This is my step-mom's syrup recipe, and everyone says it's better than Hershey's! Great on ice cream, in chocolate milk, or drizzled on warm brownies.

1 ½ cups water
1 ½ cups white sugar
1 cup cocoa powder
1 dash salt
1 teaspoon vanilla extract

Steps:

  • Combine the water, sugar, cocoa powder, and salt together in a saucepan over low heat; whisk constantly until the mixture thickens and begins to simmer. Remove from heat and stir the vanilla into the sauce. Serve warm or cover and refrigerate until serving.

1 cup dark cocoa
1 1/2 cups sugar
1/8 teaspoon sea salt
1 1/2 cups cold water
2 tablespoons corn syrup
2 tablespoons creamery butter
1/2 teaspoon natural gourmet non-artificial-extract vanilla

Steps:

  • Stir cocoa into cold water.
  • Add in sugar, seasalt and corn syrup.
  • Bring to a boil over medium-low heat, stirring rapidly. Sauce will thicken after 3 - 4 minutes.
  • Remove from heat and stir in creamery butter.
  • Let cool for a couple minutes, then stir in natural gourmet vanilla.
  • Cool completely stirring occasionally.
  • Refrigerate in glass bottle. Shake well before serving. Awesome over ice cream and as a replacement syrup for chocolate milk.

This chocolate syrup is delicious over ice cream or as a base for an intense hot chocolate (heat 1 cup milk with 1/3 cup syrup).

1 cup water
1/2 cup sugar
2/3 cup unsweetened cocoa powder, preferably Dutch-process
1/4 teaspoon salt
1 teaspoon vanilla

Steps:

  • Bring water and sugar to a boil, whisking until sugar is dissolved. Whisk in cocoa and salt and simmer, whisking, until slightly thickened, about 3 minutes. Remove from heat and add vanilla, then cool (syrup will continue to thicken as it cools).

CHOCOLATE MAPLE SYRUP

1 1/2 cups pure maple syrup
3 tablespoons unsweetened cocoa powder, or to taste
1/2 stick (1/4 cup) unsalted butter, cut into pieces

Steps:

  • In a small heavy saucepan heat maple syrup over moderate heat until hot. Whisk in cocoa powder, butter, and a pinch of salt and simmer, whisking, 1 minute.
  • Serve syrup warm. The syrup keeps, covered and chilled, 1 week.

  • This must be stored in the fridge.

A straightforward ganache-chocolate and cream - with a two-to-one ratio of cream to chocolate. Some sugar, in the form of corn syrup, is added, primarily for consistency. The chocolate sauce is only as good as the chocolate you use, so use the best you can.

8 ounces semisweet chocolate, such as Valrhona Equatoriale, finely chopped
1 cup heavy cream
1/2 cup light corn syrup

Steps:

  • Place the chocolate in a metal bowl.
  • Combine the cream and corn syrup in a small heavy nonreactive saucepan and bring to a simmer. Pour the liquid over the chocolate and allow it to sit for 3 to 4 minutes, or until the chocolate has melted. Whisk to combine. Allow the sauce to cool slightly, then pour into a bowl or other container. (Stored in the refrigerator, tightly covered, the sauce will keep for up to 2 weeks.)
  • To serve, warm the sauce gently in the top of a double boiler or in the microwave.
