Best Greek potatoes with lemon and garlic!

1 tsp seasoned salt
1 tsp black pepper
1 tsp Sweet Paprika
1 tsp Organic Rosemary
4 large baking potatoes, peeled, washed, cut into wedges
8 large garlic cloves, chopped
4 tbsp Private Reserve Greek extra virgin olive oil
1 lemon, juice of
1 1/4 cup vegetable or chicken broth
1/2 cup grated Parmesan cheese
1 cup parsley leaves, roughly chopped

Steps:

  • Preheat oven to 400 degrees F.
  • In a small bowl, mix together spices. Set aside.
  • Place potato wedges in a large lightly-oiled baking dish (I used this one) and sprinkle with the spice mix. Toss potatoes together briefly to evenly distribute spices.
  • In a bowl, whisk together chopped garlic, olive oil, lemon juice and broth. Pour into baking dish with potatoes.
  • Cover the baking dish with foil and place in the 400 degree F-heated oven for 40 minutes.
  • Remove from oven briefly. Uncover and sprinkle Parmesan cheese on the potato wedges. Return to oven uncovered to roast for another 10-15 minutes or until potatoes are cooked through and have turned a nice golden brown with a little crust forming.
  • If needed, to add more color, you may place the dish under the broiler for 3 minutes or so, watching carefully.
  • Remove from oven. Garnish with fresh parsley before serving. Enjoy!

Delicious Greek baked cod and potatoes with caramelized onions, tomato and raisins over potatoes.

Salted Cod about 2 pounds (or fresh cod (skip desalting))
½ cup olive oil
3-4 onions sliced in thin rings
3 tomatoes chopped or a 15 ounce can of chopped tomatoes
1 tablespoon tomato paste
3 cloves garlic minced
1 bay leaf
1 bunch of parsley chopped
½ cup white wine
½ cup black raisins
Juice of ½ a lemon
4-5 medium potatoes sliced in thin rounds
salt/pepper as needed

Steps:

  • De-salt cod for 24 hours (see above)
  • Preheat oven at 350 degrees Fahrenheit (180 Celsius).
  • In a pan sauté the onion until soft for about 10 minutes.
  • Once the onion is sautéed, add the garlic and sauté for about a minute. Add the tomatoes, the tomato paste, the parsley, the wine, lemon juice and pepper (add 1/2 tsp of fine sea salt if using fresh cod).
  • Bring the sauce to a boil and then lower the heat and let it simmer for about 10 minutes.
  • Oil a large pan and place the sliced potatoes on the bottom. They should not overlap. Over that place the pieces of cod (rub the cod with kosher salt if using fresh cod)
  • Once your sauce has simmered for 10 minutes, add the raisins.
  • Pour the sauce over the cod and potatoes (remove bay leaf), moving things around so that the sauce has gone everywhere. The sauce will not be very thick.
  • Cover the pan with aluminum foil and cook covered for about 35 minutes, uncover and check potatoes, they should be fairly easy to pierce. Cook for another 15-20 minutes uncovered, until potatoes are done and all the liquids (except the olive oil) are gone.
  • Remove from oven and let it sit for 15 minutes before serving.

1 ½ cups water
2 cloves garlic, finely chopped
¼ cup fresh lemon juice
1 teaspoon dried thyme
1 teaspoon dried rosemary
2 cubes chicken bouillon
ground black pepper to taste
6 potatoes, peeled and quartered

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a small bowl, mix olive oil, water, garlic, lemon juice, thyme, rosemary, bouillon cubes and pepper.
  • Arrange potatoes evenly in the bottom of a medium baking dish. Pour the olive oil mixture over the potatoes. Cover, and bake 1 1/2 to 2 hours in the preheated oven, turning occasionally, until tender but firm.

400g dried butter beans
3 tbsp Greek extra virgin olive oil, plus more to serve
1 Spanish onion, finely chopped
2 garlic cloves, finely chopped
2 tbsp tomato purée
800g ripe tomatoes, skins removed, roughly chopped
1 tsp sugar
1 tsp dried oregano
pinch ground cinnamon
2 tbsp chopped flat-leaf parsley, plus extra to serve

Steps:

  • Soak the beans overnight in plenty of water. Drain, rinse, then place in a pan covered with water. Bring to the boil, reduce the heat, then simmer for approx 50 mins until slightly tender but not soft. Drain, then set aside.
  • Heat oven to 180C/160C fan/gas 4. Heat the olive oil in a large frying pan, tip in the onion and garlic, then cook over a medium heat for 10 mins until softened but not browned. Add the tomato purée, cook for a further min, add remaining ingredients, then simmer for 2-3 mins. Season generously, then stir in the beans. Tip into a large ovenproof dish, then bake for approximately 1 hr, uncovered and without stirring, until the beans are tender. The beans will absorb all the fabulous flavours and the sauce will thicken. Allow to cool, then scatter with parsley and drizzle with a little more olive oil to serve.

5 -6 potatoes (I like red with skins)
1 small onion (chopped fine)
1/2 cup canola oil
1 (15 ounce) can tomato sauce
1/2 cup water
1 tablespoon parsley
2 tablespoons minced garlic (I use the ready type in the jar)
1 teaspoon black pepper

Steps:

  • over medium heat Pour oil into a medium size pot and sautee the onion until they are clear in apperance. Add the garlic and continue to sautee for another 5 minute.
  • next add the tomato sauce,potatoes, water, parsley and black pepper.
  • mix well cover and stir occasionally very gently until potatoes are tender.
  • This recipe is even better if you cook it a day ahead. I have found that when reheating the potates the next day the flavor is richer!

3 cloves of garlic, minced
150ml olive oil (3/4 cup)
150ml water (3/4 cup)
1 tablespoon dried oregano
juice of 2 lemons
1 teaspoon semolina
salt and freshly ground pepper

Steps:

  • Preheat the oven to 200C / 400F
  • To prepare these extra crispy Greek lemon potatoes, cut the potatoes into wedges and place them on a large metal roasting pan. Into a bowl add the remaining ingredients (including the semolina and the 150ml of water) and blend; pour the semolina-lemon mixture over the potatoes and season well with salt and pepper.
  • Bake for 40 minutes, until a nice golden crust has formed on the potatoes; turn them out of the oven, toss them a little bit to bring them upside down, sprinkle with a pinch of oregano and put back into the oven for another 30-40 minutes. If all of the liquid has been absorbed and the pan appears to be getting dry, add 1/4-1/2 of a cup hot water into the pan or some extra lemon mixture, before they have fully browned
  • The secret for these extra crispy Greek lemon potatoes is to sprinkle the potatoes with some semolina, as it helps to form a nice golden crust around them. Don't be afraid of over baking them- they will become even more delicious!

1 whole red snapper (gutted and scaled)
3 -4 idaho potatoes, cut in 1/2 inch rounds
1 -2 tomatoes, cut into 1/2 inch rounds
1/2 bunch fresh parsley, minced
1 -2 onion, cut into 1/2 inch rounds
5 -6 garlic cloves, sliced
3/4 cup olive oil
1 1/2 lemons
oregano
salt
pepper
water

Steps:

  • After your fish is totally cleaned, place it in a large baking pan and score it with a knife on each side, making three lines or incisions on its body. You can make it fancy and do another 3 lines the cross way if you're in a Jaques Pépin kinda mood.
  • Season it generously with salt, pepper, and oregano, especially inside the gutted slit and on the side incisions.
  • You may also add some garlic or slices in the belly and the incisions.
  • Place the fish exactly in the middle of the pan. Around it, add the potatoes,onions and tomatoes in a row, alternating one after the other. Season those as well, with salt, pepper, parsley and lots of oregano.
  • Place any leftovers inside the belly of the fish.
  • Drizzle the food with the juice of one and a half lemons.
  • Add the olive oil, evenly coating all ingredients.
  • Add 1/2 cup water.
  • Place in a 375 to 400 degree oven and cook until potatoes are tender for about 45 minutes to an hour. You may even foil it first for about half the time.
  • The sauce shouldn't be too thick or too watery.
  • The fish and potatoes should be a bit crisp and brown on their surfaces.
  • Add more lemon if desired.
