GRANDMA'S FRUIT BARS
My mom got this recipe from her mom. The bars are moist and spicy, and keep well. You can drizzle the bars with a powdered sugar glaze, but usually mom served them plain.

Steps:
- Pre-heat oven to 350°F.
- Grease a 10x15-inch jellyroll pan and set aside.
- In a medium saucepan, bring the raisins, water, sugar and shortening to a boil.
- Add cinnamon, nutmeg and cloves and allow to cool.
- While the spice mixture is cooling, sift together the flour, salt and baking soda.
- Add to cooled mixture and stir well.
- Stir in chopped nuts and dates.
- Spread in prepared pan and bake for about 30 minutes.
- May be frosted, or very good left plain Makes 25 (2 x 3") bars.

GRANDPA'S FRUIT BARS

- In a small bowl, combine the raisins, dates and liqueur. Set aside.
- Preheat the oven to 375 degrees.
- In a large bowl, beat together the butter or margarine, the two sugars, the whole egg, the egg white and the vanilla extract until the mixture is light and fluffy.
- Add the cinnamon, nutmeg, orange peel, if using, flour and baking soda until thoroughly blended. Add the nuts and the macerated fruit. The dough will be sticky.
- Using well-floured hands or the back of a spoon, press the dough into a foil-lined, 10-by-15-inch jellyroll pan.
- Mix the yolk and the water. Using a pastry brush, brush the dough with the egg wash.
- Bake 20 to 25 minutes, until the dough is light golden. Cool 10 minutes, then cut into 1-by-2-inch bars.

- Heat oven to 160C/fan 140C/gas 3. Gently heat the sugar, golden syrup and butter in a pan until the sugar and butter have both melted. Stir the oats, raisins, walnuts, seeds and cranberries into the pan until coated in the butter.
- Spoon half the oaty mix into a traybake tin (23 x 23cm or thereabouts). Scatter the apricots over the top, then top with the remaining oat mix. Pack the mix down well and smooth with the back of a metal spoon. Bake for 35 mins or until dark golden. Leave to cool completely before cutting into 16 bars with a sharp knife.

- Preheat oven to 325°F. Lightly coat a 13x9" pan with nonstick spray and line with parchment paper, leaving an overhang on both long sides; spray parchment.
- Pulse 3/4 cup fruit and 1/2 cup hot water in a food processor until smooth and incorporated, 3-4 minutes. Add honey, almond butter, cinnamon, salt, and vanilla and pulse until combined, about 15 seconds. Add 1/2 cup oats and pulse until well combined, 30-45 seconds. Add pumpkin seeds, sesame seeds, sunflower seeds, coconut, and remaining 1 cup oats and 1/2 cup fruit. Pulse until just combined, about 15 seconds.
- Transfer mixture to prepared pan, pressing down until completely even. Bake granola until darkened, firm around the edges, and the center gives just slightly when pressed, about 35 minutes. Transfer pan to a wire rack and let cool in pan. Remove granola using parchment overhang, then cut into 20 bars with a serrated knife.

- In a large bowl, combine the first 8 ingredients. Combine the butter, syrup and honey; drizzle over oat mixture and stir until well coated. Pour into a greased 13x9-in. baking pan. Bake, uncovered, at 350° for 30 minutes, stirring every 10 minutes. Cool on a wire rack; crumble granola into pieces., Combine the fruits in a large bowl. GRANDMA'S FRUIT BARS
The aroma is almost Christmas-like because of the cinnamon and cloves. The bars are sweet and spicy and the topping of a light confectioners icing is a nice touch. I think this would also be delicious served with whipped cream. I would take this to a potluck or even a bake sale!

- 1. Add baking soda to hot coffee. Set aside. Using a regular size cookie sheet, spray with Pam baking spray.
- 2. Cream sugar, shortening and eggs.
- 3. Add dry and liquid ingredients alternately.
- 4. Add raisins. You can substitute dates or candied fruit. Add nuts and blend well.
- 5. Bake at 350 degrees. Check with toothpick inserted in center. Cool completely. Frost when cool with confectioners frosting.
- 6. Optional - Cut up walnuts and sprinkle on top of frosting.
