GOOD LUCK HOPPIN' JOHN
This is an easy way to make Hoppin' John for the new year. It's made with a medley of red and green peppers with onion. The veggies simmer in the slow cooker with broth and black-eyed peas. As it cooks, the flavors meld together creating a flavorful and delicious meal. Serve over a bed of fluffy white rice for a down-home delicious (and lucky) New Year's Day meal. We highly recommend adding a handful of bacon (is bacon ever optional?). It's amazing!

Steps:
- Heat the olive oil.
- Sauté the onion, peppers, and garlic until translucent, about 4-5 min.
- Stir in the black-eyed peas, broth, salt, pepper, and parsley. Add the crumbled bacon if using.
- Pour all into a slow cooker and cook on low for 3-4 hours.
- Serve over the cooked rice. Enjoy. My husband likes to garnish the top of his with freshly chopped onions and more parsley.
