The only difference today is that I can't get home-smoked ham like those Grandpa used to cure in his old-fashioned smokehouse. But that never matters to hungry folks at the table-Grandma's recipe is a winner every time!"

- In a large bowl, beat the eggs; add milk, bread crumbs and pepper. Add ham and pork; mix well. In a shallow baking pan, shape meat mixture into an 8x4-in. oval. Insert a thermometer. Bake at 350° for 30 minutes. , Meanwhile, combine glaze ingredients. Spoon over loaf. Bake 40 minutes longer or until the thermometer reads 170°, basting occasionally with glaze.

- Preheat oven to 350°F.
- Cook onion in butter for 5-6 minutes or until tender. Cool completely.
- Combine all loaf ingredients in a bowl and mix well.
- Place on a parchment lined pan and form into an 8"x 4" loaf. Bake for 1 hour or until the inside of the loaf reaches 160°F.
- Combine topping ingredients and spread over the top of the loaf during the last 20 minutes of cooking.
- Rest 5-7 minutes before slicing.

Ham loaf may not be the most appetizing name, but my ham loaf with tasty brown sugar Dijon glaze is totally delicious! The tangy-sweet Dijon glaze will get you hooked and you'll be putting ham loaf on your list of favorite weekly dinners!

- Preheat your oven to 350°F (175°C) and line a rimmed baking sheet or baking dish with parchment paper.
- Melt the butter in a small skillet or frying pan over medium heat, then saute the diced onion for 4-5 minutes or until it reaches your desired level of tenderness. Remove from heat when done and allow to cool.
- Place cubed ham into a food processor and pulse until broken up and ground, but not turning into a paste consistency. Transfer the ham into a large mixing bowl.
- Add the remaining ingredients (ground pork, egg, seasoned breadcrumbs, milk, ground black pepper, and sauteed onion) and mix until well combined.
- Transfer the ham loaf mixture to your prepared baking sheet or pan and form into a loaf shape, approximately 8x4-inches in size. Place the loaf into your oven in the middle of the center rack and bake for 1 hour at 350°F (175°C) or until the internal temperature of the ham loaf reaches 160°F (71°C).
- Combine the glaze ingredients in a small bowl (light brown sugar, Dijon mustard, and apple cider vinegar) until smooth. Coat the ham loaf with the glaze and top with optional pineapple rings and maraschino cherries then return to the oven for an additional 15 minutes.
- Remove the cooked ham loaf from your oven and tent a sheet of aluminum foil over the loaf loosely. Allow the ham loaf to rest for 10 minutes before slicing and serving.

GRANDMA SAHLSTROM'S HAM LOAF
During World War II meat was scarce and rationed. Butchers came up with a recipe for ham loaf for the holidays since most people could not afford a whole ham. Since then this recipe has been a family favorite and served at our family gatherings.

Steps:
- Mix first 6 ingredients, well with hands and mold in pan. Cover with foil and bake at 250 - 275 degrees for 2 ½ - 3 hours. Keep covered until the last 1hr.
- While ham loaf is baking prepare sauce with remaining ingredients: place all ingredients in a small sauce pan bring to a boil for a minute. Simmer 10-15 minutes.
- When one hour remains drain off liquid from ham loaf and pour over sauce ham loaf. Basting every 15 minutes until sauce forms a glaze. Turn up a heat a little.

- Drain pineapple, reserve the juice.
- Preheat oven to 375*.
- In a small bowl, mix together butter, brown sugar, and drained pineapple.
- Coat a 10x10" baking pan with vegetable spray, pour in the pineapple and pat it out smoothly on the bottom of the pan.
- In a large mixing bowl, beat the eggs with a fork.
- Stir in the ham, pineapple juice, bread crumbs, parsley, onions, mustard, ginger, curry powder and pepper.mix well.
- Spread the ham mixture over the pineapple, patting it firmly over the pineapple.
- Bake for 45 minutes.
- Remove from the oven and allow to stand for 10 minutes.
- To serve, invert onto a serving platter.
- If any of the pineapple mixture remains in the bottom of pan, pat it on the loaf and serve immediately.

GRANDMOTHER'S HAM LOAF
This is a meat loaf made with ham that features a mustard glaze instead of the usual ketchup type on beef meat loaves. It makes a lot and leftovers make great sandwiches. If you want a ham loaf that really goes bang, substitute the recipe for Pirate's Pantry Hot Mustard Sauce (posted separately) for the glaze in this recipe.

- Make a loaf and place in a glass 9"x13" baking dish.

HAM LOAF
Central PA specialty, "Ham loaf"'s main ingredient can be hard to find outside of PA. If you can't grind your own ham at home, you might luck out and find a butcher who can for you. The milk and eggs will keep it moist while cooking, and the sauce is hard to beat (never hurts to make extra).

- Preheat oven to 350 degrees.
- Mix loaf ingredients together and form into a loaf shape and place in baking dish.
- Mix sauce ingredients together and divide into two portions.

- Have smoked ham and fresh pork ground together twice. Combine with all remaining ingredients and shape into loaf. Cover with sauce.

GRANDMA'S SALMON LOAF
This is the closest I could come to the salmon loaf my Grandma used to serve, always with a baked potato, often with a side of broccoli. It works great with reduced fat Ritz crackers (I have tried it out), skim milk, egg substitute and olive oil instead of butter, which brings the saturated fat content WAY down while keeping the flavor and texture.

- Drain canned salmon liquid into measuring cup. Add milk to total 1 cup.
- Flake salmon and add to milk/salmon liquid.
- Combine with all remaining ingredients and mix lightly.
