Good-'n'-Gooey Fresh Peach Cobbler image

This is a real Texas peach cobbler with an abundance of juicy fruit and a sweet, biscuit-like batter topping that is crunchy on the surface and doughy inside. This recipe comes from Cheryl and Bill Jamison.

Number Of Ingredients 11

12 -14 ripe peaches, peeled and sliced
1/4 cup sugar
1 teaspoon fresh lemon juice
2 teaspoons cinnamon
3/4 teaspoon powdered ginger
3/4 teaspoon vanilla
1/2 cup unsalted butter
1 1/4 cups flour
1 cup sugar
2 teaspoons baking powder
1 cup milk

Steps:

  • Preheat oven to 350 degrees F.
  • In a bowl, mix together all the filling ingredients.
  • Set aside.
  • The filling will be a bit juicier than most pies.
  • Melt butter in a 9x13 baking dish in the oven.
  • In another bowl, stir together flour, sugar, and baking powder, and then add the milk.
  • Mix until lightly blended.
  • Spoon the mixture evenly over the melted butter.
  • DO NOT STIR.
  • Pour the peach filling evenly over batter.
  • Bake 45 minutes.
  • Serve warm, with vanilla ice cream or whipped cream if desired.

The best of two worlds. I love cobbler and was trying to come up with something different. I also love gooey butter cake and make them often. So I put some of both along with a little imagination into this recipe. Here is the result. Gooey peachy deliciousness. This would work well with any cobbler friendly fruit.

CRUST
1 c bisquick baking mix
1/2 c brown sugar, firmly packed
1/2 c sugar
2/3 c milk
1/2 stick butter, unsalted
1 tsp pure vanilla extract
GOOEY LAYER
1 pkg cream cheese 8 oz
2 eggs
3 1/2 c powdered sugar
1 stick butter, unsalted melted
1 tsp pure vanilla extract
PEACHES LAYER
3 c fresh or frozen peaches
1/2 c sugar
3 Tbsp flour
1 pinch salt

Steps:

  • 1. Preheat oven to 350 degrees. Place 1/2 stick of butter in a 9x13 pan and melt in the oven.
  • 2. TO MAKE CRUST LAYER: mix all remaining crust ingredients (except butter) until smooth. Pour 1/2 of the mixture in bottom of pan with melted butter. DO NOT STIR.
  • 3. TO MAKE PEACHES LAYER: Put peaches in a medium saucepan mix in flour, sugar and salt. Heat until mixture thickens slightly. Spoon peaches over crust mixture in pan.
  • 4. TO MAKE GOOEY LAYER: Mix all ingredients until smooth and creamy. Pour over peaches. Make sure each layer is distributed evenly in pan as you pour it. DO NOT mix layers once in pan.
  • 5. Drizzle remaining crust mix on top of cobbler (it will not completely cover the gooey layer). iBake for 45-50 min. Let cool at least 15 minutes before digging in. Excellent warm but good cold too.

2 cups peaches

Steps:

  • Melt butter into the dish you plan to cook inches.
  • In a seperate bowl, mix sugar, milk, and flour.
  • Pour this mixture into your butter. DO NOT MIX!
  • Sprinkle your 2 cups of peaches over the top of your mixture. Still not mixing the ingredients.
  • Bake at 350 degrees for 1 hour.

  • 7. Spoon the mixture evenly over the melted butter. DO NOT STIR!
  • 8. Pour the peach filling evenly over the batter.
  • 9. Bake 45 minutes. Serve warm with vanilla ice cream, whipped cream or delicious all by itself!

1 cup all-purpose flour
1 cup finely chopped pecans
½ cup white sugar
½ cup brown sugar
2 teaspoons ground cinnamon
¼ teaspoon salt
½ cup unsalted butter, cut into pieces and softened
4 medium (blank)s peaches, peeled and thinly sliced
1 cup brown sugar, divided
1 tablespoon cornstarch
1 teaspoon ground cinnamon
1 ¾ cups white sugar
¾ cup unsalted butter, softened
1 tablespoon vanilla extract
1 teaspoon salt
3 large eggs, at room temperature
4 cups all-purpose flour
2 ½ teaspoons baking powder
1 ¼ cups buttermilk
¾ cup sour cream

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease and line a 9x13-inch baking pan with parchment paper. (Allow 1 inch or so of parchment to hang over the sides of the pan if you wish to remove your cake from the pan to slice and serve.)
  • Prepare the topping: Whisk together flour, pecans, white and brown sugars, cinnamon, and salt in a medium bowl. Add butter pieces and use a fork to work them into the dry mixture, stirring and cutting until combined. Refrigerate topping mixture until needed.
  • Prepare the peach filling: Combine peach slices, 1/2 cup brown sugar, cornstarch, and cinnamon in a medium saucepan; gently toss to combine and coat. Place the pan over medium heat; cook, stirring occasionally, until the sugar dissolves and mixture becomes thick and syrupy, 6 to 8 minutes. Remove from heat and set aside to cool.
  • Prepare the cake: Beat together sugar, butter, vanilla, and salt in the bowl of a stand mixer fitted with a paddle attachment until combined and fluffy, 4 to 5 minutes. Mix in eggs, 1 at a time, beating well after each addition.
  • Combine flour and baking powder in a separate bowl. Whisk together buttermilk and sour cream in another separate bowl.
  • Add the flour mixture to the butter mixture in 3 additions, alternating with the sour cream mixture, beating at a low speed to combine.
  • Pour about 2/3 of the batter into the prepared pan. Sprinkle the remaining 1/2 cup of brown sugar from the filling over the batter; use a silicone spatula to gently smooth into an even layer. Spoon the peach filling evenly over the brown sugar; again, use a silicone spatula to gently smooth into an even layer. Spread the remaining batter over the peach filling. Sprinkle the topping mixture evenly over the cake.
  • Bake cake in the preheated oven until golden brown at the edges and cooked through, 70 to 80 minutes, rotating the pan halfway through baking. (Cover the pan with aluminum foil after the first hour of baking if the topping looks dark enough.) Transfer the pan to a wire rack to cool for at least 30 to 40 minutes before slicing.

  • Preheat the oven to 375°F. Prepare a 9 X 13 baking dish with 1 tablespoon of soft butter spread to coat the insides of the dish.
  • First, prepare the peaches. Bring a medium pot of water to a boil. Add a few of the peaches to the water (don't crowd the pot) and boil for 30-45 seconds or until the skin softens and easily pulls away. The time will vary depending on how ripe the peaches are. Use a slotted spoon to remove the peaches from the pot to a cutting board. Cool the peaches until you can handle, then gently rub the skin from the fruit, or use a paring knife to peel the skin from the peaches. Slice the peaches in half and remove the pit, then slice into 1/4-inch pieces.
