4 eggs
2 cups sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup 2% milk
1/4 cup butter, cubed
FROSTING:
1-1/2 cups packed brown sugar
3/4 cup butter, melted
1/2 cup half-and-half cream
2 cups sweetened shredded coconut

Steps:

  • In a large bowl, beat the eggs, sugar and vanilla until thick and pale yellow, about 4 minutes. Combine the flour, baking powder and salt; add to egg mixture and beat just until combined. In a saucepan, bring milk and butter to a boil, stirring constantly. Add to batter and beat until combined. , Pour into a greased 13x9-in. baking pan. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. , Combine frosting ingredients; spread over warm cake. Broil 4 in. from heat until lightly browned, about 3-4 minutes.

2 large eggs, room temperature
1 cup sugar
1 teaspoon vanilla extract
1 cup cake flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup 2% milk
2 tablespoons butter
FROSTING:
3/4 cup packed brown sugar
1/2 cup butter, melted
2 tablespoons half-and-half cream
1 cup sweetened shredded coconut

Steps:

  • Preheat oven to 350°. In a large bowl, beat eggs, sugar and vanilla on high until thick and lemon-colored, about 4 minutes. Combine flour, baking powder and salt; add to egg mixture. Beat on low just until combined. Heat milk and butter in a small saucepan until butter melts. Add to batter; beat thoroughly (the batter will be thin). Pour into a greased 9-in. square baking pan. Bake until cake tests done, 20-25 minutes. Cool slightly. For frosting, blend all ingredients well; spread over warm cake. Broil about 4 in. from the heat for 3-4 minutes or until the top is lightly browned.

2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
4 tablespoons butter
1 cup milk
1 teaspoon vanilla extract
4 eggs (room temperature)
2 cups sugar
9 tablespoons butter (melted)
¾ cup packed light brown sugar
6 tablespoons evaporated milk ((recommended: Carnation))
1 ½ cups shredded coconut ((recommended: Baker's Angel Flake))

Steps:

  • Adjust an oven rack to the middle position and heat the oven to 350. Grease and flour a 13x9 inch pan.
  • Whisk together the flour, baking powder, and salt in a medium bowl.
  • Heat the butter and milk in a medium saucepan over medium heat until the butter melts. Remove from the heat and stir in the vanilla.
  • In a large bowl, use an electric mixer on medium-high speed to beat the eggs and sugar together until pale and thick, about 6 minutes.
  • Using a rubber spatula, fold the flour mixture and milk mixture alternately into the eggs and sugar until just incorporated.
  • Pour the batter into the prepared pan and bake until a toothpick inserted in the center comes out clean, about 30 to 35 minutes.
  • Remove from the oven and let the cake cool in the pan for about 10 minutes.
  • Heat the broiler while you mix the topping.

1 1/4 c boiling water
1 c oatmeal, uncooked
1/2 c margarine
1 c brown sugar
1 tsp vanilla extract
2 eggs
1 c sugar or splenda
1 1/2 c all purpose flour
1 tsp baking soda
1/2 tsp salt
3/4 tsp cinnamon
1/4 tsp nutmeg
COOKED CARMEL FROSTING
1 1/2 c brown sugar
2 Tbsp butter
3/4 c milk or cream
1/2 tsp vanilla

Steps:

  • 1. Pour water over oats and cover and let stand 20 minutes. Beat butter til creamy,gradually add sugar and beat til fluffy. Blend in eggs,vanilla and oats and mix well.
  • 2. Add flour, baking soda,salt,cinnamon and nutmeg to creamy mixture. Mix well. Pour into greased and floured 9" pan. Bake at 350 degrees F for 50-55 minutes
  • 3. CARMEL FROSTING: Cook sugar and cream until it forms a soft ball. Add vanilla and butter. Cool. Beat til consistency to spread.

  • 1. Preheat oven to 350 degree F. Grease and flour a 13 x 9 inch pan.
  • 2. Whisk the flour, baking powder, and salt in a large bowl
  • 3. Heat the butter and milk in a medium saucepan over medium heat until the butter melts. Stir in the vanilla.
  • 4. With an electric mixer on medium - high speed, beat the eggs and sugar until pale and thick, about 6 minutes.

1/2 cup coconut flakes

Steps:

  • Preheat oven to 350°F.
  • Beat eggs in mixing bowl until frothy; beat in sugar in 4 or 5 separate additions; stir in vanilla.
  • Next, stir in flour, baking powder and salt.
  • Heat milk and butter together in small saucepan just until hot; add to batter, stirring slowly and carefully.
  • Scrape into a greased 9-inch square cake pan and bake for about 25 minutes, or until cake tests done with a toothpick.
  • Make topping-- combine last 4 ingredients together in a small saucepan; heat and stir until hot and sugar is dissolved.
  • Spread topping over cake fresh from the oven; leave oven on.
  • Return cake to oven and heat until topping is bubbling well, anywhere from 3-5 minutes.
  • Variation: use chopped pecans or walnuts instead of the coconut.

2 large eggs
1 c all purpose flour
1 c sugar
1 tsp baking powder
1/2 c milk
3 Tbsp butter
TOPPING
4 Tbsp butter
6 Tbsp brown suger....tbls should be heaping
1/2 c coconut
3 Tbsp evaporated milk

Steps:

  • 1. Beat eggs until thick & lemony. Add sugar, flour & baking powder. Bring milk and butter to boiling point and add to dry mixture. Pour in a SMALL oblong or 9" square pan. Bake at 350 for 20-30 minutes.
  • 2. While cake is baking, heat together all Topping ingredients. Pour over cake immediately when removed from oven. Put under oven broiler until topping is light to medium brown. Serve while still warm. :)

½ cup skim milk

¼ cup heavy cream

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Whisk together the flour, baking powder, and salt; set aside. Grease and flour an 8-inch cake pan.
  • Combine the milk, 1 tablespoon butter, and vanilla extract in a small saucepan. Bring to a boil over medium-high heat, then remove from the heat and set aside. Beat the eggs in a mixing bowl with a hand mixer until smooth. Slowly pour in the white sugar while beating on high speed. Stir in the flour mixture until a few large lumps of flour remain, then pour in the warm milk mixture, and continue stirring until smooth. Pour into the prepared pan.
