1/4 cup peanut oil
1 tablespoon minced ginger
1 tablespoon minced garlic
1 tablespoon chopped cilantro leaves
1 tablespoon chopped green onion
1 teaspoon crushed red pepper
1 pound boneless, skinless chicken breasts
Salt
Pepper
Peanut oil
1 red onion, sliced
1/4 to 1/2 cup barbecue sauce
Eight 8-inch flour tortillas
1 cup shredded fontina cheese
1 cup shredded mozzarella cheese
3 tablespoons butter
Mexican Cream, recipe follows
Tomato Salsa, recipe follows
1 lime, juiced
1 1/2 cups sour cream
Salt
Pepper
5 Roma tomatoes
2 chipotle chiles, reconstituted
1/2 cup chopped basil leaves
1/4 cup minced garlic
1/2 cup fresh lime juice
1/4 cup balsamic vinegar
2 teaspoons sugar
2 teaspoons salt
1/2 teaspoon freshly cracked black pepper
1 cup olive oil

Steps:

  • Combine the peanut oil, ginger, garlic, cilantro, green onion, and red pepper. Add the chicken and marinate in the refrigerator overnight. Remove the chicken from the marinade and season with salt and pepper.
  • Preheat the oven to 350 degrees F.
  • Heat a large ovenproof saute pan over medium-high heat. When the pan is hot, add enough peanut oil to coat the bottom of the pan. Add the chicken and sear on both sides. Place the pan in the oven and roast until cooked through, about 10 to 15 minutes. Remove from the oven, cool slightly, and dice into 1/2-inch pieces.
  • Preheat a grill or grill pan. Drizzle the onion slices with oil and place on the grill. Cook until the onions are soft, about 4 minutes per side. Remove from the grill.
  • Place the chicken into a bowl and add barbecue sauce, to taste. Place 4 tortillas on a flat surface. In a separate bowl, mix the fontina and mozzarella cheese. Place some of the cheese mixture on each tortilla. Top with some of the chicken and grilled onions. Top each with another tortilla.
  • Heat a large saute pan over medium-high heat. Add 1 tablespoon of the butter and cook until it is foamy. Add 1 quesadilla and cook until golden brown on both sides, about 3 minutes per side. Repeat with the remaining quesadillas, adding more butter as necessary.
  • Cut each quesadilla into 6 pieces. Top with Mexican Cream and Tomato Salsa.
  • Combine all of the ingredients. Refrigerate until needed.
  • Over a hot grill, roast the tomatoes until blackened. Transfer to a bowl and add the chipotles. Cover and allow to cool for 15 minutes. Add the basil, garlic and lime juice and marinate for 10 minutes. Transfer to a blender or food processor and pulse until chunky. Transfer to a bowl and add the vinegar, sugar, salt and pepper. Slowly whisk in 1 cup of olive oil. Reserve.

LITTLE LUIS CHICKEN QUESADILLAS

1 tablespoon olive oil
1 tablespoon sofrito (recommended my blend; alternatively Goya Sofrito)
3 boneless, skinless chicken breasts, diced
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
1/2 cup white wine
1/2 cup chicken broth (recommended: organic)
1/2 packet Latin seasoning mix
1 large onion, sliced
8 large flour tortillas
Grated Cheddar
Grated pepper Jack cheese
Sour cream and salsa, for serving

Steps:

  • Preheat a large Dutch oven on medium heat. Add the olive oil and sofrito and stir-fry until golden. Add the diced chicken and stir-fry until partially cooked; the meat should be a bit pink. Add the salt, pepper, garlic powder, white wine and chicken broth. Mix well, cover and allow to braise for about 10 minutes.
  • Remove the cover, add the Latin seasoning and the sliced onion; mix well. Cover for 5 more minutes to soften the onion. Remove the cover and raise the heat to high to reduce the cooking liquid; approximately 5 minutes. Remove the pot from the heat and set aside.
  • Preheat a large skillet over medium-high heat. Take 1 flour tortilla and fill with the chicken mixture and some of the grated cheeses. Fold in half and place on the skillet adding a heavy object on top such as a cast iron skillet of smaller size. This will help sear the outer tortilla while quickly melting the cheese on the inside. Remove the skillet, flip over and sear the other side. Continue cooking the quesadillas this way until all have been cooked.
  • With a pizza cutter slice into wedges and serve with a side of sour cream and store bought salsa.

3 tablespoons canola oil
1 pound boneless skinless chicken breast, julienned
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 dashes cayenne pepper
1 1/2 tablespoons cumin
1 clove garlic, minced
1 red bell pepper, julienned
1 green bell pepper, julienned
1 small red onion, thinly sliced
1 ounce tequila
8 ounces Colby Jack cheese, Monterey Jack, or Cheddar, shredded
2 tablespoons unsalted butter
2 tablespoons finely chopped cilantro leaves
2 tablespoons sliced scallions
1 1/2 cups soy flour
1/4 cup sugar substitute (recommended: Splenda)
1/2 teaspoon salt
3 eggs
3/4 cup heavy cream
1/3 cup club soda
Non-stick vegetable oil cooking spray

Steps:

  • Preheat oven to 375 degrees F.
  • Make the soy flour flat bread: In a medium bowl, whisk together the soy flour, sugar substitute, salt, eggs, heavy cream, and club soda to make a smooth, thick, pancake-like batter. Spray pizza pans generously with the vegetable oil spray. Using a rubber spatula, spread the batter as thinly and evenly as possible over the 2 pans. Bake for about 12 to 15 minutes, or until lightly golden brown and firm to touch.
  • In a large saute pan or wok, heat oil over high heat. Season the chicken with salt, pepper, cayenne, cumin, and garlic, and add to the hot oil. Next add the peppers and onions, and remove pan from the heat and add tequila. Cook for about 5 minutes, or until chicken is cooked thoroughly. Keep warm.
  • Cut 1 flat bread into 4 pieces. On 2 pieces, layer cheese, cooked chicken mixture, and more cheese, and cover with the other 2 pieces. (Wrap the other flatbread and freeze for another use).
  • Lastly, melt butter until very hot in a saute pan over medium-high heat. Add quesadillas and cook for about 2 minutes on each side until toasty and the cheese is melted. Cut quesadillas into 3 pieces each and serve. Garnish with cilantro and scallions, and serve with salsa picante, guacamole, and sour cream, if desired.

2 chicken breasts, boneless, skinless, diced
1 garlic, minced
2 cups stewed tomatoes
2 10-inch flour tortillas
1/2-cup old cheddar cheese, grated
2 green onions, finely sliced

Steps:

  • Heat a pan and lightly coat it with oil. Once the oil is heated, add garlic, salt and pepper and cook until garlic is lightly golden. Add the chicken and cook until done. Pour in tomatoes and reduce until there is no liquid and it has a paste consistency. Add in the green onions. Spoon the chicken mixture into a tortilla. Sprinkle with cheese and wrap. Place in a 500 degree F oven and cook until the cheese is melted and the tortilla is lightly golden.

Steps:

  • For each quesadilla, spread 1 tortilla with 1 tablespoon of the pesto. Top with 1/4 cup of the chicken, 1/4 cup of the spinach and 2 tablespoons of the cheese. Top with a second tortilla.
  • Heat heavy skillet over medium heat. Add 1 quesadilla to skillet. Cook about 2 minutes until bottom is lightly browned. Carefully turn; cook 2 minutes longer until second side is lightly browned and cheese is melted. Repeat with remaining quesadillas.
