Mashed Potato Soup is a great way to use up leftover mashed potatoes. This quick cooking soup comes together in 30 minutes with just 6 ingredients. Even better, your family will never know they are eating the leftover mashed potatoes!

2 tablespoons Salted Butter
½ small Onion (diced)
1 tablespoon All-purpose flour
2-½ cups 2% milk
3 cups Leftover mashed potatoes
salt and pepper to taste
1 teaspoon Dried parsley
½ Shredded Cheddar Cheese
4 slices Cooked Bacon (diced)

Steps:

  • In a large stock pot melt butter on medium heat.
  • Then add in onion. Caramelize until golden brown mixing periodically, for 10 minutes.
  • Once the onions are golden in color add the all-purpose flour and mix well until the onions have been coated with the flour mixture.
  • Pour the milk into the pot and stir for one minute.
  • Then add in the mashed potatoes. Mixing until all the potatoes have broken up. Cook on medium-low heat for 10-15 minutes or until potatoes are smooth. Taste the soup and add salt and black pepper if desired.
  • Ladle into bowls and top with dried parsley, shredded cheddar cheese, crumbled bacon, and cracked black pepper. Enjoy!

One Thanksgiving, I asked my son-in-law, who was visiting with our daughter and her family, to make the mashed potatoes. I neglected to say how much, and he ending up paring and cooking an entire 10-pound bag of Idaho russets. After they left, we had about six cups of leftover mashed potatoes I like potato soup, so I thought maybe I could turn the leftover mashed potatoes into soup.

¾ pound bacon
1 medium onion, diced
6 cups leftover mashed potatoes
1 (32 ounce) container chicken broth
2 pints half-and-half
2 (15.25 ounce) cans whole kernel corn, drained
2 tablespoons salt-free garlic and herb seasoning blend (such as Mrs. Dash®)
1 tablespoon green hot pepper sauce
1 tablespoon ground paprika
1 tablespoon Worcestershire sauce
2 teaspoons ground black pepper
1 teaspoon red hot pepper sauce

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly thoroughly cooked but not crisp, about 8 minutes. Drain bacon slices on paper towels. Cut strips in half lengthwise, then chop into small pieces.
  • Leave 1 tablespoon bacon drippings in the skillet and reserve another tablespoon separately.
  • Saute onion in the bacon drippings over medium heat just until pieces start to turn brown, 5 to 7 minutes.
  • Meanwhile, combine leftover mashed potatoes, chicken broth, and half-and-half in a 6-quart pot over medium-high heat; whisk until smooth. Mix in reserved bacon drippings plus corn, garlic and herb seasoning blend, green hot pepper sauce, paprika, Worcestershire sauce, pepper, and red hot pepper sauce. Add sauteed onion and chopped bacon; bring to a boil. Reduce heat and simmer for 30 minutes.

This is an easy take on mashed potatoes. The potatoes pressure cook away while you focus on other things. This is a basic but tasty recipe; feel free to update with your own ingredients. You can peel the skins if you prefer. Once you mash it up, you can return insert back to the pot, reattach the lid, and place it on the Keep Warm function until you are ready to serve.

1 ¼ pounds Yukon Gold potatoes
1 ½ cups water
2 cubes chicken bouillon
½ cup sour cream
½ cup unsalted butter, cubed
2 tablespoons milk

Steps:

  • Cut potatoes into 1-inch cubes. Add to a multi-functional pressure cooker (such as Instant Pot®) with water and bouillon cubes. Select Saute function; set timer for 4 minutes on High.
  • Mix potatoes and water and break up the bouillon cubes. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 10 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 10 minutes. Release remaining pressure carefully using the quick-release method. Remove the pot and carefully drain off most of the liquid.
  • Add sour cream, butter, and milk. Gently mash with a potato masher to reach your desired consistency.

My aunt asks for this every year for Christmas. It is great to take to work for lunches, or for a quick snack or meal.

1 3/4 cups instant mashed potatoes
1 1/2 cups powdered milk
2 tablespoons instant chicken bouillon
2 teaspoons dried onion flakes
1 teaspoon dried parsley
1/4 teaspoon white pepper
1/4 teaspoon dried thyme
1/8 teaspoon turmeric

Steps:

  • Mix all ingredients together.
  • Place items in desired container (jar or bag).
  • Attach tag with preparation directions.
  • Stir 1/2 cup of prepared mix into 1 cup boiling water.
  • ****As a new variation for soup at home, I have been making very thin instant mashed potatoes, using chicken broth and milk for the liquid, then adding an assortment of seasonings (depends on what is on hand) like turmeric, parsley, seasoning blends, or even some flavored sea salts.
  • I also like to change it up with cheese, bacon, chives, even some sour cream on top for a loaded baked potato feel.
