- Combine the mint leaves, sugar, orange juice concentrate, and a splash of ginger ale in a measuring cup. Crush the mixture with a spoon and add the remaining ginger ale.
- Fill a tall glass with ice cubes, strain the ginger ale mixture over the ice. Add more ginger ale, if needed, to fill the glass. Serve immediately.

GINGER ALE

- Place the ginger, sugar, and 1/2 cup of the water into a 2-quart saucepan and set over medium-high heat. Stir until the sugar has dissolved. Remove from the heat, cover and allow to steep for 1 hour.
- Pour the syrup through a fine mesh strainer set over a bowl, pressing down to get all of the juice out of the mixture. Chill quickly by placing over and ice bath and stirring or set in the refrigerator, uncovered, until at least room temperature, 68 to 72 degrees F.
- Using a funnel, pour the syrup into a clean 2-liter plastic bottle and add the yeast, lemon juice and remaining 7 cups of water. Place the cap on the bottle, gently shake to combine and leave the bottle at room temperature for 48 hours. Open and check for desired amount of carbonation. It is important that once you achieve your desired amount of carbonation that you refrigerate the ginger ale. Store in the refrigerator for up to 2 weeks, opening the bottle at least once a day to let out excess carbonation.
GRAPES AND RAISINS IN CITRUS JUICE
Steps:
- Mix the lemon juice and sugar in a bowl large enough to hold the fruit.
- Wash the grapes, and pat them dry with paper towels. Add the grapes and the raisins to the mixture in the bowl. Mix well, and serve immediately, or refrigerate for up to 4 hours.
- Serve cold in wine glasses.
QUICK GRAPE SPRITZER

- Put half of the red grapes and half of the white grapes in the freezer, for garnish. Put the remaining grapes in a large bowl and "smash" them with a whisk (or fingers).
- Add the smashed grape to a large pitcher and pour in the grape juice and honey. Stir in about 16 ounces of vodka. Fill glasses about 1/2 full with the grape juice mixture and top with a splash of seltzer. Drop and few frozen grapes into each glass for a festive garnish that doubles as an ice cube!
