This Red White & Blue Ice Cream Cake is perfect for the Fourth of July! With blue vanilla cake on the bottom and white and red ice cream layers on top, it's a delicious and patriotic cake for the holidays!

1/4 cup (56g) salted butter, room temperature
1/2 cup (104g) sugar
1/4 cup (58g) sour cream
1 tsp vanilla extract
2 large egg whites
3/4 cups (98g) all purpose flour
1 1/4 tsp baking powder
1/4 cup (60ml) milk
1 tbsp (15ml) water
Blue gel icing color
Two 1.5 quart containers vanilla ice cream
Red gel icing color
2 cups (480ml) heavy whipping cream, cold
1 cup (115g) powdered sugar
1 1/2 tsp vanilla extract
Red gel icing color
Sprinkles

Steps:

  • Preheat oven to 350°F (176°C). Prepare an 8 inch cake pan with a circle of parchment paper in the bottom and grease the sides. 2
  • . To make the cake batter, beat the sugar and butter together until light in color and fluffy, 3-4 minutes. Don't skimp on the creaming. 3.
  • Add the sour cream and vanilla extract and mix until well incorporated. 4.
  • Add the egg whites and mix until well combined. 5.
  • Combine the flour and baking powder in a separate bowl, then add half of the dry ingredients to batter and mix until well combined. 6.
  • Add the milk and water and mix until well combined. 7.
  • Add the remaining dry ingredients and mix until well combined. 8.
  • Spread the cake batter evenly into the bottom of the prepared pan. 9.
  • Bake for 18-20 minutes, or until a toothpick inserted comes out with a few crumbs. Set the cake aside to cool. 10
  • When the cake has cooled, lined two 8 inch cake pans with clear wrap that covers the bottom and sides of the pans. 11
  • Remove the dome from the top of the blue cake layer, then place it in the bottom of one of the cake pans. 12
  • Soften the cartons of ice cream. I let mine sit out for about 15-20 minutes, then added all but about a quarter of the ice cream to a large bowl. Use a rubber spatula to stir it well until it all comes together to a consistency similar to soft serve ice cream. Add half of the ice cream to another bowl and set it in the freezer for a few minutes while you work with the other half. 13
  • Add the white vanilla ice cream to the top of the blue cake layer and spread into an even layer. Set the cake/ice cream in the freezer to freeze completely. 14
  • Remove the remaining half of the vanilla ice cream from the freezer and color it with red gel icing color. 15
  • Add the ice cream to the other prepared cake pan and spread into an even layer. Freeze until firm. 16
  • Once both ice cream layers are firm, remove the blue cake layer/white ice cream from its pan and place on a cardboard cake circle or serving platter. Keep in mind that it will need to fit in your freezer. 17
  • Remove the red layer from it's pan and set on top of the white ice cream layer. Place cake back in the freezer. 18
  • To make the whipped cream, add the heavy whipping cream, powdered sugar and vanilla extract to a large mixer bowl. Whip on high speed until stiff peaks form. 19
  • Frost the outside of the cake with the whipped cream, leaving about 1/3 of a cup or so leftover. 20
  • Place the cake in the freezer for about 10-15 minutes so it stays firm. Color the remaining whipped cream with the red gel icing color. 21
  • Press your sprinkles onto the sides of the cake, then pipe swirls of the red whipped cream around the top edge. Freeze cake until ready to serve.

2 cups granola without raisins
1/2 cup chopped walnuts
1/4 cup butter, melted
1 tablespoon honey
3 cups vanilla ice cream or low-fat vanilla frozen yogurt, softened if necessary
RASPBERRY SAUCE:
1-1/4 cups fresh raspberries
1 tablespoon water
1 tablespoon lemon juice
1 tablespoon honey
1/2 teaspoon cornstarch
BLUEBERRY SAUCE:
1-1/4 cups fresh blueberries
1 tablespoon water
1 tablespoon lemon juice
1 tablespoon honey
1/2 teaspoon cornstarch

Steps:

  • Preheat oven to 350°. Place granola and walnuts in a food processor; pulse until fine crumbs form. Add butter and honey; pulse just until blended. Press onto bottom and up sides of a greased 9-in. pie plate. Bake 10-12 minutes or until lightly browned. Cool completely on a wire rack., Spread ice cream into prepared crust. Freeze, covered, at least 2 hours., In a small saucepan, combine raspberry sauce ingredients. Bring to a boil. Reduce heat to medium; cook, uncovered, 5-7 minutes or until thickened, stirring occasionally. Meanwhile, in another saucepan, repeat with blueberry sauce ingredients., Press each sauce through a fine-mesh strainer into a bowl; discard seeds. Cool completely., Transfer sauces to separate heavy-duty resealable plastic bags; cut a small hole in corner of bag. Decorate pie as desired. Freeze, covered, until serving. Serve with any remaining raspberry and blueberry sauces.

Even though I don't live in the States anymore all the Americans in my community get together for the 4th of July, and this is what I always bring. It should be made in advance, you need lots of freezing time. Prep time includes freeze time.

1 pastry crust or 1 graham cracker crust, your choice
1 pint softened blueberry ice cream
2 cups sliced strawberries, divided
1 pint softened strawberry ice cream
2 cups blueberries, divided
1 cup sweetened whipped cream

Steps:

  • Spread the blueberry and cream ice cream in an even layer on the bottom of the piecrust.
  • Top with half of the sliced strawberries.
  • Freeze for one hour.
  • Top with the strawberry ice cream and smooth to form an even layer.
  • Top with half of the blueberries.
  • Freeze for two hours.
  • Top with the whipped cream and the remaining berries.
  • Serve immediately, or cover and freeze for up to 48 hours before serving.
  • Let the pie sit in the refrigerator for 30 minutes before cutting and serving.

for the red part this could make 2-3 pies depending on ur measurements]. use a lil red food coloring to make it red. then add just enough red strawberries sliced to put in it.
then for french vanilla for middle sliced banansa
then for the blue use just enough blue food coloring to make it blue
slice bblue berries[prob 1 pint]
u will probly need about 3 pints of whipped ice cream vanilla and 1 french vailla for the middle
3 graham cracker pie crusts

  • 1. MAKE THE RED LAYER FIRST. PLACE IN FREEZER TO FREEZE. USING RED FOOD COLORING [MELT JUST ENOUGH TO ADD INGREDIENTS] ADD SLICED STRAWBERRIES . AFTER PIES R FROZEN TAKE OUT AND DO THE WHITE PART
  • 2. SOFTEN FRENCH VANILLA ICE CREAM JUST ENOUGH TO ADD INGREDIENTS. U MAY USE BANANA FLAVORING INSTEAD OF BANANS IF U WISH. THEN POUR ONTO RED LAYER AND PLACE BACK INTO FREEZER TIL FROZEN
  • 3. THEN SOFTEN VANILLA ICE CREAM JUST ENOUGH TO ADD INGREDIENTS. ADD ENOUGH BLUE FOOD COLORING TO MAKE IT BLUE. THEN ADD BLUE BERRIES BLEND WELL POUR INTO PIE CRUST ON TOP THE WHITE PART OF PIE.
  • 4. PLACE PIE INTO FREEZER UNTIL READY TO SERVE. HAPPY 4TH OF JULY EVERY ONE!!!!!!!

  • In a mixing bowl combine the graham crackers crumbs and brown sugar, mix with a fork until the brown sugar is incorporated into the graham crumbs. Pour the melted butter over the crumbs, mixing until combined. Add in the red, white and blue sprinkles, stirring again.
  • Press this mixture evenly into a 9 or 10 inch pie pan. Use the bottom of a measuring cup to pack the crust down. Place the crust in the freezer for 10 minutes. Meanwhile, remove the container of American Fireworks Ice Cream from the freezer and place on the counter to thaw for 10 minutes.
  • Once the ice cream is thawed, transfer all the ice cream into the pie crust. Use the back of a spoon to evenly spread the ice cream into the crust. Return to the freezer for 20 minutes. Place a metal or glass bowl and beaters in the freezer.
  • Remove the bowl from the freezer. Add the heavy cream and powdered sugar, beat with an electric mixer for 4-7 minutes, or until stiff peaks form. Divide the whipped cream into 3 bowls. One bowl will remain white. Add red gel food coloring to one bowl and blue gel food coloring to the third. Use the mixer to fully incorporate the color, rinsing the beaters when moving from one color to the next.
