Yield Makes 6 to 8 servings

Number Of Ingredients 11

3 cups firmly packed unseasoned mashed sweet potatoes (about 3 pounds) (see headnote)
1/2 cup firmly packed light brown sugar
1/2 cup fresh orange juice
4 tablespoons (1/2 stick) butter, melted
2 tablespoons fresh lemon juice
2 teaspoons finely grated orange zest
1/2 teaspoon freshly grated nutmeg or 1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste

Steps:

  • 1. Preheat the oven to 350° F. Butter a 2-quart casserole and set aside.
  • 2. Combine all ingredients in a large mixing bowl, beating until smooth. Taste for salt and pepper and adjust as needed.
  • 3. Scoop into the casserole, spreading to the edge and roughing the surface. Bake uncovered on the middle oven shelf for about 45 minutes or until tipped with brown.
  • 4. Serve hot as an accompaniment to roast turkey, chicken, or pork. Good, too, with pork chops.

Once you taste this, you won't ever go back to the marshmallow-topped variety! I have peeled and cooked in the microwave, and also boiled the sweet potatoes. They taste the same no matter how you cook them. So, use the technique that works best for you!

5 sweet potatoes
¼ teaspoon salt
¼ cup butter
2 eggs
1 teaspoon vanilla extract
½ teaspoon ground cinnamon
½ cup white sugar
2 tablespoons heavy cream
¼ cup butter, softened
3 tablespoons all-purpose flour
¾ cup packed light brown sugar
½ cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • Bake sweet potatoes 35 minutes in the preheated oven, or until they begin to soften. Cool slightly, peel, and mash.
  • In a large bowl, mix the mashed sweet potatoes, salt, 1/4 cup butter, eggs, vanilla extract, cinnamon, sugar, and heavy cream. Transfer to the prepared baking dish.
  • In a medium bowl, combine 1/4 cup butter, flour, brown sugar, and chopped pecans. Mix with a pastry blender or your fingers to the consistency of course meal. Sprinkle over the sweet potato mixture.
  • Bake 30 minutes in the preheated oven, until topping is crisp and lightly browned.

Maple syrup pumps up the flavor of puréed sweet potatoes and provides a sweet glaze for extra-peppery candied pecans in this classic Thanksgiving side.

Olive oil (for pan)
5 1/2 pounds sweet potatoes, peeled, cut into 1 1/2" pieces
2 teaspoons kosher salt, divided, plus more
1 1/4 cups pure maple syrup, divided
2 cups pecan halves (about 7 ounces)
1 1/2 teaspoons freshly ground black pepper, divided

Steps:

  • Preheat oven to 350°F. Oil a 3-qt. baking dish. Cook potatoes in a large pot of boiling salted water until very tender, about 12 minutes. Drain; let sit in colander 15 minutes.
  • Meanwhile, heat 1/2 cup syrup in a large skillet over medium-high. Add pecans, 3/4 tsp. salt, and 1 tsp. pepper and cook, stirring constantly, until syrup has evaporated and pecans are glazed, about 5 minutes. Transfer to a parchment-lined rimmed baking sheet and let cool.
  • Purée potatoes, 1 1/2 cups water, and remaining 3/4 cup syrup, 1 1/4 tsp. salt, and 1/2 tsp. pepper in a food processor until smooth. Transfer potato mixture to prepared baking dish.
  • Coarsely chop pecans and sprinkle evenly over potato mixture.
  • Bake casserole until top is lightly browned, about 40 minutes. Let sit 15 minutes before serving.
  • Do Ahead
  • Casserole can be assembled, without topping, 2 days ahead; cover and chill. Candied pecans can be made 2 days ahead; store in an airtight container at room temperature.

4 medium sweet potatoes or 2 15-ounce cans sweet potatoes, packed without liquid or in water, drained if packed in water
Cooking spray
1/4 cup fresh orange juice
2 tablespoons chopped walnuts
1/4 teaspoon ground nutmeg
1/4 teaspoon brandy flavoring

Steps:

  • If using fresh sweet potatoes, pour enough water into a stockpot to cover them. Bring the water to a boil over high heat. Add the sweet potatoes. Return to a boil. Boil for 25 to 30 minutes, or until tender. Using tongs or a slotted spoon, transfer the sweet potatoes to a large bowl of cold water. Soak until cool enough to handle.
  • Put the sweet potatoes (fresh or canned) in a medium bowl. Mash the sweet potatoes.
  • Meanwhile, preheat the oven to 375°F. Lightly spray a 1-quart glass casserole dish with cooking spray. Set aside.
  • Stir the remaining ingredients into the sweet potatoes. Spoon into the casserole dish, gently smoothing the top.
  • Bake for 25 minutes, or until heated through.

1 (40 ounce) can cut sweet potatoes, undrained
1 cup white sugar
2 eggs
⅓ cup butter
⅓ cup milk
1 teaspoon vanilla extract
1 cup packed brown sugar
1 cup chopped pecans
⅓ cup all-purpose flour
⅓ cup butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 2 quart baking dish.
  • Place the sweet potatoes and their liquid in a medium saucepan, and bring to a boil. Cook 15 minutes, or until tender. Remove from heat, drain, and mash.
  • In a medium bowl, mix the mashed sweet potatoes, white sugar, eggs, 1/3 cup butter, milk, and vanilla extract. Spread evenly into the prepared baking dish.
  • In a separate bowl, mix the brown sugar, chopped pecans, flour, and 1/3 cup melted butter. Sprinkle over the sweet potato mixture.
  • Bake 35 minutes in the preheated oven, or until a knife inserted near the center comes out clean.
