CHRISTMAS APPETISER: ITALIAN CHEESE LOAF

Christmas Appetiser: Italian Cheese Loaf image

Recipe video above. Looks so festive, easy to make and a flavour bomb inside! Terrific economical, make ahead alternative to expensive cheese platters. It's like an antipasto platter in cheese log form! Adaptable and versatile! **Can freeform it instead of using loaf pan**

Provided by Nagi

Categories     Appetiser

Number Of Ingredients 13

500g/ 1 lb cream cheese (, softened (Note 1))
1/3 cup sour cream ((Note 2))
1/2 tsp EACH thyme, oregano, basil, rosemary, black pepper (OR 1 tsp Italian Seasoning)
1 tsp EACH garlic powder, salt, red pepper/chilli flakes ((adjust to taste))
2 cup cheddar or other cheese (, freshly grated (Note 3))
280g / 9 oz roasted peppers (, drained and finely chopped)
180g / 6 oz salami (, finely chopped (Note 4))
3/4 cup green olives (, finely chopped)
1/3 cup green onion (, finely minced (3 - 4 stalks))
220g / 7 oz sun dried tomato strips with OIL (, roughly chopped)
1/4 cup parsley (, finely chopped (or chives))
Rosemary sprigs ((decoration))
Jatz or other crackers (, for serving)

Steps:

  • Spray a loaf pan with oil then line with cling wrap with overhang.
  • Mix Cheese Log ingredients together. Taste and adjust salt if needed (bear in mind saltiness of crackers you are serving with).
  • Scrape into loaf pan and level surface, pressing to remove air pockets. Smaller pan = taller loaf.
  • Cover with cling wrap overhang and refrigerate for 4 hours+ (up to 1 week).
  • Turn out onto platter, peel off cling wrap.
  • Top with sun dried tomato and pour over oil. Garnish with parsley and rosemary sprigs to give it a festive look.
  • Best to serve closer to room temp than fridge cold. Serve with crackers! Knives for smearing optional - it's soft enough to scoop with crackers.

A TRIO OF CHEESE LOGS

A Trio of Cheese Logs image

Provided by Food Network

Categories     appetizer

Time 1h30m

Yield 12 servings per cheese log

Number Of Ingredients 10

Three 8-ounce packages cream cheese, at room temperature
1 teaspoon minced garlic
1/2 teaspoon ground white pepper
1 1/2 cups shredded pizza blend cheese
1/4 cup smoked paprika
2 cups shredded Cheddar Jack cheese
1/3 cup dried parsley
2 cups shredded extra-sharp Cheddar
6 whole pecans plus 1/3 cup chopped pecans
Crackers, for serving

Steps:

  • Put the cream cheese in the bowl of a stand mixer fitted with the paddle attachment. Add the garlic and white pepper and mix until well combined. Divide the mixture into 3 even portions; return one portion to the mixer.
  • For the pizza cheese log: Add the pizza blend cheese to the cream cheese mixture and mix well until combined. Remove to a work surface and roll into a log with your palms. (The mixture should be slightly sticky but thick enough to easily roll.) Put the smoked paprika on a shallow dish; roll the log in the paprika until completely coated. Roll the cheese log in a sheet of plastic wrap and refrigerate until firm, about 1 hour. Clean the mixer bowl and paddle.
  • For the Cheddar Jack and parsley cheese log: Put a second portion of the cream cheese mixture in the mixer bowl. Add the Cheddar Jack cheese and mix well. Remove to a work surface and roll into a log with your palms. Put the dried parsley on a shallow dish and roll the cheese log in the parsley until completely coated. Roll the cheese log in a sheet of plastic wrap and refrigerate until firm, about 1 hour. Clean the mixer bowl and paddle.
  • For the sharp Cheddar pecan cheese log: Put the last portion of the cream cheese mixture in the mixer bowl and add the extra-sharp Cheddar. Mix well. Remove to a work surface and roll into a log with your palms. Place the whole pecans down the length of the cheese log. Put the chopped pecans on a shallow dish, then roll the log in the pecans. Use your fingers to press the pecans more firmly into the cheese. Roll the cheese log in a sheet of plastic wrap and refrigerate until firm, about 1 hour.
  • Unwrap the cheese logs and present on a large platter surrounded by plenty of crackers and cheese knives for easy self-service.

JONI'S DATE LOGS - CHRISTMAS

Joni's Date Logs - Christmas image

This recipe is from my sister. Our family requests them every holiday season, and it wouldn't be Christmas without them! They are a great addition to your cookie trays and cookie tins to give as gifts to the neighbors, co-workers, friends and family. I hope you will try them, as they truly are fantastic! Word of warning::: These go fast, so make plenty!!! To avoid burning my hands from the hot mixture, I pick up the mixture with a piece of saran wrap, then squeeze it together with my hands and form the log, then roll the log in the coconut. Works great!

Provided by Lindas Busy Kitchen

Categories     Dessert

Time 40m

Yield 20-24 logs

Number Of Ingredients 8

1/2 cup butter or 1/2 cup margarine
1 cup sugar
3 cups dates, chopped
1 egg
1 teaspoon vanilla
1/2 cup walnuts, chopped
3 cups Rice Krispies
1 (7 ounce) bag sweetened flaked coconut

Steps:

  • Put butter, sugar, dates, and eggs in a heavy bottomed pan. Bring to boil over medium heat, and stir. When it starts to boil, stir constantly (about 10 minutes) until the liquid starts pulling away from the sides of the pan while you are stirring it, then remove from heat.
  • Add vanilla, walnuts and Rice Krispies, and mix in well.
  • Butter your hands and put enough mixture in the palm of your hand (about 2 T.). Roll into logs with your hands. The logs should be about 3" long by 1/2" wide. (The mixture will be hot, so be careful and work quickly).
  • Roll each log in flaked coconut and place on waxed paper until completely cool. Store in a plastic container with cover.

  • Christmas Cheese Ball. This holiday favorite looks more like a cheesy yule log than a ball. Still, it’s a decadent, delectable option for any cheese lover.
  • Christmas Cheese Tree. There’s nothing wrong with a good, old-fashioned cheese ball. Still, people typically like to go all out for Christmas. Jazz up your traditional cheese ball by turning it into a cheese tree!
  • Snowman Christmas Cheese Ball. Think shaping a Christmas tree cheese ball may be out of your wheelhouse? If you aren’t confident, whip up this snowman cheese ball instead.
  • Antipasto Cheese Ball Christmas Tree. Here’s another entertaining way to make a Christmas tree cheese ball. This one features sun-dried tomatoes, peppers, dill, and more.
  • Mini Cheese Ball Holiday Platter. Shaping a cheese ball into a Christmas tree is actually quick and simple. However, if you really think you can’t do it, there are other ways to make a tree.

  • Cranberry Pecan Cheese Ball. You’ll need only six ingredients to make this salty, tangy treat. You’ll start with a cream cheese and white cheddar base.
  • Grandma’s Holiday Cheese Ball. This tasty cheese ball doesn’t look super festive. It’s not shaped like a tree or snowman, nor is it covered in cranberries.
  • Dorothy’s Holiday Cheese Ball. Here’s another sweet and savory option if that’s more your style. It combines Dorothy Lynch dressing, Craisins, and pecans.
  • Santa Cheese Ball. Ranch and cheddar is one combination that just about anyone can get behind. And when you work those flavors into a rosy-cheeked Santa cheese ball, that’s even better.
