HEAVENLY MEATLOAF WITH BLUE CHEESE, MUSHROOMS, AND SPINACH
A slightly different recipe using a combination of ingredients, this meatloaf tastes absolutely divine! Instead of the usual ketchup, tomato paste, and brown sugar, this meatloaf is more of an 'upscale' version of the traditional. Best served with mashed potatoes and asparagus. This is my own personal creation! I substitute ground deer meat occasionally instead of beef, only because I have a freezer full, and it's organic!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
- Mix eggs, spinach, mushrooms, bread crumbs, onion, milk, blue cheese, Worcestershire sauce, garlic, cayenne pepper, oregano, basil, salt, and black pepper together in a large bowl. Add ground beef and mix thoroughly with your hands; pack into prepared loaf pan.
- Bake in the preheated oven until no longer pink in the center, 45 to 60 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

GORGONZOLA MEATLOAF
Steps:
- Preheat oven to 350 degrees F. In large bowl, mix all ingredients together.
- In 2 9x5-inch loaf pans, put mixture in and smooth out.
- Bake (on middle rack of oven) for 1 hour or until knife comes out clean after being inserted.

VEAL MEATLOAF

- Preheat oven to 400 degrees. Saute onions and mushrooms until wilted and onions are tender. Let cool completely. Mix all ingredients together, adding bread crumbs a little at a time until desired consistency. Generously oil 1 meatloaf tray. Pack mix into tray tightly to keep holes from being created in the loaf. Cover the tray with aluminum foil. Transfer the meatloaf to a pan with high sides and filled 1/4 with water. Bake for 1 to 2 hours, checking for doneness after 1 hour. Let stand at room temperature before removing from the pan. Cool then cover.;
GORGONZOLA FILLED MEATBALLS, BAY AND ONION CREAMY TOMATO GRAVY

- Preheat oven to 400 degrees F.
- Place meat in a mixing bowl and season with salt, pepper, add in garlic, eggs, cheese, bread crumbs and sage. Mix meat, roll into 8 large balls and arrange in a baking dish. Coat balls with 2 tablespoons extra-virgin olive oil. Using the end of a wooden spoon, make an indentation half way into each ball and fill the cavity with some Gorgonzola. Bake until golden and cooked through, 15 to 20 minutes.
- Heat 1 tablespoon extra-virgin olive oil and butter in a sauce pot over medium heat, add bay and onions and season with salt and pepper. Add chicken stock and tomatoes and heat through, stir in cream, reduce heat to medium-low and simmer to thicken slightly 8 to 10 minutes.
- Ladle sauce into shallow bowls and top with big stuffed meatballs and potatoes alongside, if desired.
PEAR GORGONZOLA MEATLOAF
A slightly sweet, complemented by a tangy, delicious twist on a classic favorite. Yummy, simple, comforting and makes great leftovers!! Plus, it's healthy, too. Great served with a side of cauliflower "mashed potatoes."

My family loves blue cheese - my husband will even eat it right from the container! One night, I was looking for a new way to use ground beef and this is what I came up with. It's now our favorite winter comfort food. We like to serve it with Parmesan Cous Cous.

Steps:
- Combine 1 cup bread crumbs and 1/4 cup crumbled blue cheese.
- Add ground beef, egg, onion, salt and pepper.
- Blend thoroughly.
- Shape into a round loaf.
- With a spoon, make a crater-like depression in top of loaf.
- Fill depression with Blue Cheese Dressing.
- If desired, sprinkle more crumbled blue cheese on top.
- Bake at 350 for 1 hour.

Steps:
- Garlic Oil:.
- Preheat oven to 450°F.
- Wrap garlic head in foil and roast in middle of oven until tender, about 45 minutes.
- Carefully unwrap garlic and cool.
- Horizontally halve garlic head and arrange, cut sides down, in a small bowl with oil.
- Let mixture stand, covered and chilled, 2 to 3 days to infuse oil with garlic flavor.
- Preheat broiler.
- In a saucepan boil cream, stirring occasionally, until reduced to about 1/2 cup.
- Add Gorgonzola and cook over low heat, stirring constantly, until cheese melts and sauce is smooth.
- Remove pan from heat and keep sauce warm, covered.
- Horizontally halve baguette and arrange, cut sides up, on a baking sheet.
- Broil bread 2 to 3 inches from heat until golden. (If crust is soft, you may broil crust side of baguette as well.)
- Brush cut sides of baguette with garlic oil and season with salt.
- Cut baguette crosswise into 1-inch-thick slices.
- Pour warm Gorgonzola sauce onto center of a large plate and arrange roasted garlic bread slices around sauce.

- Place meat in a bowl with eggs breadcrumbs and dry seasoning. With some butter in a pan lightly cook garlic celery and onion for a couple minutes. Let cool and transfer to bowl. Add buffalo hot sauce and mix thoroughly. Lightly grease or spray or brush with melted butter or canola each of the individual silicon insert. Fill half the insert with meat then add a layer of crumbled blue cheese then fill with remaining meat. Pace in over and bake for about 35 minutes or until internal temperature reaches 160F.
- For sauce, melt butter, add ketchup and hot sauce and stir until fully melted. Remove from heat and add vinegar. Remove meat loaves from oven baste with sauce, add chives and extra blue cheese crumble. Serve on a robust leaf lettuce or... a hot dog bun
- Other ideas: classic beef meatloaf with tangy BBQ sauce or a hot and honey pork meatloaf with chives and sesame seeds.
