TRADITIONAL FRENCH PISTOLETS - LITTLE ONION AND RYE BREAD ROLLS
These lovely little dinner or breakfast rolls are found everywhere in Belgium, and in most parts of France too. The last time I had them was a cosy Bed and Breakfast in Bruges, where they were served warm with fresh butter and boiled eggs for breakfast. They can vary in what type of flour is used, but they must always have the distinctive split, due to them being cut with the handle of a wooden spoon before baking. They are crusty and yet light inside, and make great sandwiches for picnics or a light lunch. This recipe is the result of numerous trial and error baking sessions, and the pistolets bread rolls are nutty and full of onion flavour. I start these off in the bread machine for ease when I am pushed for time, but they are just as easily made the more traditional way, mixing and proving by hand. NB: As one reviewer found out, baking can be a challenge, and in most cases an exact science. Do try to stick to the recipe as written - you won't be disappointed! Thanks!

- To start the dough in the bread machine, add the ingredients in the order posted - except the topping and extra flour for dusting. Put on "dough" setting to mix, prove and rise.
- Pre-heat the oven to 220C/425F/Gas mark 7.
- Once the dough has risen, turn out of the tin on to a floured board and knock back, then knead for a minute or two. Cut into 12 pieces and shape into ovals. Place on well greased and floured baking sheets and cover with oiled cling-film; leave them in a warm place to rise for 30 minutes, or until almost doubled in size.
- Brush the rolls with water and then sprinkle with onion salt or normal salt, before dusting with flour. Using an oiled handle of a wooden spoon, split each roll almost in half lengthways, see photo. Allow to rest for 3 to 5 minutes before baking in pre-heated oven for 15 to 20 minutes. The pistolets should sound hollow when tapped and have a crusty finish. Allow them to cool slightly on a wire rack then serve warm with butter and fillings to taste. These freeze very well.
BROTCHEN -TRADITIONAL GERMAN BREAD ROLLS
When I was living & working in Germany, I would go out every morning for breakfast, & every morning I would eat these little babies! This is a traditional recipe for Brotchen. If you like light, fluffy bread rolls DON'T try these! Brotchen are crusty on the outside but are chewy & quite dense on the inside.........

- In a large mixing bowl, dissolve yeast and sugar in warm water. Let sit until creamy; about 10 minutes.
- Mix in shortening, salt and 3 cups of the flour. Beat with dough whisk or heavy spoon for 2 minutes. Fold in egg whites. Gradually add flour 1/4 cup at a time, until dough forms a mass and begins to pull away from bowl.
- Turn onto a floured surface. Knead, adding more flour as necessary, for 8 to 10 minutes, until smooth and elastic with bubbles.
- Lightly oil a large mixing bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour. Deflate the dough, form into a round and let rise again until doubled, about 45 minutes.
- Preheat oven to 425 degrees F (220 degrees C). Deflate the dough and turn it out onto a lightly floured surface. Divide the dough into 24 equal pieces and form into oval rolls about 3 1/2 inches long. Place on lightly greased baking sheets, cover and let rise until doubled in volume, about 40 minutes.
- Place an empty baking sheet on the bottom rack of the oven. In a small bowl, lightly beat the egg white with the 2 tablespoons of milk to make the egg wash. Lightly brush the risen rolls with the egg wash. Place 1 cup of ice cubes on the hot baking sheet in the oven and immediately place the rolls in the oven.
- Bake at 425 degrees F (220 degrees C) for about 20 minutes or until the tops are golden brown. Remove to a wire rack and cool.

Steps:
- Combine yeast with warm water.
- Combine half the flour, milk, sugar and butter in bowl or bench mixer.
- Pour in yeast and remaining flour.
- Work until smooth and elastic.
- Let rise 1 hour in oiled bowl; cover with cloth.
- Punch down and knead until smooth.
- Divide dough into six, shape into rounds and place on greased tray so rolls just touching.
- Let rise about 40 minutes.
- Brush tops and sides lightly with milk.
- Top with tasty cheese and bake at 200C for about 35 minutes.
- NOTE: You can used grated cheese, or thin slices.

SPANISH CRUSTY BREAD ROLLS
As a lover of all things Spanish, I begged my friend Pia for her recipe of the most delicious bread. As bread is served with every meal in Spain, I returned home desperate for more. Anyway, Pia gave me her recipe & it's a very good likeness (I think her olive oil is far superior than the ones available here in the UK). The bread is great for any meal, my favourite being breakfast, served with butter, jam, orange marmalade or with ham & or cheese. She also states that it's essential to pour yourself a glass of red rioja & put on a cd of the Gypsy Kings.....to get you in the mood!

Steps:
- Mix the yeast in the warm water let sit in a warm place for 10 minutes.
- Add the salt with the flour and sieve into a large bowl.
- Using your fingers, mix in the extra virgin olive oil.
- Slowly pour in the mixed yeast & work the dough with your hands (to a firm dough.
- Place the dough on a flat floured surface . Knead the dough until it becomes firm and elastic.
- Grease the bowl and place the dough inches Cover the bowl with a damp tea towel/cloth and set in a warm place until the dough has doubled in volume.
- Once dough has doubled in size, remove the dough & knead it again on a floured surface, knock back to remove air pockets, until the dough feels smooth.
- Return the dough to a covered bowl and let it rest 10-15 minutes should be sufficient.
- Cut the dough as desired to form rolls or balls and place on greased baking sheet(s). Cut slits in top of bread as desired.
- Let bread raise on baking sheet 30 minutes.
- Place in a very hot oven (450 degrees F) for 30 minutes, or until the tops of the rolls become brown & sound hollow when knocked on the bottom. Remove the bread from baking sheet & allow to cool.
SCOTTISH BAPS - SOFT MORNING BREAD ROLLS
These classic Scottish bread rolls are so easy to make - with only one kneading required. They are soft with a distinctive floured finish and are excellent for all manner of fillings, but especially bacon or cheese and salad. These baps are quite wide without much height, and they must only be baked for a maximum of 10 minutes in order to maintain their soft texture. Preparation time includes the proving and kneading time. They are best eaten on the day that they are made - they are delicious toasted the next day however.

- Rub the butter into the flour and make a well in the centre.
- Cream the yeast with the sugar, then add the liquid and salt, and pour into the well. Mix to a slack dough, adding extra warm liquid if required.
- Allow to rise until the dough has doubled in bulk, for about an hour or two according to temperature.
- Knead, and divide in eight even pieces. Knead each into a ball about the size of a fist, and flatten with the hand. Then lightly roll to a round with a rolling-pin.
- Place the ball doughs on a well-floured baking tray/s, lightly pressing your thumb in to the middle of the baps. Brush with milk and sprinkle flour all over the top of the baps. Prove for 15 to 20 minutes until well risen.
- Bake in the oven at 200°C (400°F) mark 6 for 10 minutes, or until firm and lightly golden brown, but still soft - tap them underneath and they should sound hollow when they are cooked. . Cool on a wire rack. Dust with more flour.
- These freeze very well - serve them with assorted fillings for sandwiches or just split whilst warm and spread with butter.
- US conversions: 1 lb flour = 4 cups. 2 ozs butter = 1/2 stick butter.

BRIDGEFORD PEPPERONI ROLLS

Steps:
- On a lightly floured surface, roll out dough to a 10 x 15 inch rectangle.
- Set aside.
- In a medium size bowl, mix together cream cheese and Parmesan.
- Add Bridgford, Pepperoni, olives, onion and garlic.
- Mix well.
- Spread evenly over dough.
- Roll up dough tightly in jelly-roll fashion.
- Seal seams and edges.
- Cut roll into 30, 1/2 inch slices.
- Place slices swirl-side up on greased baking sheet.
- Bake in a preheated 375° oven for 12-15 minutes.
- Remove from oven and pan to cool on wire rack.
