"This fruity treat has been an all-time favorite with my family for years," says Johanna Gimmeson, Powell, Wyoming. Use an ice cream freezer to make this colorful crowd-pleaser, which is sure to be a success wherever it's served.

Number Of Ingredients 7

2-1/2 cups sugar
1 package (6 ounces) cherry gelatin
2 cups boiling water
4 cups milk
4 cups heavy whipping cream
1 can (20 ounces) crushed pineapple, drained
1/3 cup lemon juice

Steps:

  • In a large bowl, dissolve sugar and gelatin in boiling water. Refrigerate for 1 hour or until cool. , Stir in the milk, cream, pineapple and lemon juice. Fill cylinder of ice cream freezer two-thirds full; freeze according to manufacturer's directions. Refrigerate remaining mixture until ready to freeze. , When ice cream is frozen, transfer to a freezer container; freeze for 2-4 hours before serving.

My grandmother, Maude Marshall, was an amazing cook. This recipe is a family favorite, and the beauty of it is that it doesn't matter what time of year it is--you can always get maraschino cherries and canned pineapple! The color is a lovely pink, and the taste always takes me back to my childhood.

3 eggs
2 cups sugar
1 quart milk (whole or skim)
1 (10 ounce) jar maraschino cherries in juice, chopped
1 (20 ounce) can crushed pineapple in juice
1 (12 ounce) can evaporated milk

Steps:

  • Mix together 3 eggs, 2 cups of sugar, and 1 quart of milk. Boil in a double boiler for a few minutes or until mixture thickens enough to coat a spoon. Let cool completely.
  • Add cherries with juice, pineapple with juice, and evaporated milk. Add milk as needed to fill churn. Freeze according to manufacturer's instructions.

1/2 cup 2% low-fat milk
1/2 cup coconut milk (sweet)
1/2 cup evaporated milk
1/2 cup heavy cream (whipping cream)
1/8 cup pineapple juice
1/8 cup fresh lemon juice
1 -2 teaspoon lemon zest
1/2 cup fresh pineapple, crushed, sweet
1/4-1/2 tablespoon crystallized ginger, shredded
1 pinch ground allspice
1/4 cup brown sugar
1/2 cup pure maple syrup

Steps:

  • Blend, milk, coconut milk, evaporated milk, heavy cream, pineapple juice, lemon juice, lemon zest, crushed pineapple, crystallized ginger, ground allspice, brown sugar and maple syrup together.

2 cups whole milk
1 cup sugar
1/4 cup powdered milk
8 egg yolks
1 cup heavy cream
1 teaspoon vanilla extract
1 1/2 cups mangoes, cleaned and cut into small pieces
1 1/2 cups pineapple, cleaned and cut into small pieces

Steps:

  • In a large pot mix the milk, sugar and powdered milk. Bring the mix to a low simmer over medium heat and stir to dissolve the sugar, then turn the heat down and just keep it warm.
  • Put the egg yolks in a medium bowl and whisk for 2 minutes until they are thickened.
  • While constantly whisking, slowly add 1 cup of the hot milk mixture and whisk until it is blended. Then pour the egg mixture back into the pot of hot milk and increase heat to medium. Stir the mixture constantly with a wooden or plastic spoon, until the mixture is thickened (like gravy).
  • Stir in whipping cream and vanilla. Cover and put into the refrigerator for at least 6 hours (or overnight) before making the ice cream in the ice cream maker.
  • Blend fruit in a food processor or blender to a puree consistency.
  • Stir the pureed fruit into the milk and egg mixture. Mix thoroughly.
  • Pour the mixture into an ice cream machine and churn until frozen, 15-20 minutes, according to the manufacturer's instructions.
  • Transfer to plastic container and place in the freezer for an hour before serving.
  • Serving: take it out for 5-10 minutes before serving, or longer, so it comes to the right scooping temperature.

1 (13 1/2 ounce) can coconut milk
3 tablespoons pineapple preserves

Steps:

  • Mix coconut milk and pineapple preserves in a bowl with a stick blender. This breaks up pineapple pieces in the preserves into a finer texture so they are not so lumpy in the final dish. You can do this in the blender if necessary, or if you like chunky bits of pineapple just melt the preserves in the microwave for 30 seconds.
  • Mix in the cream of coconut. Cover the bowl and place in the refrigerator overnight.
  • Freeze the mixture in an ice-cream maker according to the manufacturer's instructions.
