Categories     condiment

Time 15m

Yield 12 servings and then some!

Number Of Ingredients 6

Ham cooking juices
1 stick butter
1/2 cup all-purpose flour, more or less to taste
4 to 6 cups whole milk
Salt and ground pepper
Biscuits, for serving

Steps:

  • Into the pan that the ham was cooked in (or use bacon grease if you don't have ham juices), add the butter. Once melted, add 1/4 cup of the flour and whisk to combine. Continue adding flour, whisking constantly, until a smooth paste is achieved. Cook the roux over a medium heat until you get a nice deep golden color, about 3 minutes. Add the milk, whisking the whole time to prevent lumps forming. Cook until thick and season to taste. Serve over biscuits!

Categories     Side Dish

Time 20m

Number Of Ingredients 3

2 Tablespoons Butter
2 Tablespoons Flour
2 Cups Ham Broth (store-bought broth or ham drippings)

Steps:

  • Roast ham on a roasting rack in the oven. My 9 lb ham took about 3 hours at 325 degrees.
  • Drain drippings and broth from the roasting rack.
  • Pour broth in a measuring up. If you don't have 2 cups of broth add water, store bought broth, milk or cream to have two total cups of liquid.
  • Melt two tablespoons of butter in a skillet on low to medium-low heat. Be careful to not burn the butter.
  • Add two tablespoons of flour to the butter. Whisk continuely for two minutes to smooth out any flour lumps.
  • Flour and butter mixture should be slighly golden and smooth.
  • Slowly pour in a little broth at a time. Whisk well then add more broth.
  • *instead of using 2 cups of ham broth, use 1/2 cup ham broth with 1.5 cups milk, cream or coffee.
  • Whisk and simmer gravy until reduced to your perfered thickness.

GRAM'S HAM GRAVY

Gram's Ham Gravy image

This recipe I got from my Grammy. My family loved her ham gravy. My family thinks this taste great. As noted below my Grammy said to remove any lumps that might form while making this gravy. My Grammy always called the lumps "Lumps Of Love".

HAM WITH RED EYE GRAVY

Ham with Red Eye Gravy image

The way the bitter coffee marries with the sweet, smoky fat is far from unpleasant, and infinitely better than simply pouring the pan drippings over your food.

GRAM'S HAM LOAF

Gram's Ham Loaf image

Famous Western Pennsylvania Ham Loaf. Perfect way to use up left over smoked ham after Christmas or Easter. Be sure to serve it with a generous amount of sauce. We use a hand-held meat grinder that belonged to my husband's great-grandmother - doesn't take long and is somewhat nostalgic.

RAISIN GRAVY FOR HAM

Raisin Gravy for Ham image

I adopted this recipe from the Recipezaar account. The original poster noted that it is really sweet and good on baked ham. I prepared it for my Easter ham and found it to be sweet with a slight tang from the mustard. I used a powerful, dry, ground mustard and liked the contrast of the bite with the sweetness of the other ingredients.

HAM GRAVY; SIMPLE AND DELICIOUS

Ham Gravy; Simple and Delicious image

I whipped this gravy up because we had none. I don't recall ever having nor hearing of ham gravy before, but it was so good I have to share. The ham I used was a 9lb bone-in, fully cooked, hickory smoked, glazed and spiral cut, it also came with a brown sugar packet for a second glazing. After I covered the ham with foil and put it in the oven for an hour (as the directions directed), I spooned out some drippings BEFORE adding the second glaze and returning the ham to the oven for the final 30 minutes of warming up.

MAKE-AHEAD GRAVY

Make-Ahead Gravy image

You need gravy on Thanksgiving to aid the turkey, moisten the potatoes, douse the stuffing. But traditionally it's made at the last minute, after the turkey has been removed from the roasting pan. Here's a secret: There's no need to make gravy right before serving. You can make it up to five days ahead. Then, as you reheat it, whisk in the turkey pan drippings for extra flavor. The result is every bit as good as last-minute gravy - and far less crazy-making.

Categories     easy, quick, sauces and gravies

Time 20m

Yield 5 to 6 cups

Number Of Ingredients 6

1 stick butter
1/2 cup chopped onion
1/2 cup flour
Salt and pepper
4 to 5 cups rich stock, warmed
Turkey drippings and giblets (optional)

Steps:

  • Melt butter in a medium saucepan over medium heat, then add onions. Cook, stirring occasionally, until onions are translucent, about 5 minutes. Sprinkle the flour on the onions, stirring constantly, and cook until flour is golden to brown. Adjust heat so mixture does not burn.
  • Gradually whisk in 4 cups stock until mixture thickens and is smooth. If it is too thick, add liquid. Cool, cover and chill.
  • When ready to serve, reheat mixture over low heat, stirring. Scrape bottom of turkey pan and add drippings or giblets to gravy. Taste and adjust seasoning, then serve.
