This dessert recipe was very popular in Quebec during the Depression and remains a favorite in many French Canadian homes to this day.

Steps:
- In a large saucepan, mix together the brown sugar and water, and bring to a boil. Reduce heat to low, and stir in 1 tablespoon of butter and 1/2 teaspoon of vanilla. Cover while preparing the batter.
- In a medium bowl, stir together the flour, white sugar, baking powder and salt. Cut in 1/3 cup of butter by pinching between your fingers, or using a fork until the mixture has lumps no larger than crumbs. Make a well in the center, and pour in the milk and 1 teaspoon of vanilla all at once. Stir just until all of the dry mixture is absorbed.
- Return the sugar mixture to a full boil, and drop large spoonfuls of the batter into the syrup. Cover and simmer over medium heat, without removing the lid, for 15 minutes, or until a toothpick inserted into the largest dumpling comes out clean.

Steps:
- Bring syrup and water to a boil in a 6 qt Dutch oven over medium-high heat.
- While the syrup/water is rising to a boil, whisk flour, baking powder, and salt in a bowl. Set aside.
- Grate butter on large holes of a box grater into flour and toss to coat. Add milk and stir with a fork until dough forms.
- When syrup mixture reaches a boil, use a spoon to drop large clumps of dough into syrup.
- Cover pot and simmer until dumplings are cooked through (10-15 minutes). Spoon dumplings and sauce into 6 bowls and serve.

- DOUGH: In a large bowl, combine flour, sugar, baking powder and salt.
- Add butter to dry ingredients and work until the mixture resembles coarse sand using fingers, pastry cutter or a couple of knives.
- Add milk a little at a time until the dough comes together. Add vanilla extract, stir and set aside.
- MAPLE SAUCE: In a Dutch oven over medium-high heat, add butter, water, brown sugar, maple syrup and vanilla extract. Bring the sauce to a simmer.
- By the tablespoon, drop the dough balls one by one into the simmering sauce. Cover, reduce heat to medium and cook for 14 minutes. Halfway, spoon the sauce over the dumplings.
- Scoop up a hot dumpling into a serving bowl, spoon sauce over and serve with a scoop of vanilla ice cream.

POULET DE GRAND-MERE
Steps:
- For the chicken: Preheat the oven to 350 degrees F.
- Sprinkle the chicken breasts with salt. In a large saute pan, heat enough clarified butter to coat the pan over medium-high heat. Add half the thyme and continue to heat. Place 2 of the chicken breasts in the pan skin-side down and sear until golden brown, basting the flesh side with fat from the pan. Flip the breasts, brown on the other side and baste. Transfer the chicken to a baking sheet. Cook the other 2 breasts in the same manner, adding in the remaining thyme sprigs.
- Place the baking sheet with the seared breasts in the oven and bake until the chicken is firm to the touch, 7 to 8 minutes. Allow to rest before slicing.
- For the just: While the chicken is in the oven, pour off any excess fat in the saute pan and place over medium-high heat. Add enough clarified butter to coat the bottom of the pan and add the bacon lardons. Cook until crispy, and then remove to a plate and reserve. Remove any excess fat from the pan if necessary. Add in the onions and sweat until soft and translucent, about 5 minutes. Increase the heat, add in the mushrooms and season with salt. Cook the mushrooms until golden brown on all sides, 3 to 5 minutes.
- Add in the white wine and scrap up all the brown bits that have collected on the bottom of the pan. Cook down until the wine has reduced by half. Add in half of the chicken stock and let simmer about 5 minutes. Add in the remaining chicken stock and reduce until slightly thickened Remove from the heat and swirl in the butter. Taste and season if necessary.
- Serve the sliced chicken with the jus and garnish with chopped parsley.

'Grands-peres au sirop d'erable', or 'Grandfathers in maple syrup' are dessert dumplings that are cooked in maple syrup and are a French Canadian classic. Here is my grandmother's recipe. Dumplings can be served warm or cold.

- Combine flour, sugar, baking powder, and salt in a bowl. Rub in margarine until mixture is crumbly. Add milk and mix until a smooth dough forms.
- Combine maple syrup and water in a large saucepan over medium-high heat and bring to a boil. Scoop dough into dumplings using an ice cream scoop and drop gently into the boiling syrup. Reduce heat to low and simmer, keeping saucepan covered, until dumplings are cooked but not gooey and syrup has thickened, 10 to 15 minutes.

- Sift together flour, baking powder and soda, salt, and nutmeg into a bowl. Blend in butter with a pastry blender or your fingertips until mixture resembles coarse meal. Add buttermilk and stir with a fork just until dough is evenly moistened (do not overmix).
- Bring syrup and water to a boil in a 4-quart pot at least 10 inches wide. Drop 8 1/2-cup measures of dough into syrup, leaving spaces to allow dumplings to expand. Gently simmer over moderately low heat, covered, until tops of dumplings are dry to the touch, 15 to 20 minutes. Serve warm.
