoon salt

Steps:

  • Wash the beans and remove the strings. Cook in a small amount of boiling water 10 to 12 minutes or until crisp-tender. Drain and set aside.
  • Combine 1/2 cup water, creamy peanut butter, ginger, and ground red pepper. Set aside.
  • Saute garlic in oil in a large skillet over medium heat, stirring constantly, until tender. Add reserved peanut butter mixture and salt; stir well. Add the reserved beans; cook over medium heat, stirring constantly, 4 minutes or until the beans are tender and the mixture is thoroughly heated. Serve immediately.

1 clove garlic, minced
⅓ cup olive oil
3 tablespoons lemon juice
1 teaspoon salt

¼ teaspoon dried marjoram
¼ teaspoon ground black pepper
2 pounds fresh green beans, trimmed and snapped

Steps:

  • In a medium bowl, mix green onions, garlic, olive oil, lemon juice, salt, white sugar, mustard, basil, oregano, marjoram and pepper.
  • Place green beans in a steaming basket. Steam in a medium saucepan over boiling water 5 minutes, or to desired tenderness.

1 lb green beans, ends trimmed
1/2 cup smooth peanut butter or 1/2 cup chunky peanut butter (natural is best)
1 tablespoon packed dark brown sugar
1 tablespoon soy sauce
1 tablespoon lemon juice
1 clove garlic, smashed
2 -3 slices peeled fresh ginger
1/2 cup hot water

Steps:

  • Bring a large pot of lightly salted water to a boil over high heat.
  • Add the green beans and cook until tender, about 5 minutes.
  • Drain and rinse briefly under cold running water.
  • Meanwhile, in a food processor, combine the peanut butter, brown sugar, soy sauce, lemon juice, garlic, and ginger.
  • Process until smooth.
  • With the machine on, add the hot water and mix until blended.
  • Transfer the beans to a serving dish.
  • Pour the sauce over the beans and serve.
  • If you prefer the dish hotter, reheat in a microwave oven on High for 50 to 60 seconds, rotating the dish once.
  • (If you do this, be sure the serving dish is microwave-safe glass or ceramic).

2 lbs green beans, trimmed
1 cup unsalted peanuts
3 tablespoons rice wine vinegar
1 inch fresh ginger, peeled and coarsely chopped
1 garlic clove, coarsely chopped
2 tablespoons soy sauce
1 tablespoon sugar
2 tablespoons vegetable oil

Steps:

  • Bring a large pot of salted water to boil. Add the green beans and cook until crisp-tender, about 4 minutes. Drain and rinse under cold water. Drain again and refrigerate.
  • In a food processor, pulse the peanuts until coarsely chopped. Reserve 1/3 cup of the peanuts for garnish. Continue pulsing the remaining peanuts until finely chopped.
  • Add the vinegar, ginger, soy sauce, sugar, oil, 2 tablespoons of hot water and 1 teaspoon of salt to the peanuts and blend until the dressing is almost smooth, scraping down the sides of the bowl several times.
  • Toss the green beans with the dressing. Sprinkle the reserved chopped peanuts over the top just before serving.
