2 cups uncooked elbow macaroni (about 8 ounces)
2 tablespoons butter
2 tablespoons all-purpose flour
1-1/2 cups half-and-half cream
3/4 pound process cheese (Velveeta), cubed
Optional toppings: fresh arugula, halved cherry tomatoes and coarsely ground pepper

Steps:

  • Cook macaroni according to package directions; drain., Meanwhile, in a large cast-iron or other heavy skillet, melt butter over medium heat. Stir in flour until smooth; gradually whisk in cream. Bring to a boil, stirring constantly. Cook and stir until thickened, about 2 minutes. Reduce heat; stir in cheese until melted., Add macaroni; cook and stir until heated through. Top as desired.

1 (16 ounce) package uncooked elbow macaroni
3 (8 ounce) containers cottage cheese
1 (16 ounce) container sour cream
3 eggs
2 cups shredded sharp Cheddar cheese
¼ teaspoon cayenne pepper
1 teaspoon paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a large bowl combine cooked pasta, cottage cheese, sour cream, eggs, Cheddar cheese and cayenne pepper. Mix well and transfer to prepared dish. Sprinkle with paprika.
  • Cover loosely with aluminum foil and bake 40 minutes.

1 medium sweet red pepper, chopped
8 green onions, chopped
1 tablespoon olive oil
1/4 cup all-purpose flour
1 teaspoon chili powder
1 teaspoon minced chipotle pepper in adobo sauce
1/2 teaspoon salt
1/2 teaspoon ground cumin
2-1/4 cups fat-free milk
1 cup shredded sharp cheddar cheese, divided
4 center-cut bacon strips, cooked and crumbled
2 tablespoons minced fresh cilantro

Steps:

  • Cook pasta according to package directions., Meanwhile, in a large skillet, saute pepper and onions in oil until tender. Stir in the flour, chili powder, chipotle pepper, salt and cumin until blended. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in 1/4 cup cheese until melted., Drain pasta; toss with sauce. Stir in bacon and cilantro. Transfer to a 2-qt. baking dish coated with cooking spray. Sprinkle with remaining cheese. 1 lb ground turkey breast
1/2 cup chopped onion
1/2 cup seeded and chopped green bell pepper
2 tablespoons chili powder
1 teaspoon ground cumin
1/2 teaspoon salt
1 (14 1/2 ounce) can diced tomatoes, with their juice
1 (8 ounce) can tomato sauce
1 (4 1/2 ounce) can chopped green chilies
1/2 cup water
1 cup shredded low-fat cheddar cheese (preferably extra-sharp)

Steps:

  • Bring a pot of water to a boil.
  • Cook the macaroni according to package directions; drain and keep warm.
  • Spray a large nonstick skillet with Pam.
  • Add the turkey and cook until no longer pink, stirring with a wooden spoon to break up the meat.
  • Stir in the onion, bell pepper, chili powder, cumin, and salt.
  • Cook, stirring occasionally, until the onion is tender, about 3 minutes.
  • Add the tomatoes, tomato sauce, chiles, and water; simmer, uncovered, 10 minutes.

I have another version of Skillet Macaroni and Cheese posted, but this one is different with the cheeses it includes and several other ingredients. In addition, it adds a bit of heat with the hot sauce. This recipe calls for homemade bread crumbs. To make them, pulse 2 slices of hearty white sandwich bread in a food processor until coarsely ground. The recipe is from Cook's Country.

2 cups fresh breadcrumbs

3 3/4 cups water, plus more as needed
1 (12 ounce) can evaporated milk
3 cups elbow macaroni
1 teaspoon cornstarch
2 teaspoons hot sauce
3 cups sharp cheddar cheese, shredded
2 cups monterey jack cheese, shredded

Steps:

  • Melt butter in large nonstick skillet over medium-high heat.
  • Add bread crumbs, 1/4 t salt, and 1/4 t pepper and cook, stirring frequently, until deep golden brown, about 5 minutes.
  • Transfer to bowl and wipe out skillet.
  • Bring water, 1 1/4 cups evaporated milk, and 1/2 t salt to simmer in skillet over medium-high heat.
  • Add macaroni and cook, stirring often, until macaroni is al dente, 8-10 minutes.
  • Whisk remaining evaporated milk, cornstarch, and hot sauce in small bowl, then stir into skillet.
  • Simmer until slightly thickened, about 1 minute.
  • Off heat, stir in cheeses, one handful at a time, adding water as needed to adjust consistency.
  • Sprinkle with toasted bread crumbs.
  • Serve.

2 tablespoons butter
1 onion, chopped (about 1/2 cup)
1 tablespoon flour
3/4 cup heavy cream (or up to 1 cup cream- use light cream if desired)
3/4 teaspoon pepper
1/2 teaspoon salt
1/2 teaspoon nutmeg
1 garlic clove, minced
2 cups cheddar cheese, grated, divided (choose an aged cheese)
1 tablespoon fresh parsley, chopped

Steps:

  • In a large pot of boiling salted water, cook macaroni 8-10 minutes until al dente. Drain well and set aside.
  • While the macaroni cooks, melt butter over medium heat in an oven safe skillet or saucepan.
  • Add onion and cook, stirring often until soft and golden.
  • Add flour and cook, stirring for 2 minutes until flour is combined and mixture is light brown.
  • Whisking constantly, add cream slowly until well mixed. Stir in pepper, salt, nutmeg and garlic. Bring mixture to a boil, stirring.
  • Stir in 1 1/2 cups of the cheese, a little at a time, until melted.
  • Stir in the macaroni to coat with sauce. Sprinkle with remaining cheese and parsley on top.
  • Place skillet under broiler for 2 or 3 minutes or until cheese is bubbly.

  • Set a large pot of salted water to boil. Preheat oven to 350. Butter four 10-ounce ramekins. Cook pasta 3 minutes short of al dente; drain.
  • In a large bowl, whisk together 1 1/2 cups cheddar, eggs, half-and-half, garlic, 1/2 teaspoon salt, and 1/8 teaspoon pepper. Add pasta, and stir to combine; divide among ramekins.
  • In a food processor, pulse bread and melted butter until coarse crumbs form; season with salt and pepper. Dividing evenly, top pasta mixture with 1/2 cup cheddar, then sprinkle with breadcrumbs. Place ramekins on a rimmed baking sheet. Bake until mac and cheese is golden and bubbling, about 20 minutes. Let stand 5 minutes before serving.

1/4 cup grated Parmesan
1 small yellow onion, diced small

6 cups 2-percent milk
3/4 pound elbow macaroni
3 cups grated sharp white cheddar
1 cup grated Gruyere
1 teaspoon Dijon mustard
Kosher salt and freshly ground pepper

Steps:

  • Heat broiler. In a large straight-sided, oven-safe skillet, melt butter. Remove 1 tablespoon butter and combine with breadcrumbs and Parmesan.
  • Add onion to skillet and cook until softened. Whisk in flour and cook, stirring, 1 minute. Very gradually whisk in milk and bring to a simmer.
