CAJUN-STYLE MEATLOAF
This meatloaf takes a spicy spin on the weeknight dinner classic.

- Preheat oven to 350°F with rack in top third position. Line a 9- x 5-inch loaf pan with a double layer of aluminum foil, leaving a 3-inch overhang on long sides. Lightly coat with cooking spray, and set aside.
- Heat oil in a large skillet over medium-high. Add onion, and cook, stirring occasionally, until tender, about 4 minutes. Add celery and bell pepper; cook, stirring often, until tender, about 4 minutes. Add Creole seasoning and pepper; cook, stirring often, until fragrant, about 1 minute. Transfer to a large bowl; spread in an even layer across bottom of bowl, and let cool for 5 minutes.
- Add beef, pork, breadcrumbs, parsley, eggs, and 2 tablespoons of the ketchup to onion mixture in bowl. Gently fold together using your hands just until incorporated. Press into prepared loaf pan.
- Stir together sugar and remaining 1/4 cup ketchup in a small bowl; spread evenly over meatloaf.
- Bake in preheated oven until well browned and a thermometer inserted in thickest portion of meatloaf registers 165°F, 50 minutes to 1 hour. Let cool for 15 minutes. Remove meatloaf from loaf pan using foil overhang as handles, and transfer to a cutting board. Cut into 8 slices.

- Combine the seasonings; set aside. In Dutch ovens, saute onions, green peppers and garlic in butter until tender. Add Worcestershire sauce, hot pepper sauce and reserved seasonings. Cook and stir for 8-10 minutes. Discard bay leaves. Remove from the heat; stir in milk and ketchup. Cool. , Add bread crumbs and eggs; mix well. In several large bowls, combine beef, pork and vegetable mixture; mix well. Pat into 11 greased 13-in. x 9-in. baking pans. , Bake at 350° for 65-75 minutes or until no pink remains and a thermometer reads 160°; drain.

Steps:
- combine the seasoning mix ingredients in a small bowl and set aside.
- melt the butter in 1 quart saucepan over medium heat.
- add the onions, celery, bell pepper, green onions, garlic, tabasco, worcestershire and seasoning mix.
- saute until mixture starts sticking excessively, about 6 mins, stirring occasionally and scraping the pan bottom well.
- stir in the milk and 1/2 cup catsup.
- continue cooking for about 2 mins, stirring occasionally.
- remove from the heat and allow mixture to cool to room temperature.
- place the ground beef and pork in an ungreased 13 x 9 inch baking pan.
- add the eggs, the cooked vegetable mixture removing the bay leaves, the bread crumbs.
- mix by hand until thoroughly combined in the center of the pan -- shape the mixture into a loaf that is about 1 1/2 inches high x 6 inches wide and 12 inches long.
- bake uncovered at 350 for 25 minutes, then raise heat to 400 and continue cooking until done, about 35 minutes longer.
- serve immediately,.

GRANDMA B'S SOUTHERN CAJUN MEATLOAF
My mother made this last week, and the guests complained that there was no second helping. Really, I am not a meatloaf fan, but this is the best I've ever had. Plus, it is so easy to do! - Combine all ingredients in a large mixing bowl and mix well by hand (a requirement, so that you can work in all the love).

- In a large mixing bowl, combine the beef, sausage, garlic, nutritional yeast, cajun seasoning, cream cheese, eggs, worcestershire and breadcrumbs. Work together with a wooden spoon for a few minutes. Then mix together with your hands (make sure they’re clean!).
- Place the meatloaf mixture on a parchment paper covered cookie sheet. Mold into a ‘loaf’ shape. Create on the top a slight indentation with a ‘lip’ around it.
- Bake in a preheated 375 oven for 30 to 35 minutes. Remove. Loosely cover with foil and let the meat rest about 5 minutes. Sprinkle the parsley on top and serve.
