GREEN CHILE NEW MEXICAN STYLE



Green Chile New Mexican Style image

New Mexican Green Chile, of which I prefer Hatch chiles is amazing. Spicy and fresh roasted this chile can't be beat.

3 T vegetable oil
1 large onion chopped (At least 1 c)
3 garlic cloves minced
2 T flour
1 1/ 2 c chopped mild green chiles or use 2 c of your choice of chile
½ c chopped hot green chili
1/2 t ground cumin
Pinch of Mexican oregano
2 c chicken stock (I make this with Better Than Bouillon) Just mix a good spoonful into the hot water or directly into hot soup.
1 t salt - you may want to test as the bouillon does give it a nice degree of saltiness

Steps:

  • Heat oil and add onion. Cook about 5 minutes and add garlic.
  • Cook another minute and stir in flour. Cook for 1-2 minutes stirring so flour doesn't burn and also so that it cooks and you don't get a floury taste.
  • Add chilies. Pour in stock and seasonings. Taste for salt and adjust if necessary.
  • Bring to boil over medium heat and cook for about 15 to 30 minutes on a low simmer covered.
  • If you want it thicker add more broth or water. This can cook for longer if you want your chile a softer texture.

1/4 cup oil
4 pounds pork butt, (trimmed and cut into 1 1/2-inch cubes)
2 large onions, (peeled and chopped)
1 tablespoon ground cumin
1 tablespoon ground coriander
1 tablespoon oregano
4 cloves garlic, (minced)
2 Hatch peppers, (chopped (or Anaheims) )
2 Poblano peppers, (chopped)
1-2 jalapeno peppers, (seeded and diced)
1 pound tomatillos ((peeled and cleaned), chopped)
2 bay leaves
1 bunch cilantro ((large), chopped)
3 tablespoons masa ((corn flour))
4 cups water (or chicken stock)
1 tablespoon salt, (divided)
Lime wedges (for garnish)

Steps:

  • Heat the oil in a large pot over medium-high heat. Add the pork and 2 teaspoons of salt. Brown the pork on all sides, stirring regularly. Remove the pork from the pot and pour out all rendered fat, saving about 1 tablespoon.
  • Add the onions, remaining salt, cumin, coriander, and oregano to the pot. Sauté for 3-5 minutes. Then add the garlic and peppers. Sauté another 3-5 minutes. Add the chopped tomatillos, bay leaves, and cilantro. Toss the pork with the masa and add back to the pot. Stir well.
  • Finally add the water. Bring to a boil, then reduce the heat to low. Cover and simmer for 3 hours, or until the pork is falling apart, stirring occasionally.
  • Take 2 forks and break the pork up even more. Salt and pepper to taste.

I love tuna melts and I love Green Chiles so this recipe sounds like it was meant for me. This recipe won $10,000 in the 42nd Pillsbury Bake Off .

1 (16 1/3 ounce) can homestyle refrigerated reduced-fat buttermilk biscuits (16.3 oz. can "Grands" These are the large ones)
1 egg yolk
1/4 teaspoon water
1 tablespoon sesame seeds
1/3 cup reduced-fat mayonnaise or 1/3 cup salad dressing
2 tablespoons finely chopped fresh cilantro
1/8 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon cajun seasoning
1 (4 1/2 ounce) can chopped green chilies
2 (6 ounce) cans albacore tuna in water, drained
2 cups shredded reduced-fat cheddar cheese (8 oz)
chopped tomato, if desired
shredded lettuce, if desired

Steps:

  • Heat oven to 350°F Spray large cookie sheet with cooking spray. Separate dough into 8 biscuits; place 2 1/2 inches apart on cookie sheet. With bottom of flat 2-inch-diameter glass or with fingers, press biscuits into 3 1/2-inch rounds with 1/4-inch rim around outer edge.
  • In small bowl, beat egg yolk and water with fork until well blended. Brush over tops and sides of biscuits. Sprinkle each with sesame seed. Bake 13 to 17 minutes or until golden brown.
  • Meanwhile, in medium bowl, mix mayonnaise, cilantro, salt, pepper, Cajun seasoning and green chiles. Stir in tuna; set aside.
  • Set oven control to broil. Spoon about 1/4 cup tuna mixture into indentation in each biscuit; sprinkle each with 1/4 cup cheese. Broil 4 to 6 inches from heat 1 to 2 minutes or until cheese is melted. Carefully remove biscuits from cookie sheet. Garnish with tomato and lettuce.

1 avocado , sliced or chopped
4large tomatoes , deseeded and chopped
½ bunch spring onions , sliced
1 red chilli , chopped
400g can tuna in water, drained
3 tbsp French dressing , homemade or bought

Steps:

  • Toast the pitta breads. Once cool, tear into large pieces. Mix together the beans, avocado, tomatoes, spring onions and chilli. Flake the tuna on top of the salad, pour over the salad dressing, then add the crisp pieces of pitta. Mix gently and serve straight away.

Got this recipe out of a magazine and it looked so good I had to try it. Really great for a light summer dinner or lunch. (Prep time includes refrigeration).

15 ounces chunk white albacore tuna in water
4 large tomatoes, chopped
1/2 cup red onion, finely diced
2 cups cilantro, lightly packed and chopped
1/2-3/4 cup fresh lime juice
2 jalapeno peppers, seeded and minced (optional)
1 teaspoon salt
1 head boston lettuce
24 baked corn tortilla chips

Steps:

  • Place tuna in a medium bowl and break into large pieces with a fork.
  • Add tomatoes, onion, cilantro, lime juice, peppers, and salt.
  • Stir to mix.
  • Cover and refrigerate 30 minutes or up to 6 hours.
  • Line plates with lettuce leaves and top with tuna salad.
  • Serve with chips.

½ teaspoon ground black pepper

Steps:
