GRANDMA'S BEEF AND NOODLE CASSEROLE
This ground beef casserole with noodles was Grandma's best creation - this was my one request for my birthday every year.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C).
- Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes.
- Meanwhile, heat a large skillet over medium-high heat. Cook and stir ground beef, bell pepper, and onion in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Stir flour into the drippings in the pan; slowly whisk in milk and season with salt and pepper. Stir in 1 cup Cheddar cheese, olives, and pimentos.
- Drain noodles and fold into the beef mixture. Transfer to a casserole dish and cover with remaining cheese.
- Bake in the preheated oven until bubbly and cheese is melted and browned, about 40 minutes.

GRANNY'S HAMBURGER CASSEROLE
This is a recipe from my husbands granny. I'm not sure where it originated, but I know it is one of our family favorites! I have substituted low fat cheddar cheese before, and my family never could tell the difference.

Steps:
- Preheat oven to 350 degrees.
- In a dutch oven, brown hamburger meat. Drain off fat.
- In the dutch oven, top meat with all of the sliced onions, then the potatoes.
- Salt the potatoes.
- Top with shredded cheese.
- Combine soup and soup can of water in a bowl and blend with spoon until smooth. Spread soup mixture over the cheese.
- Bake covered at 350 for about an hour.

GRANDMA'S HAMBURGER MACARONI CASSEROLE
I got this recipe from my Grandma. She would fix this for a quick Saturday dinner. I'm not sure where it originated. It's good old comfort food! I am guessing at the number of servings --- I have really big eaters at my house so you may get more servings than I estimate.

Steps:
- Cook the macaroni as directed on package.
- Cook bacon until crisp.
- Add onion and ground beef to skillet & cook until meat is browned. Drain fat.
- Add cooked ground beef, cream of mushroom soup, & tomato soup to macaroni. Mix well.
- Place mixture in 3 1/2 quart casserole dish.
- Top with shredded cheese.
- Bake at 350 degrees for 30 to 45 minutes.

- Brown hamburger and onion in a large skillet. Add salt and pepper. Add beans and cottage cheese. Mix well and put in a greased casserole dish. Cover top with crackers and pats of butter. Bake at 350 degrees for about 40 minutes or until top is brown.
GRANDMA'S GROUND BEEF CASSEROLE
As the title suggests, this was my Grandmother's recipe. I've tweaked the amount of cheese and sour cream depending on what I've got in the fridge and it always turns out great! My mother has suggested this was made up as a way to use up ingredients in the fridge.

Steps:
- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Mix sugar, salt, garlic salt and tomato sauce into ground beef; simmer until flavors blend, about 20 minutes. Remove from heat, cover skillet, and cool to room temperature.
- Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain and cool slightly.
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole dish.
- Mix sour cream, cream cheese, and onion in a bowl.
- Scoop half the noodles into the prepared casserole dish; top with half the sour cream mixture. Spoon half the ground beef mixture atop sour cream layer. Repeat layering with remaining ingredients. Top casserole with Cheddar cheese.
- Bake in the preheated oven until Cheddar cheese has browned, 25 to 30 minutes.
