GRANOLA NUT PROTEIN BAR
Forget spending money on all those meal replacement bars that have a bad after taste. Make your own with this great recipe. I found it online somewhere. These are great to eat before a hard workout. Each bar has around 200 calories. I don't recommend this one for weight loss because it does have a higher fat content. Steps:
- In a double boiler, warm the peanut butter and honey to a smooth consistency. This step can be done in the microwave as well--just heat both ingredients for 70 to 90 seconds.
- In a mixing bowl, stir together all remaining dry ingredients. Pour in the peanut-butter mixture and stir until completely combined.
- Spread uniformly into a brownie pan. Slice into 12 to 16 pieces, then wrap each piece in plastic wrap. Refrigerate or freeze before cutting if mixture does not seem to be hard enough.
- Each Granola Nut Protein Bar costs 25 to 35 cents to make, as opposed to 99 cents and up for store-bought energy bars. On top of that, if you do use organic ingredients, you won't believe the difference!

NUT-FREE GRANOLA BARS
Chewy granola bars made with sunflower seed butter. I make these as a nut-free option for my daughter.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking pan with cooking spray.
- Mix brown sugar, sunflower seed spread, butter, and corn syrup in a large bowl until combined. Stir in chocolate chips and raisins. Mix in oats. Press mixture evenly into the prepared pan.
- Bake in the preheated oven until golden brown, about 30 minutes. Let cool for 1 hour before cutting.

FRUIT AND NUT GRANOLA BARS
Adapted from lots of other recipes, this healthy version is our favorite. Easily made in one saucepan, and makes a quick breakfast option! The butter is optional, but we like them much better with it included...

Steps:
- Preheat the oven to 350 degrees.
- Grease an 8x8 glass pan.
- Place nuts and oats on a baking sheet, and bake for about 12 minutes or until lightly toasted.
- While oats and nuts are toasting, place in a saucepan over medium heat the honey, brown sugar, butter, vanilla, cinnamon and salt.
- Stir until the mixture bubbles, and keep it boiling and stirring for about 2 minutes.
- When oats and nuts come out of the oven, turn it down to 325.
- Take the pan off the heat, and when the oats are finished, pour them right into the saucepan and mix to combine honey mixture evenly.
- Stir in the chopped dried fruit.
- Press mixture into the glass pan with the back of a spoon - it will be pretty sticky.
- Bake at 325 for 20 minutes, and let cool completely before cutting.
- Wrapped in saran wrap, these will keep for at least a couple of weeks!

- Preheat the oven to 350F. Line a 13X9 pan with parchment paper. It's important that there's extra parchment paper on each side of the pan so the granola bars are easy to lift out of the pan after baking.
- Process the dates in the bowl of a food processor for 40-50 seconds. The chopped date pieces should stick together.
- In a medium saucepan, over medium heat, melt the peanut butter into the honey. Add the dates from the food processor, stirring until the heat breaks down the dates, and the mixture is thick and spreadable. Remove the pan from the heat and add the vanilla extract. Set aside.
