GRAPEFRUIT AND GINGER TEA BREAD
This dense tea bread has a lovely nutty flavor from the whole wheat and almonds and a citrus-y ginger finish. Perfect for breakfast or brunch!

- Preheat the oven to 350 degrees F. Spray a 9 x 5 inch loaf pan with nonstick baking spray and line the bottom with parchment paper. In a dry sauté pan, toast the sliced almonds until golden brown, about 1- 2 minutes. Set aside to cool. Cut and peel the white pith from the grapefruits. Cut the segments out of the membrane and set aside. Squeeze the membranes into a small bowl and collect any juice drippings.In a small bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.In a large bowl, beat eggs and sugar until incorporated. Whisk in the sour cream, milk, almond extract and canola oil. Stir in the grapefruit pieces and zest.Sift the flour mixture into the egg mixture just until moistened and no lumps remain. Fold in the crystallized ginger and ½ cup toasted almonds. Pour the batter into prepared loaf pan and bake until a knife or toothpick inserted into the center comes out clean, about 50-60 minutes. Cool on a wire rack; remove from pan and cool completely.Meanwhile, whisk the powdered sugar, grapefruit zest and juice in a small bowl. Add in a little more powdered sugar if needed to make a thick yet pourable glaze. Place foil beneath the wire rack to catch drips. Turn the loaf upside down so the flat side is up, and drizzle the glaze over the loaf. Sprinkle with remaining toasted almonds. Allow the glaze to set before slicing.

- Preheat oven to 350. Coat a 9x5" loaf pan with cooking spray. Spread pecans on baking sheet and toast 6-7 minutes. Cool slightly and chop.
- Whisk together flour, sugar, baking powder, salt, and baking soda in large bowl, set aside.
- Beat eggs in a separate bowl. Whisk yogurt, milk and canola oil into eggs. Stir in grapefruit pieces and zest.
- Fold egg mixture into flour mixture until just moistened and no lumps remain. Fold in crystallized ginger and chopped pecans. Transfer to prepared loaf pan and bake 55-60 minutes, or until deep brown around edges and toothpick inserted in center comes out clean. Cool 1 hour on wire rack. Remove from pan and cool completely.
- To make glaze: whisk together confectioner's sugar and 1 T grapefruit juice in a small bowl. Stir in additional 1/2 t juice to achieve thick, but pourable consistency. Add another 1/2 t juice drop by drop, if necessary.
- Place foil beneath wire rack to catch drips. Turn loaf upside down so that flat side is up. Drizzle glaze over loaf. Allow glaze to set before slicing.

- Beat butter and sugar until fluffy. beat in eggs.
- Sift flour with salt, soda and baking powder. Add the batter alternately with milk. Add the grated rind and 4 tablespoons of the juice.
- Pour into a greased loaf pan and bake for 45 minutes or until loaf tests clean.
- For the glaze, combine the remaining 2 tablespoons grapefruit juice with powdered sugar. Remove bread from pan and poke holes in it. Pour the glaze over it. Let set, then wrap in foil or plastic wrap and let stand for a day for flavors to mellow.

- Preheat oven to 350°. Grease and flour two 9x5-in. loaf pans., In a large bowl, beat shortening and sugar until crumbly. Add eggs, 1 at a time, beating well after each addition. In another bowl, whisk flour, baking powder and salt; add to creamed mixture alternately with milk, beating well after each addition. Fold in walnuts and zest., Transfer to prepared pans. Bake until a toothpick inserted in center comes out clean, 60-65 minutes. Meanwhile, whisk glaze ingredients. Remove pans from oven; immediately brush with glaze. Cool in pan 10 minutes before removing to a wire rack to cool completely. Freeze option: Securely wrap cooled loaves in foil, then freeze. To use, thaw at room temperature.
