GREEK STYLE STUFFED PEPPERS RECIPE



Greek Style Stuffed Peppers Recipe image

You'll love these stuffed peppers, prepared Greek-style and stuffed with a perfectly seasoned meat mixture with rice and chickpeas and fresh herbs. You can prepare parts of this recipe ahead of time, and you can even freeze leftover stuffed peppers! Serve them as the main coarse or a side dish.

Greek extra virgin olive oil (I used Private Reserve EVOO)
1 small yellow onion, chopped
1/2 lb ground beef
Kosher salt + black pepper
1 tsp ground allspice
2 garlic cloves, minced (or 1 tsp garlic powder)
1 cup cooked or canned chickpeas, drained and rinsed
1 small bunch fresh parsley, chopped ( about 1 cup packed fresh parsley. Or a mixture of chopped fresh parsley and fresh dill)
1 cup white rice, soaked in water for 2o to 30 minutes, then drained
3/4 tsp hot or sweet paprika
1/4 cup tomato sauce
2 1/4 cup water
6 bell peppers, any colors, tops removed and cored
3/4 cup chicken broth (or water)

Steps:

  • In a medium heavy pot, heat 1 tbsp of extra virgin oil. Saute the chopped onions until golden. Now add the meat and cook over medium-high heat, stirring occasionally, until deeply browned. Season with salt, pepper, allspice, minced garlic (or garlic powder). Stir in the chickpeas and cook briefly.
  • To the same pot, now add the parsley, rice (which had been soaked in water and drained), paprika, and tomato sauce. Stir to combine. Add the water and bring to a high simmer until the liquid has reduced by half. Then turn the heat to low, cover and cook for 20 minutes or until the rice is fully cooked and no longer hard nor too chewy. Taste and adjust seasoning to your liking.
  • While the rice is cooking, heat a grill or indoor griddle or skillet over medium-high. Grill the bell peppers for 10-15 minutes, covered, and turning over as needed so that the peppers will soften and gain some color. Remove from heat and set aside to cool briefly.
  • Preheat the oven to 350 degrees F.
  • Assemble the bell peppers open-side up in a baking dish filled with 3/4 cup broth or water. Fill each of the bell peppers with the the cooked stuffing mixture of meat, rice and chickpeas.
  • Cover the baking dish with foil (making sure the foil does not touch the stuffed peppers) and place the dish on the middle rack of your heated oven. Bake for 20-30 minutes.
  • Remove from the oven and garnish with parsley, if you like, and serve.
  • To serve stuffed peppers as a main dish Greek-style, add Tztaziki sauce and Greek salad for sides.

4 large green bell peppers, tops removed, seeded
4 large red bell peppers, tops removed, seeded
1 tablespoon olive oil
½ pound ground pork
2 onions, chopped
salt and pepper to taste
¼ cup dry white wine
1 (10.75 ounce) can tomato puree
1 (4 ounce) package feta cheese
½ cup cooked white rice
½ cup raisins
½ cup pine nuts
2 tablespoons chopped fresh parsley

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place green and red bell peppers in a bowl with enough warm water to cover, and soak 5 minutes.
  • Heat the olive oil in a skillet over medium heat. Place pork and onions in the skillet, season with salt and pepper, and cook until pork is evenly brown. Drain grease, and mix in wine and tomato puree. Continue cooking 10 minutes.
  • Transfer skillet mixture to a large bowl, and mix in feta cheese, cooked rice, raisins, pine nuts, and parsley. Stuff peppers with the mixture, and arrange in a baking dish. Cover with aluminum foil.
  • Bake 30 minutes in the preheated oven. Remove foil, and continue baking 10 minutes, until stuffing is lightly browned. May be served hot or cold.

1 pound lean ground beef
1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
1 medium zucchini, coarsely grated (about 2 cups)
1 small onion, minced (about 1 cup)
1/2 cup bulgur
1 egg, lightly beaten
1/2 teaspoon dried oregano
1/2 teaspoon salt
Freshly ground black pepper
3 red bell peppers, halved lengthwise, cores and ribs removed
2 (14 1/2-ounce) cans low-sodium stewed tomatoes, finely chopped
1/3 cup crumbled feta cheese

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, combine the beef, spinach, zucchini, onion, bulgur, egg, oregano, salt and a few grinds of pepper. Mix until thoroughly combined.
  • Arrange the pepper halves cut side up in a 9-by-13-inch baking dish and fill each pepper half with the meat mixture. Pour the tomatoes over the peppers and sprinkle with the feta cheese. Cover with foil and bake for 30 minutes. Uncover and bake until the meat mixture is completely cooked and the peppers are tender, about 25 minutes longer.

This recipe was in the food section of a local paper. True keeper!! The peppers can always be roasted in advance and kept in the refrigerator for any number of uses, which makes putting this together much faster and easier. Whenever possible, always buy brine-packed feta. It is far superior to the brands already crumbled. Keep any unused feta in the brine in a well-sealed container in the coldest part of your refrigerator. prep or cooking time does not include refrigeration.

2 red bell peppers, roasted, peeled and chilled
extra virgin olive oil
2/3 cup feta cheese, crumbled
8 ounces cream cheese, softened
2 teaspoons fresh lemon juice
1 garlic clove, peeled and chopped very fine
1/2 teaspoon oregano leaves
fresh basil leaf, torn if large
salt & freshly ground black pepper

Steps:

  • Cut the two red bell peppers lengthwise into thirds, carefully removing seeds and membranes.
  • Place on a baking sheet skin-side up and flatten out with the palm of your hand.
  • Brush or drizzle with a bit of olive oil and roast at 500 degrees until skins become charred and slightly wrinkled.
  • Upon removing from the oven, immediately place them into a sealed bowl or plastic bag.
  • When the peppers are cool enough to handle, peel the skins off with your fingers and discard the skins - don't rinse the peppers or you'll rinse away that delicate smoky flavor from the roasting.
  • Arrange on a plate and chill for about 30 minutes.
  • Combine cheeses, lemon juice, garlic, oregano and season to taste with salt and pepper.
  • Divide mixture into as many portions as you have roasted pepper sections and shape it into a log.
  • Mold the pepper over the cheese log and form it into a jalapeno pepper shape, lay it in the center of a salad plate.
  • At the thicker end, tuck in a stem of fresh basil.
  • Drizzle with olive oil and serve.

2 tablespoons olive oil
1 small fennel bulb, chopped
1 small red onion, chopped
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
3 garlic cloves, minced
2 each medium sweet yellow, orange, red and green peppers
1 can (28 ounces) crushed tomatoes, divided
1 pound ground lamb
1 cup cooked barley
1 cup crumbled feta cheese, plus more for serving
1/2 cup Greek olives, chopped
1-1/2 teaspoons dried oregano
1/2 teaspoon salt
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon pepper
Chopped fresh parsley, optional

Steps:

  • In a large skillet, heat oil over medium-high heat. Add fennel and onion; cook and stir until tender, 6-8 minutes. Add spinach and garlic; cook 1 minute longer. Cool slightly., Cut and reserve tops from peppers; remove and discard seeds. Pour 1 cup crushed tomatoes into bottom of a 6- or 7-qt. slow cooker. In a large bowl, combine lamb, barley, 1 cup feta cheese, olives and seasonings; add fennel mixture. Spoon mixture into peppers; place in slow cooker. Pour remaining crushed tomatoes over peppers; replace pepper tops. Cook, covered, on low 4-1/2 to 5-1/2 hours, until peppers are tender. Serve with additional feta and, if desired, chopped parsley.

5 medium perfectly-ripe yummy tomatoes
5 medium green peppers
3/4 cup olive oil
13 tablespoons uncooked rice (really just a 'heaping' tablespoon per vegetable to be stuffed)
1 large onion, chopped fine (about 1 1/2 cups)
3 garlic cloves, minced very fine
1/4 cup fresh spearmint, minced (1 1/2 tblsps dried, crumbled)
1/2 cup parsley, minced
1/2 cup pine nuts or 1/2 cup slivered almonds
1/2 cup kefalograviera cheese or 1/2 cup parmesan cheese, cut into tiny cubes
1/2 cup sultana raisin
1 teaspoon salt
1/2 teaspoon pepper
1 1/2 cups water
1/2 cup olive oil
1 tablespoon tomato paste
salt and pepper

Steps:

  • Cut off tops of tomatoes (retain tops) and carefully scoop out flesh (retain this as well).
  • Cut off tops of peppers (retain tops) and remove seeds and membrane.
  • Place tomatoes and peppers in a pan large enough to hold them comfortably and give each veg a tiny dash of sugar with the tips of your fingertips (I really think this is important!).
  • Take tomato flesh and process it until pureed.
  • Add olive oil, rice, onion, garlic, mint, parsley, nuts, cheese, sultanas, 1 teaspoon of salt and 1/2 teaspoon of pepper (or season to taste).
  • Stuff the vegetables evenly with this mixture.
  • Replace tops of tomatoes and peppers.
  • Combine 1 cup of water and 1/2 cup olive oil with a scant tablespoonful of tomato paste and a little salt and pepper and pour this around the veg.
  • Bake in a preheated 375F oven (180C) for approx 1 3/4 hours (vegetables should pierce easily and be slightly blackened in parts).
  • Turn off oven and leave in for another hour to'mellow' before serving.
  • This is best served slightly warm or at room temperature.
  • It is wonderful eaten along with little bites of feta cheese and a cool glass of white or rose.
  • It will also have yummy juices begging to be mopped up with bits of crusty bread.
  • In my version, I also take 3-4 medium-sized potatoes, cut them into big wedges, toss in a little olive oil with salt and pepper to taste, and'plant' in the spaces amidst the vegetables.
  • That way you can have a couple of wedges of potato too.

1 (2 ounce) jar chopped pimento peppers
1 teaspoon Greek seasoning

Ground lamb is the main component for these Greek-inspired stuffed peppers. Add some rice and some traditional Greek flavors like onion, garlic, and fresh herbs to the bell pepper "boats". ½ cup long grain white rice
1 cup water, or as needed
⅓ cup minced yellow onion
1 clove garlic, minced
2 teaspoons minced fresh rosemary

½ teaspoon ground coriander
1 teaspoon kosher salt, or to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Place 1/2 cup rice in a container and cover with water. Allow to soak for the 15 or 20 minutes, and drain well.

My DBF made this for me the night of our first date. I know, I know... awwww. OK, moving on... He served it with baked brie and chardonnay. It was so good I kept coming back! We now eat it on special occassions. Sometimes I will make it, but I still contend that it isn't as good as when he makes it. It can be served immediately after preparation, but letting it sit an hour or so allows the flavors to blend. Hope this brings happy memories for you too!

2 large yellow bell peppers, cubed
1 medium red onion, diced
