GREAT-GRANDMA'S ITALIAN MEATBALLS

- Preheat oven to 375°. In a small skillet, heat oil over medium-high heat. Add onion; cook and stir until tender, 3-4 minutes. Add garlic; cook 1 minute longer. Cool slightly., In a large bowl, combine bread crumbs, cheese, eggs, seasonings and onion mixture. Add turkey and beef; mix lightly but thoroughly. Shape into 1-1/2-in. balls., Place meatballs on a rack coated with cooking spray in a 15x10x1-in. baking pan. Bake until lightly browned and cooked through, 18-22 minutes. If desired, serve with pasta and pasta sauce.

- Combine all the ingredients except the olive oil and garlic in a bowl. Add the olive oil and garlic in a small sauce pan and heat. Roll the ingredient mixture into 1 to 2 inch balls, place them in a large frying pan and cook until browned. Remove from heat and set aside.
- Heat your favorite Spagehetti sauce in a separate saucepan. Bring to boil. Reduce heat. Slowly stir in meatballs and simmer until heated throughout. Serve over noodles.

GRANDMA'S ITALIAN MEATBALL RECIPE
Grandma's tender and juicy meatball recipe simmered in a delicious tomato sauce and served with spaghetti noodles, classic Italian food.

- In a large pot or dutch oven, heat olive oil over medium-low heat. Once hot, add the onion and garlic, sauté until onions are translucent, about 3 minutes.
- Stir in the tomato paste and cook for 1 minute. Stir in the crushed tomatoes, salt, and pepper. Simmer covered, with lid slightly ajar to prevent splattering for 30 minutes, stirring occasionally. Season with salt and pepper to taste.
- Set the oven rack to the lower-middle position and set it to broil. Line a large baking sheet with foil and lightly grease it with olive oil. Set aside.In a large bowl, add the ground beef, eggs, breadcrumbs, parmesan cheese, minced onion, salt, black pepper, Italian seasoning, and minced garlic. Use hands to mix thoroughly until combined.
- Measure and roll the ground beef mixture into ⅓ cup (3 ounces) rounds, about the size of an egg. Evenly space the pieces on the baking sheet, there should be about 14 to 15 meatballs.
- Broil the meatballs until the surface is browned, about 10 to 12 minutes. Turn over and cook for an additional 2 to 3 minutes to lightly brown the other side.
- Transfer the meatballs to the tomato sauce. Cover the pot with the lid slightly ajar, simmer on low heat for at least 1 ½ hours, checking and stirring every 20 minutes, or as needed. The meatballs should be fork tender when sliced.
- At the end of cooking, adjust the consistency of the sauce with water if needed, about 1 tablespoon at a time. Season to taste with salt and pepper.
- Serve meatballs with spaghetti topped with sauce, sliced basil, and Parmesan cheese.

- Preheat oven to 350 degrees F. Spray a baking sheet with olive oil cooking spray.
- Mix all ingredients thoroughly in large bowl. If mixture seems a little loose add more bread crumbs.
- Roll meatballs loosely about the size of a golf ball and place on baking sheet. Place into preheated oven for approximately 35 to 40 minutes. Enjoy!
GRANNY'S MALAYSIAN MEATBALL CURRY
A very tasty meatball curry which my family enjoyed. I really like how you don't need to brown the meatballs before adding them to the gravy - so quick and easy. You can use store-bought Malaysian Curry Powder, or make your own (which is more fun to do if you have the time). I served this with rice and stir-fried vegetables.

- Prepare all ingredients before commencing to cook.
- In a medium-large bowl, combine the beef, breadcrumbs, egg, chopped spring onion and cilantro, with salt and pepper to taste, and place to one side.
- Grind onion, garlic and ginger to a paste with a stick blender or in a small food processor.
- In a small bowl, combine Malaysian curry powder, chili powder, ground cloves and a little water, to make a paste.
- Heat the oil over a medium-high flame in a wok, add onion paste, and stir-fry for about 5 minutes.
- Add the curry paste, star anise, cloves, curry leaves, reduce heat to medium, and stir fry until quite toasted and the oil starts to ooze out: this can take 5 - 10 minutes, but be careful not to burn.
- Add coconut milk and bring slowly to the boil.
- While curry liquid is boiling start making and dropping in bite sized meatballs - stop occasionally and stir gently.
- When all meatballs have been added, add tomato paste and salt to taste.
- Simmer, covered, on medium heat for 10 minutes, adding a little extra water as necessary.
- Add potato and simmer uncovered for another 15 minutes, stirring occasionally, again adding a little water if necessary.
- Serve with bread, roti chani, roti jala or steamed rice.

- 1. Mix together all meatball ingredients. Refrigerate 90 minutes Or put in freezer for 15 minutes.
- 2. Form into 1-inch meatballs. Brown in bacon fat, when cooked, remove from frying pan to large bowl. Put onions in the pan for about 8-10 minutes over medium heat. Put the onions with the meatballs.
- 3. Add broth into pan and stir until it is boiling, this helps to get the pan drippings. Add corn starch mixed with milk. Stirring constantly, add in the sour cream sour cream, then the alcohol. It will thicken to a rich sauce.
- 4. Put the meatballs and onions into the pan and gently fold into the sauce. Remove from heat and serve!
- 5. *** Serve over noodles or mashed potatoes, with a salad or vegetable.
