LEMON CAKE WITH LEMON FILLING AND LEMON BUTTER FROSTING



Lemon Cake with Lemon Filling and Lemon Butter Frosting image

This is a wonderful Easter cake. Everyone at my Easter barbeque loved it. Very moist and delightful.

2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
½ cup butter
1 ¼ cups white sugar
3 large eggs eggs
1 teaspoon vanilla extract
1 cup milk
1 tablespoon grated lemon zest
½ cup fresh lemon juice
1 tablespoon cornstarch
6 tablespoons butter
¾ cup white sugar
4 large egg yolks egg yolks, beaten
4 cups confectioners' sugar
½ cup butter, softened
2 tablespoons fresh lemon juice
1 teaspoon grated lemon zest
2 tablespoons milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8 inch round pans. Mix together the flour, baking powder and salt. Set aside.
  • In a large bowl, cream together the butter and sugar until light and fluffy, about 5 minutes. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the milk, mixing just until incorporated.
  • Pour batter into prepared pans. Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool in pans on wire racks for 10 minutes. Then invert onto wire racks to cool completely.
  • To make filling: In medium saucepan, mix together 1 tablespoon lemon zest, 1/2 cup lemon juice and 1 tablespoon cornstarch until smooth. Mix in 6 tablespoons butter and 3/4 cup sugar, and bring mixture to boil over medium heat. Boil for one minute, stirring constantly. In small bowl, with a wire whisk, beat egg yolks until smooth. Whisk in a small amount of the hot lemon mixture. Pour the egg mixture into the sauce pan, beating the hot lemon mixture rapidly. Reduce heat to low; cook, stirring constantly, 5 minutes, or until thick (not to boil).
  • Pour mixture into medium bowl. Press plastic wrap onto surface to keep skin from forming as it cools. Cool to room temperature. Refrigerate 3 hours.
  • To make frosting: In large bowl, beat confectioners' sugar, 1/2 cup butter, 2 tablespoons lemon juice and 1 teaspoon lemon zest until smooth. Beat in milk, and increase speed and continue to beat until light and fluffy.
  • To assemble: With long serrated knife, split each cake layer in half horizontally, making 4 layers. Place 1 layer, cut side up, on a serving plate. Spread with half of the lemon filling. Top with another layer, and spread with 1/2 cup frosting. Add third layer, and spread with remaining half of the lemon filling. Press on final cake layer, and frost top and sides of cake with remaining frosting. Refrigerate cake until serving time.

"Baking and giving" is a hobby of mine, and I love to bake my gifts by using old-fashioned recipes like this one, which was my great-grandmother's. There aren't too many shortcuts in these directions, but I enjoy aspect of "measuring and mixing"! This is one of my favorites, copied down from my mother's old cookbook.

5 large eggs, separated
1 cup butter, softened
3 cups sugar
1 tablespoon finely shredded lemon zest
3 tablespoons lemon juice
4 cups all-purpose flour
1/2 teaspoon baking soda
1 cup milk
Confectioners' sugar

Steps:

  • Let eggs stand at room temperature for 30 minutes. In a large bowl, cream butter and sugar. In a small bowl, beat egg yolks until thick and lemon-colored. Add to creamed mixture and beat well. Stir in lemon zest and juice. Combine flour and baking soda; add alternately with milk. In another bowl, beat egg whites on high speed until stiff peaks form; fold into batter., Pour into two well-greased 9x5-in. loaf pans. Bake at 325° for 65-70 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. Dust tops with confectioners' sugar.

This is my favorite cake recipe--my grandmother made it all the time. It is a great lemon pound cake that's not too sweet.

3 cups all-purpose flour
1 teaspoon salt
1 cup milk
1 ½ teaspoons lemon extract
3 cups white sugar
2 sticks butter
½ cup shortening (such as Crisco®)
5 eggs

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C). Grease a tube pan.
  • Sift flour and salt together into a bowl. Mix milk and lemon extract together in a separate bowl.
  • Combine sugar, butter, and shortening in a large bowl; beat with an electric mixer until creamy. Add eggs one at a time, beating until well combined. Mix in the flour mixture alternately with the milk mixture, beginning and ending with flour. Spread batter in the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 2 hours. Do not open the oven door while the cake is baking. Cool briefly in the pan before inverting onto a wire rack to cool completely.

This recipe is 64 years old it was used by my grandma . Over the years it got a lot of use from the family.

1 tablespoon(s) grated lemon rind
1/3 cup(s) lemon juice

Steps:

  • Mix sugar, cornstarch and salt very thoroughly, add remaining ingredents and blend.
  • Cook over boiling water stirring constantly until thickened. let cool and fill a two layer cake.

Colored sugar, optional

Steps:

  • In a large bowl, beat the cake mix and eggs until well blended. Fold in pie filling. , Spread into a greased 15x10x1-in. baking pan. Bake at 350° until a toothpick inserted in the center comes out clean, 18-20 minutes. Cool on a wire rack., In a small bowl, beat the cream cheese, butter and confectioners' sugar until smooth. Stir in vanilla and enough milk to reach desired consistency. Spread over cake. If desired, sprinkle with colored sugar Store in the refrigerator.

  • Directions for Lemon Filling: In a large sauce pan or double boiler , combine sugar, flour, salt, mix well. Beat egg yolks, milk, water together, then whisk into sugar mixture. Cook over medium heat stirring constantly, until mixture thickens. Remove from heat and stir in grated lemon rind, lemon juice and butter, cool then pour over cake. Sometime i don't use the grated lemon rinds.
