CHOCOLATE PECAN PIE
Make room, pecans. We've added melted chocolate to the usual pecan pie in this Chocolate Pecan Pie! Up the ante on the classic with our Chocolate Pecan Pie.

Steps:
- Heat oven to 350°F.
- Chop 4 oz. chocolate coarsely; set aside. Microwave remaining chocolate and butter in large microwaveable bowl on HIGH 1 to 2 min. or until butter is melted. Stir until chocolate is completely melted.
- Line 9-inch pie plate with crust as directed on package; brush bottom with small amount of eggs. Add remaining eggs, sugar, corn syrup and vanilla to melted chocolate; stir until well blended. Add chopped chocolate and nuts; mix well. Pour into crust.
- Bake 55 min. or until knife inserted near center comes out clean. Cool completely.

GRANDMA GRAY'S FAMOUS CHOCOLATE PECAN PIE (RECIPE FOR 2 PIES)
I made my mother's pecan pie recipe for several famous chefs and cookbook authors in Napa Valley. Everyone said this is one of the best chocolate pecan pies they've ever tasted! Hope you like it!

- 1. •Start with sprinkling a pinch of cinnamon on the bottom of an unbaked pie crust. • Bake crust at 500 F for 7 mins. •Take the pie crust out and immediately pour 1 cup of chocolate chips or discs onto the hot pie rust. •Wait a minute or two, for chocolate to melt. •Take a spatula, start spreading melted chocolate chips to even out the bottom. •Next, proceed with pie filling ingredients.
- 2. Next, turn the oven down to 350F. Either you can add the chocolate chips directly to the warm pie crust (bottom crust only) and spread evenly or melt the chocolate chips in a separate bowl and then spread on the bottom of the crust. Feel free to experiment with another pinch of cinnamon or try a dash of espresso or dark rum into the melted chocolate mixture, which is all optional.
- 3. In a large bowl, stir in first seven ingrediants until well blended.
- 4. Stir in pecans, pour into pie crust. Bake for 50-55 minutes. The best way to tell if the pie is done is when it poofs up. Another way is to insert a knife and if it comes out clean, then it's done.
- 5. Let pies cool on rack. Top with homemade whipping cream.
- 6. Note to chef: Optional Piecrust Recipe (2 pies) 2 1/8 c. sifted all purpose white flour 1 1/4 tsp. salt 2/3 c. chilled shortening 6-7 Tbsp. ice water Mix all together. Wrap in plastic and refrigerate for 30 mins. before rolling out. After rolling pie dough out on plastic wrap, transport onto pie tins, crimp edges and return back to the refrigerator until dough is cold. Bake piecrust @ 500 for 7-8 mins. •••••••••••••••••• Note to my sister Michelle S, from Cynthia S: I made this pie 11/25/15 and added 3/4c. Crisco ( instead of 2/3c. for piecrust, so that dough would easily roll out) and then I used the the usual 4 Tbsp salted butter for pie filling (reminder: this makes 2 pies) . Mother thought pies were slightly on the oily side after sticking a toothpick in them in the oven. Yet, when pie cooled, they seemed perfectly fine. Perhaps, next time, go back to 2/3 crisco and try 3 Tbsp butter for filling? Or, try a butter piecrust recipe which I'll post soon. Also, please let me know if you ever find a fabulous gluten free piecrust recipe. Enjoy! ❤️
CHOCOLATE PECAN PIE

- Pate Brisee: Mound the flour on a work surface. Using your fingers, make a well in the center. Place the butter, egg, sugar, salt, and milk in the well. Pinch the wet ingredients together with your right hand, then gradually draw the flour into the well with your left, mixing it into the wet ingredients with your right hand as you go. Knead the dough by pushing it in sections against the work surface, pushing firmly away from you and down with the heel of your hand. Gather the dough back up, form into a ball, wrap in waxed paper or plastic wrap, and chill at least 2 hours before using.
- Roll out and place inside a 10-inch tart pan with a removable bottom. Weigh down the dough with pie weights and bake in a preheated 375 degree F oven for 35 to 30 minutes or until blond. Remove the weights and bake an additional 10 to 15 minutes or until medium brown.
- Preheat the oven to 350 degrees F.
- In a bowl, whisk the eggs. Whisk in the sugar, corn syrup, and melted butter. Place the pre-baked crust on a cookie sheet. Sprinkle in the toasted pecans and chocolate pieces. Pour the egg mixture gently over the pecans and chocolate. Bake for 45 to 50 minutes, until the filling is set and slightly risen.
- Let cool in the pan to room temperature. Remove the sides of the pan. Refrigerate at least 2 hours, or until ready to serve, up to 24 hours. Slice the pie with a serrated knife as it comes out of the refrigerator, but let warm to room temperature before serving.
MY GRANDMA'S CHOCOLATE PIE
I got this recipe from my grandma and it is still the best chocolate pie I have tried! Definitely a must-try for chocolate lovers!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Mix cream cheese and sugar together in a bowl using an electric mixer. Mix in eggs. Add 1/2 the German chocolate and 1/2 the semisweet chocolate; beat until thick and smooth. Pour into the prepared pie crust.
- Bake in the preheated oven until set, 30 to 35 minutes. Let cool completely, about 30 minutes. Chill in the refrigerator for 4 hours.
- Mix remaining German chocolate and semisweet chocolate with sour cream in a bowl. Spread over chilled pie. Return to the refrigerator until firm, about 1 hour.

- To make the dough: (for step-by-step recipe with photos click here) Process flour, salt, and sugar in a food processor for a few seconds until combined. Add butter and pulse until mixture becomes crumbly and resembles coarse meal, about 15 pulses. Add 3 tablespoons water and keep pulsing, adding more water as needed until the dough isn’t dry and starts to clump together. Do not process to the point that a large ball of dough is formed, rather the dough should be quite crumbly with large clumps. Another way to check if it’s done, is to take a piece of dough and press it between your thumbs – the dough should stick well together without feeling dry or crumbly.
- Turn the dough to a floured surface and form into a ball. It should come together easily without being sticky. Flatten ball slightly with your hands to form a 1-inch thick disc. Wrap with plastic wrap and refrigerate for 1-2 hours.
- Roll out the dough: Take the dough out of the fridge and let it sit on the counter for a few minutes to soften slightly for easy rolling. On a floured surface, roll dough out into a 12-inch circle, then place gently into a 9×2-inch pie pan; you can do this by flouring a rolling pin and rolling the dough loosely around it, then unrolling it into the pan. Brush away any excess flour on the surface. With a sharp knife, trim the edges of the pastry to fit the pie pan. Use a fork to create a decorative border or crimp the edges using your fingers. Cover with plastic wrap and place in the fridge for 30 minutes.
