- 1. Put ground beef in a large bowl. Add all other ingredients EXCEPT for the canned milk and water. Whip the mixture with hand mixer to blend well.
- 2. Slowly add evaporated milk, beating constantly. Add 1/4 to 1/2 water - slowly add more if mixture is too 'stiff'. ***Grandma hadn't written down the amount of water, so my amount is a 'guesstimate'. I do remember that if you make them into regular patties to put into buns they will need to be firmer than the smaller mounds.
- 3. When all of the liquid is absorbed, cover the bowl and let stand in the refrigertor for a few hours. - It can be cooked right away, but the texture improves upon standing.
- 4. Drop into small mounds (about 16) in large skillet. Brown over medium heat for 2 minutes on each side, or until cooked through OR form into four regular patties, cooking for several minutes on each side, or until cooked through.
THE PERFECT MARGARITA
Mastering the margarita requires a certain amount of practice, but once you dial-in your perfect ratio, it's a really easy cocktail to replicate. The classic recipe is 3 parts tequila, 2 parts triple sec, and 1 part freshly squeezed lime juice, and you should probably start off pretty close to that, but my personal favorite proportions are 4-3-2.

- Moisten the rim of a glass with a lime wedge. Sprinkle salt onto a plate. Lightly dip the moistened rim into the salt. Place a large ice cube in the glass and freeze the prepared glass until ready to serve.
- Fill a cocktail shaker with fresh ice. Add tequila, triple sec, and lime juice. Cover and shake vigorously until outside of the shaker has frosted. Strain into the prepared glass and garnish with a slice of lime.

GUAVA MARGARITAS

- Stir together lime juice, tequila, Grand Marnier, and guava puree in a large pitcher; stir to combine. Refrigerate until chilled.
- Just before serving, rub a cut lime around the rim of each glass. Fill a saucer with salt, and dip each glass, upside down, into the salt. Pour margaritas into glasses, garnish with lime wedges, and serve immediately.

- In a large bowl, combine the first 8 ingredients. Combine the butter, syrup and honey; drizzle over oat mixture and stir until well coated. Pour into a greased 13x9-in. baking pan. Bake, uncovered, at 350° for 30 minutes, stirring every 10 minutes. Cool on a wire rack; crumble granola into pieces., Combine the fruits in a large bowl. For each parfait, layer 2 tablespoons yogurt, 2 tablespoons granola and 3 rounded tablespoons fruit in a parfait glass or dessert bowl. Repeat layers. Sprinkle with remaining granola. Serve immediately.

- 1. PASTRY: cheat and use refer store bought, or make your favorite, or this one. Blend Shortening/Lard and flour with pastry cutter, till you have created a uniform crumbly texture, about the size of peas.
- 2. in seperate bowl; mix egg, vinegar, & col water. Add to Shortening and flour mixture. Mix ONLY til mixed,. . "NO MORE". NOTE: This is the Key t a tender crust. DO NOT OVER HANDLE THE DOUGH! Roll into ball of dough. Place in freezer 10-15 min to chill. Roll out on lightly floured surface about the thickness of a CD case.
- 3. use wide mouth jar lid as cutter, or Cut 4" rounds of pastry dough and line tart pan or Muffin tins. Preheat Oven @ 400
- 4. FILLING: In Heavy saucepan, combine raisins,butter, sugar, syrup, & salt, over low heat til butter is melted and sugar is disolved. Do not let mixture get too hot. NOTE: Only heat to WARM stage. Remove from Heat.
- 5. Stir in Eggs, & vanilla.
- 6. Spoon filling into tart shells, filling 2/3 full.
- 7. Bake: 400 for 15 min. Reduce heat to 350 and bake 5 more minutes, or until pastry is a golden brown. DO NOT OVER BAKE DO NOT let filling bubble over or you will have trouble geting your tarts out of the pan. Cool 15 min before removing from pan.
- 8. HINT: centers will be slightly runny, but not too runny, so every bite you take will ooze down your chin, and these crusts flakey.I like runny--the type the dribbes when you bite into one. if you like your more firm, bake a full 20 min.
GRANDMA'S GINGERBREAD PANCAKES

GRANPAW BAKER'S BOHEMIAN MARGARITA
While attending my grandfather's funeral in Oceanside California, I learned he had developed quite a reputation for making really awesome margaritas for parties he hosted or attended in the trailer park he lived in. I remember him best for the home made sausages he used to make for us when we visited. This is my little tribute to a great guy whom I will miss dearly. His original recipe made about 5 gallons. So, this is a simple math variation to scale it down to a serviceable dose of heaven in a glass.

- Combine tequila, Cointreau, and Triple Sec in a medium pitcher with ice.
- Before cutting limes, roll them on the counter under a cutting board or something flat and heavy, which will enable you to break apart the juice cells inside.
- Cut 2 limes in half and squeeze juice into pitcher (minus any seeds). Add additional limes to suit you taste. Some limes are not a juicy as others, so you may need to play with this some.
- Once you have a combination your happy with, poor into salted glasses, serve, enjoy!
