"16 BEAN" PASTA E FAGIOLI

1 (1-pound) bag Goya 16 Bean Soup Mix
2 tablespoons good olive oil, plus extra for serving
6 ounces pancetta, 1/4-inch-diced
1 large onion, chopped
1 tablespoon minced garlic (3 cloves)
1/2 teaspoon crushed red pepper flakes
1 (28-ounce) can crushed tomatoes, preferably San Marzano
1 cup dry red wine
4 to 6 cups good chicken stock, preferably homemade
Kosher salt and freshly ground black pepper
1 cup miniature pasta, such as ditalini or tubettini
1/2 cup freshly grated Italian Parmesan cheese, plus extra for serving
1 tablespoon good red wine vinegar
Julienned fresh basil leaves, for serving

Steps:

  • The day before you plan to make the soup, place the bean mix in a large bowl, add cold water to cover by 2 inches and refrigerate overnight. The next day, drain the beans, rinse under cold running water and drain again. Place the beans in a large pot with 8 cups of cold water. Bring to a boil, lower the heat and simmer for 1 hour. Stir occasionally and skim off any foam that rises to the top. The beans should be very tender and the skin will peel away when you blow on a bean.
  • Meanwhile, heat the oil in a medium (10-inch) stockpot or Dutch oven over medium heat. Add the pancetta and onion and saute over medium to medium-high heat for 12 to 18 minutes, until browned. Add the garlic and red pepper flakes and saute for one minute. Add the tomatoes, wine, 4 cups of the chicken stock, 1 tablespoon salt and 1 teaspoon black pepper and turn off the heat.
  • Drain the beans and add two-thirds of them to the soup. Pass the remaining beans through a food mill, discarding the skins. Stir the bean puree and the pasta into the soup, bring to a boil, lower the heat and simmer for 20 to 30 minutes, stirring occasionally, until the pasta is tender. Add up to 2 more cups chicken stock if the soup is too thick. Stir in the Parmesan and the vinegar. Ladle the soup into large shallow bowls and add a swirl of olive oil, a sprinkle of Parmesan and some basil. Serve hot with extra Parmesan on the side.

1/4 cup extra-virgin olive oil
2 cloves garlic, smashed
1 onion, chopped
2 carrots, chopped
2 stalks celery, chopped
1/4 cup tomato paste
1 tablespoon minced fresh rosemary
1 15-ounce can chickpeas, undrained
1/2 cup grated parmesan cheese, plus more for topping, plus 1 small piece rind
Kosher salt and freshly ground pepper
3/4 cup small pasta (such as elbows or ditalini)
1 head escarole, chopped

Steps:

  • Heat 3 tablespoons olive oil in a large pot over medium-high heat. Add the garlic and cook, stirring, until golden, about 2 minutes. Add the onion, carrots and celery and cook, stirring occasionally, until the vegetables start softening, 12 to 15 minutes. Stir in the tomato paste and rosemary and cook until the tomato paste darkens in color, about 3 minutes.
  • Stir in 6 cups water, the chickpeas with their liquid, the parmesan rind, 1 teaspoon salt and a few grinds of pepper. Bring to a boil, then reduce the heat and simmer until the vegetables are soft, about 10 minutes. Remove 1 cup of the soup (chickpeas, vegetables and broth) and puree in a blender, then return to the pot. (Alternatively, partially puree the soup in the pot with an immersion blender.)
  • Stir the pasta and escarole into the soup. Cook until the pasta is tender and the escarole is wilted, about 6 minutes. Remove from the heat and stir in the grated parmesan. Top each serving with the remaining 1 tablespoon olive oil and more parmesan.

1/2 lb dried great northern beans
8 slices bacon
1 medium onion, chopped
1 medium carrot, thinly sliced
2 garlic cloves, chopped
1 (14 1/2 ounce) can whole canned tomatoes
1 chicken bouillon cube
1 1/2 teaspoons italian seasoning
1 teaspoon salt
1/4 teaspoon ground pepper
1 cup water
1 cup pennette pasta
grated parmesan cheese
sour cream

Steps:

  • Sort and rinse beans.
  • Boil beans in 8 cups of water for 2 minutes (do not drain).
  • Set beans aside and soak for 1 hour.
  • In a skillet, cook bacon until crisp reserve 1 tablespoon of drippings in pan and remove bacon to drain on paper towel.
  • In pan with drippings cook onion, carrot and garlic until tender.
  • Stir in tomatoes, bouillon cube, Italian seasoning, salt and pepper.
  • Add tomatoe mixture to beans.
  • Bring to boil, reduce heat, cover and simmer until beans are tender, about 1-1 1/2 hours.
  • Add 1 cup of water and bring back to boil.
  • Add pasta and bacon.
  • Cook 8-10 minutes more or until pasta is al dente.
  • Serve with grated parmesan cheese and a dolop of sour cream.

1 pound penne rigate or whole-wheat penne
1/4 pound pancetta, 3 to 4 slices thick cut like bacon
1 tablespoon extra-virgin olive oil
2 ribs celery from the heart with leafy tops, chopped
1 carrot, peeled and grated
1 onion, peeled and chopped
2 to 3 large cloves garlic, finely chopped
2 sprigs fresh rosemary, leaves finely chopped
3 to 4 sprigs fresh thyme, leaves finely chopped
1 fresh bay leaf
Freshly ground black pepper
1 (15-ounce) can small white beans "Roman" beans, such as Goya brand or, cannellini beans, rinsed and drained
1/2 cup dry white wine
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
Nutmeg, to taste
1 1/2 cups grated Romano

Steps:

  • Pasta e Fagioli is a dish I keep revisiting trying to play around with methods for it so I can keep making it new to me. Here, the classic soup turns into a baked pasta dish. Loosen your belts and open wide. Have your blankies ready for a family nap.
  • Bring a large pot of water to a boil, salt it, cook pasta to just shy of al dente.
  • Chop pancetta into 1/4-inch dice.
  • While pasta cooks, heat a skillet with olive oil over medium to medium-high heat. Add pancetta, cook 2 to 3 minutes then add celery, carrot, onions, garlic, rosemary, thyme and bay leaf to the skillet, season with salt and pepper. Saute the vegetables until tender, 6 to 7 minutes. Add beans and heat them through. Stir in 1/2 cup wine, simmer 30 seconds more and turn off heat. Remove bay leaf.
  • While vegetables cook, place a small sauce pot over medium heat, add butter, melt butter then whisk in flour and cook 1 minute then whisk in milk. Season sauce with salt, pepper and nutmeg and reduce 4 to 5 minutes, stir in half the grated cheese, turn off heat and adjust seasoning.
  • While sauce cooks, place a rack in the middle of the oven and preheat broiler to high.
  • Drain pasta and return to the pot, toss with white bean mixture and sauce, stir to coat, transfer to a casserole dish, top with remaining cheese and place in oven to brown, 5 minutes.

2 tbsp extra virgin olive oil, plus extra for drizzling
1 onion, finely chopped
2 celery sticks, finely chopped
2 carrots, peeled and finely chopped
2 garlic cloves, crushed
2 rosemary sprigs
2 bay leaves
1¼ litres vegetable stock
400g can chopped tomatoes
2 x 400g cans Napolina cannellini beans, drained and rinsed
200g small pasta shapes (ditalini or cavatelli work well)
200g cavolo nero, stalks removed, roughly torn
grated parmesan or vegetarian alternative, to serve

Steps:

  • Heat the oil in a large saucepan over a medium heat and fry the onion, celery and carrots for 10 mins until lightly golden. Add the garlic, rosemary and bay and fry for a minute more.
  • Add the stock and chopped tomatoes and bring to a simmer. Tip in the Napolina cannellini beans, bring back to a simmer and cook for 5 mins. Roughly mash with a potato masher to break up some of the beans (or pulse once with a hand blender) - this will thicken the soup slightly. Season well.
  • Add the pasta and cavolo nero, then simmer for 4-6 mins more until the pasta and greens are tender. Taste for seasoning, then remove and discard the rosemary sprigs and bay. Serve the soup in warmed bowls with a drizzle more olive oil and a grating of parmesan.

200g dried borlotti or cannellini beans , soaked for 6-8 hours
2 onions , cut into 1cm chunks
2 medium carrots , cut into 1cm chunks
3 celery stalks, cut into 1cm chunks
2 tbsp extra virgin olive oil , plus extra to serve (optional)
4 garlic cloves , crushed
1 litre fresh vegetable stock
400g can plum tomatoes
2 tbsp brown rice miso
6 rosemary sprigs
4 bay leaves
150g ditaloni rigati or other small pasta shapes
200g cavolo nero , stalks finely chopped and leaves torn
30g vegan parmesan , grated, to serve (optional)

Steps:

  • Drain the beans and bring to the boil in a pan of salted water. Cook for 10 mins, drain, rinse and put in a slow cooker with the onions, carrots and celery.
  • Stir in the olive oil, garlic, stock, tomatoes, half a can of water and the miso. Tie the herbs together with kitchen string and add these as well. Season. Cover and cook on low for 6-8 hrs, until the beans are cooked through and all of the veg is really tender.
  • Remove and discard the herbs and stir in the pasta. Cover and cook on high for another 30 mins. Add the cavolo nero stalks and leaves and cook for a final 30-40 mins, or until the pasta is cooked through and the greens are tender. Serve scattered with the cheese and drizzled with a little more olive oil, if you like.

  • Bring to a boil and boil for 10 minutes.
  • Reduce heat and simmer for 2 and 1/2 to 3 hours, or until beans are tender.
  • Add tomatoes and pasta, simmering for 10 minutes more.
