GREEK TOMATO SALAD
"My German father-in-law loves to vacation in Greece," relates Jerry Lappin of Garden City, Kansas. "After a stay on the sunny beaches of Rhodes, he game me the recipe for this zesty salad, full of fresh tomatoes, red onion, green pepper, ripe olives and feta cheese. I like to serve it for a light lunch with sourdough, French or Italian bread."

- In a bowl, whisk together the vinegar, oil, oregano, basil, sugar, salt and pepper. Add red onion and green pepper; toss to coat. Stir in tomatoes, olives and cheese. Cover and refrigerate for at least 1 hour. Serve with a slotted spoon.

In Greek, this recipe is called Saláta Horiátiki! Try to use really good olive oil. Recipe is adapted from Whole Foods.

Steps:
- Peel cucumber and cut in half lengthwise. With a small spoon, scrape out seeds and discard, then cut cucumber into bite-size chunks.
- Place in a large bowl and combine with tomatoes, green pepper, onion, feta and olives.
- In a small bowl, combine oregano and vinegars and whisk in olive oil. Drizzle half the dressing over the salad and season with salt and pepper.
- Serve with remaining dressing on the side. May serve over lettuce greens if desired.

- Overlap tomato and onion slices on large platter. Whisk oil, vinegar, parsley and garlic in small bowl. Season to taste with salt and pepper. Pour over salad. Let stand at room temperature 1 hour or cover and refrigerate up to 3 hours, basting occasionally with dressing.
- Sprinkle salad with cheese and garnish with olives, if desired.

This recipe is from Canadian Living - I love the fact that the dressing is not swimming in olive oil and still packed with flavour. You can cut the vegetables into any size of your preference, but you should try to make sure that the size is approx the same for all vegetables.

- Quarter cucumber lengthwise; cut into 3/4-inch chunks.
- Core, seed and cut green pepper into same-size pieces.
- Place in large bowl (if you are making ahead you can cover and refrigerate for up to 4 hours at this step).
- Core and cut tomato into same-size chunks. Add to bowl along with onion and olives.
- Mix oil, vinegar, oregano, salt and pepper; toss with salad to combine
- Top each serving with cheese.
KITTENCAL'S GREEK MARINATED TOMATO, OLIVE AND FETA SALAD
If you love Greek salads you will love this, it's an absolute must made with garden ripe tomatoes! I use the dressing from my recipe#66596 but you may use your own favorite dressing, the cucumber is only optional I like to add some in, plan ahead this salad must be chilled at least 3 hours before serving or up to 6 hours. Serve this salad with crusty bread on the side to dip into the juice, you may also serve the tomatoes with juice on a bed of lettuce.

- In a large glass bowl stir together the dressing with parsley.
- Add in feta pieces and all remaining ingredients (except black pepper, salt and bread) toss to combine and season with black pepper------ (don't be tempted to add in more than the stated amount of dressing as the tomatoes will release more juice when chilled, you just might find your salad swimming in too much liquid!).
- Cover and refrigerate for a minimum of 3 hours or up to 6 hours.

This is a common and colorful side dish for our summer cookouts. It's such a hit that I get complaints if I don't make it. Even the youngsters love this mix of fresh vegetable and light dressing! Regular black olives can be substituted for the Greek olives if you don't care for their flavor.

The best time to make this is when the tomatoes are in season. If you love tomatoes, you will love this salad, as did my guests. This is not a complicated salad and you would think it came from a gourmet restaurant. I found this gem of a recipe in the Fine Cooking Magazine.

Steps:
- Crumble feta into a small bowl.
- Add chopped mint and toss; set aside.
- Season the tomato slice with salt and then arrange them, overlapping slightly, on a serving platter Sprinkle the cucumber over the tomato slices.
- Season the grape or cherry tomatoes with salt and scatter them over the cucumbers.
- Sprinkle the olives on top.
- In a small bowl, whisk together olive oil, lemon zest, and lemon juice.
- Season to taste with salt and pepper.
- Drizzle the vinaigrette over the salad.
- Scatter feta cheese over the salad, garnish with mint and serve immediately.
