GRANDMA'S SOFT SUGAR COOKIES
Grandma's Soft Sugar Cookies are super soft, light and fluffy. They are perfect with just a little sugar on top or with some icing.

Steps:
- Preheat oven to 400f degrees. Line a large baking sheet with parchment paper. In a bowl, beat together eggs, oil, vanilla extract, sugar and Stevia In The Raw®.
- Then gently stir in flour, baking powder and salt. Mix well. Batter will be sticky.
- Drop batter by heaping tablespoons onto prepared baking sheet (about 2 inches apart).
- Prepare two bowls. One bowl with water and one with the sugar. Dip the bottom of a small glass into the water.
- Then dip it into the sugar.
- Very gently press the sugar coated glass onto each cookie.
- Repeat with the water and sugar as needed.
- Bake one cookie sheet at a time for about 6-10 minutes until lightly golden in color.
- Continue until all the cookies have been baked. Allow to cool completely. Then store in an airtight container.

- In a large bowl, cream shortening and sugar; add eggs and vanilla. In a small bowl, combine buttermilk and baking soda. Stir in half the buttermilk mixture. Combine flour, nutmeg, salt and baking powder. Stir in dry ingredients alternately with buttermilk mixture. Dough will be tender. With a rolling pin, roll dough to 1/2-inch thick, using generous amounts of flour. Cut out cookies with a round cookie cutter. Bake on a greased cookie sheet. Bake for 10 minutes (I baked mine 12 minutes and they were super soft) at 350 degrees. Do Not Overbake. The cookies should be soft. Cool completely and spread with pink icing.

- Whisk flour, baking powder, cinnamon, ginger, cloves, and salt together in a bowl.
- Beat brown sugar and butter in a separate bowl with an electric mixer until creamy. Mix in molasses, egg, and candied ginger. Gradually mix in dry ingredients until combined. Chill dough in the refrigerator for 1 hour.
- Preheat the oven to 375 degrees F (190 degrees C). Grease a cookie sheet.
- Roll chilled dough into 1/2-inch to 3/4-inch balls. Dip balls in white sugar to coat and place on the prepared cookie sheet.
- Bake in the preheated oven until edges are golden, 8 to 10 minutes. Cool on the baking sheet briefly before removing to a wire rack to cool completely.

GREAT GRANDMA'S SOUR CREAM DROP COOKIES
This recipe was on a card tucked into my mom's recipe box; it's pretty similar to a number of variations that seem to be from the 1930s. A note said "flavor with whatever you like" and of all the flavors I played around with, I thought lemon zest balanced the sweet dough the best. These bake up into tender little cakes that make a great base for whoopie pies. Once baked, they freeze well (thaw for an hour or so on the counter to eat), but start losing their tenderness after more than one day at room temperature.

- Preheat the oven to 400 degrees F (200 degrees C). Line two rimmed baking sheets with parchment paper.
- Cream sugar, shortening, and butter together in the bowl of a stand mixer on medium-high speed until light and fluffy, about 1 minute.
- Mix in sour cream and lemon zest on low speed until no streaks of sour cream remain. Add eggs, one at a time, mixing on medium-low just until there are no streaks of yolk, and scraping down the sides of the bowl between additions. Add flour, salt, baking soda, and baking powder all at once and mix just to combine.
- Drop by heaping tablespoons on the prepared baking sheets, about 2 inches apart.
- Bake in the preheated oven until the tops are puffy and spring back when lightly touched with a finger, about 10 minutes. They should be light golden, with occasional spots of pale golden brown.

GRANDMAS SOFT SUGAR COOKIES
This has been in my family for 5 generations!They never get hard. Light and fluffy, just the right amount of sweetness. Once you try these you will never use any other recipe!I don't! Hint: The dough is just as good as the finished cookie!! I always think of my Grandma when I make these with my little girls, I hope you enjoy them...

- 1. Preheat oven to 350. In mixing bowl combine shortening, butter, sugar and egg. I use my trusty wooden spoon, using a mixer puts too much air in the batter and ruins the cookies.
- 2. Add the rest of the ingredients and stir well. The batter will be soft and creamy.
- 3. Drop by spoonful onto greased cookie sheet. Pat down lightly with you fingers and sprinkle each dough drop with sugar. Bake 8-10 min. Cool completely and store in your favorite cookie jar. Enjoy!Bet you can't eat just one!!!
