GREEK STYLE MEAT SAUCE {MAKARONIA ME KIMA}
An easy traditional Greek style meat sauce for pasta. Perfect for busy weeknight suppers.

Steps:
- Heat 2 tablespoons of the oil in a large pan over medium heat. Cook the onion until soft, add the garlic, followed by the cinnamon, allspice, ground cloves, and dried oregano. Cook to release the flavors.
- Fry until fully cooked and no pink shows at all in the meat (about 8 minutes). Add the tomato paste and stir into the meat.
- Stir in the wine and allow to cook down.
- Add the tomatoes, sugar, parsley, and fresh mint. Stir together, season with salt and pepper. Lower the heat and simmer for 25 minutes.
- Meanwhile, cook the pasta according to the package instructions. Drain and serve topped with the sauce.

Steps:
- Bring a large pot of lightly salted water to a boil; cook the rotini at a boil until tender yet firm to the bite, about 8 minutes; drain. Transfer to a large bowl and toss with 2 tablespoons olive oil.
- Heat 1 tablespoon olive oil in a large skillet over medium heat; cook and stir ground beef until browned, about 10 minutes. Add tomatoes, onion, water, tomato paste, cinnamon, sugar, cayenne, salt, and pepper; stir to combine. Simmer meat sauce over medium-low heat until flavors combine, 20 minutes.
- Preheat oven to 350 degrees F (175 degrees C).
- Pour meat sauce over rotini; mix well. Pour half the pasta mixture into a casserole dish; sprinkle with half the Mizithra cheese and half the mozzarella cheese. Top with remaining pasta mixture; sprinkle remaining Mizithra cheese and mozzarella cheese.
- Bake in the preheated oven until cheese is melted and bubbling, about 40 minutes.

GREEK MACARONI WITH MEAT SAUCE
This is a sauce with nice flavor from Greek Cooking for the Gods, posted for ZWT IV. I like it with a bit of crushed red pepper added in, and as one reviewer said, it's also good with some black olives added.

Steps:
- In a large, deep skillet over medium high heat, warm oil.
- Add onions and garlic and saute till translucent (about 5 minutes).
- Add beef and brown well, breaking meat up as it cooks.
- Stir in cloves, cinnamon, bay leaf, tomatoes, tomato paste and wine. Stir, reduce heat and simmer till thick and flavors are well blended (about 1 hour).
- Adjust seasonings.
- Bring a large pot of water to a boil, add macaroni and cook according to package directions, or till just tender to the bite (15-20 minutes). Drain well. (the original recipe calls for 2 lbs of pasta - this sounded like a huge amount to me, so use your own judgement regarding your own family's tastes).
- Place half the macaroni on a large heated platter. Sprinkle generously with cheese. Place remaining macaroni on top and sprinkle again with cheese.
- Melt butter in a large skillet over medium high heat till it foams and turns golden brown, stirring constantly with a wooden spoon so that it does not burn.
- Pour butter over macaroni then spoon some of the meat sauce over the top.
- Serve macaroni with remaining meat sauce in a bowl alongside. Pass additional cheese and serve immediately.

- Cook macaroni according to package directions. In a large skillet, cook beef and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in the tomato sauce, water and seasonings. Cover and simmer for 10 minutes, stirring occasionally. , Drain macaroni and place in a large bowl. Stir in egg and cheese; set aside. , For sauce, in a large saucepan, melt butter; stir in flour and cinnamon until smooth. Gradually add milk. Bring to a boil over medium heat; cook and stir for 2 minutes or until slightly thickened. Remove from the heat. Stir a small amount of hot mixture into eggs; return all to pan, stirring constantly. Stir in cheese. , In a greased 3-qt. baking dish, spread half of the macaroni mixture. Top with beef mixture and remaining macaroni mixture. Pour sauce over the top. Bake, uncovered, at 350° for 45-50 minutes or until a thermometer reads 160°. Let stand for 5 minutes before serving.

- Add 2–3 tablespoons olive oil in a large pot. In medium heat, add the onion—season with a pinch of salt. Stir and sauté until onion is translucent. Add the garlic and stir.
- Add the celery and carrots. Stir well. Add 2 tablespoons of tomato paste. Stir everything well and season with salt, fresh ground pepper, and one tablespoon of dry oregano. Add the bay leaf, cloves, and thyme leaves. Keeping sautéing for 2-3 min and let flavors develop.
- Add 1/2 cup water, add the bouillon, stir everything well and lower heat. Simmer for 15 min or so.
- Increase heat to medium and add the ground meat. Break the meat with a wooden spoon to avoid large chunks. Brown the ground meat all over.
