Oats, chocolate, nuts, dried fruit, coconut -- did we forget anything? If you like, swap dried tart cherries or cranberries for the raisins.

Nonstick cooking spray
3/4 cup (1 1/2 sticks) unsalted butter, cut into small pieces
1/2 cup confectioners' sugar
1 1/2 cups all-purpose flour (spooned and leveled)
1/2 teaspoon coarse salt
3/4 cup rolled oats (not quick-cooking)
1 cup semisweet chocolate chips (6 ounces)
1 cup walnut pieces, toasted
1/2 cup raisins
1 can (14 ounces) condensed milk
2 cups sweetened shredded coconut (7 ounces)

Steps:

  • Preheat oven to 375 degrees. Line a 9-by-13-inch baking dish with parchment paper, leaving overhang on short sides; lightly coat paper with cooking spray.
  • In a food processor, pulse together butter, confectioners' sugar, flour, and salt until mixture resembles coarse meal. Add oats and pulse until just combined. Press dough evenly into bottom of dish and bake until lightly browned and firm, about 20 minutes.
  • Scatter chocolate chips, walnuts, and raisins on top of crust. Drizzle with condensed milk and top with coconut. Bake until coconut is golden, about 20 minutes. Let cool completely in dish on a wire rack before cutting into 18 squares.

1 (18.25 ounce) package yellow cake mix
½ cup butter, melted
1 egg
1 cup semisweet chocolate chips
1 (8 ounce) package cream cheese, softened
2 eggs
3 ½ cups confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
  • In a large bowl, mix together the cake mix, melted butter and 1 egg until smooth. Batter will be thick. Spread evenly into the bottom of the prepared pan. Next, sprinkle the chocolate chips over the layer of dough. Finally, beat the cream cheese, 2 eggs and confectioners' sugar together in a medium bowl until smooth. Pour as evenly as you can over the chocolate chips.
  • Bake for 35 to 40 minutes in the preheated oven, until the top is set. Let cool for at least 30 minutes before cutting into bars.

  • Preheat oven to 350°F (177°C). Line a 9-inch square baking pan with parchment paper, leaving enough overhang on the sides. Set aside.
  • In a large bowl using handheld or stand mixer, cream the butter and brown sugar together on medium speed. Beat for about 2 minutes until smooth and combined. Add the vanilla extract and egg, beating until combined. Scrape the sides of the bowl down as needed.
  • Add the flour, graham cracker crumbs, baking powder, and salt. With the mixer running on low, slowly mix until combined, then beat in the butterscotch chips. Press graham cracker dough into the prepared baking pan and bake for 5 minutes. Remove from the oven and layer with chocolate chips, coconut, and pecans. Drizzle sweetened condensed milk evenly on top. (Remember, not the full can. 8 ounces is a little more than 1/2 of a 14 ounce standard can.) I sprinkled a couple more butterscotch chips on top, but that’s optional.
  • Bake the bars until set, about 30 minutes. I loosely covered the pan with aluminum foil halfway through baking to prevent browning. Make sure you rotate the pan a couple times during the bake time as well. Allow to cool for 30 minutes at room temperature and then stick in the refrigerator to cool all the way through. Once the bottom of the pan is cold, you may cut the bars into squares.
