Black-Eyed Pea Dip will be the star of your next party and is the ultimate New Year's Eve appetizer. This EASY Black-Eyed Pea Dip recipe is loaded with black-eyed peas (for good luck!), Rotel, green chiles and cheesy deliciousness! Serve with tortilla chips for a crowd pleasing appetizer!

1/2 cup butter
1 small onion (chopped)
1 teaspoon minced garlic
3 (15-ounce) cans black eyed peas (rinsed & drained)
2 (10-ounce) cans mild Rotel (drained (any brand diced tomatoes and green chiles))
1 (4-ounce) can chopped green chiles (drained)
16 ounces Velveeta cheese*

Steps:

  • Melt butter in a medium to large skillet over medium heat. Add onion and sauté until soft and translucent. Add garlic and continue to sauté for about 1 minute more. Stir in all other ingredients. Continue to cook and stir until cheese melts and mixture becomes smooth, about 5 minutes.
  • Transfer dip to a serving dish or small crockpot to keep the dip warm. Garnish with fresh cilantro, diced tomato and green onion, if you'd like. Serve with tortilla chips and enjoy!

1 (15 ounce) can black-eyed peas, drained
1 teaspoon oregano
1 teaspoon lemon juice
1 -2 teaspoon minced garlic, depending on your taste (I use 2 )
1 tablespoon ketchup
1 tablespoon olive oil
1/8 teaspoon celery seed
1/2 cup roasted green pepper (I just roast them in the oven until black, then cool and peel)
1 teaspoon seasoning salt
1 teaspoon onion powder
1 dash cayenne (optional)

Steps:

  • Put all ingredients in your food processor, and blend until smooth.
  • Refrigerate at least 8 hours to allow for the flavors to meld.
  • Serve with pita chips or fresh veggies.

2 (15 ounce) cans black-eyed peas, rinsed and drained
1 (4 ounce) can jalapenos
1 onion, diced
1/2 cup sour cream
1 (15 ounce) can diced tomatoes
1 (4 ounce) can chilies
1 cup shredded cheddar cheese

Steps:

  • 1. Mash the Black Eyed Peas with a fork, leave some of them whole.
  • 2. Add remaining ingredients and mix.
  • 3. Spread into a baking dish and bake for 30 minutes at 300 degrees.
  • 4. Eat with tortilla chips, crackers, and/or veggies.
  • ***you can use Rotel in place of the diced tomatoes & chilies if it's available where you are. You can also used the canned BEP & Jalapeno's mixed if they're available.***.

2 -4 medium tomatoes, chopped
4 green onions, peeled and chopped or 1 small chopped sweet onion
2 garlic cloves, chopped
1 small green pepper, seeded and chopped
1 -2 jalapeno pepper, seeded and chopped
1/2 cup fresh parsley, minced
1 (8 ounce) can whole kernel corn, drained
1 (8 ounce) bottle zest Italian dressing (sorry, oz. size may not be exact, had to put in a unit size, just get a small bottle)

Steps:

  • Mix all ingredients together in a bowl.
  • Cover and refrigerate 24 hours ahead.
  • Serve with corn chip scoops or Tostitos scoops.

Three ingredients and 20 minutes is all it takes to have a year of good-tasting good luck! I serve this every New Year's Day to a grateful family who otherwise turn up their noses at black-eyed peas. The rule is: You have to eat at least 3 peas for a year of good luck.

1 (15 ounce) can black-eyed peas, drained, rinsed
1 (15 ounce) can diced tomatoes with green chilies, drained, liquid reserved (Ro-Tel is one brand)
1 (1 lb) package Velveeta cheese or 1 (1 lb) package other process American cheese

Steps:

  • Combine the peas and tomatoes in a saucepan and set over low heat.
  • Cut the Velveeta into 1-inch hunks and add to the pan. Cook, stirring occasionally, until the Velveeta melts. This is a slow process -- for the first 10 minutes, it looks as if it will never happen. But don't be tempted to turn up the heat, as the mixture burns easily. (Trust me on this.).
  • Remove from heat and serve. The mixture may seem thin at first, but it thickens well over time, and as it is reheated. Serve with tortilla chips or scoop-shaped corn chips.
  • Eventually the dip gets so thick that chips break as you scoop it, so add a little of the reserved tomato liquid, if needed.

1 1/4 cups dried black-eyed peas
2 garlic cloves, sliced
1 3-ounce package cream cheese, room temperature
1 teaspoon cayenne pepper 1 teaspoon chili powder
1 1/2 cups shredded cheddar (about 6 ounces)
1 bunch green onions, sliced
Tortilla chips

Steps:

  • Place peas in heavy medium saucepan. Add enough water to saucepan to cover peas by 2 inches. Let stand 30 minutes. Drain. Add water to cover peas by 2 inches. Generously salt water. Stir in 1 garlic clove. Boil until peas are very tender, adding more water to pan if necessary, about 1 hour.
  • Using slotted spoon, transfer peas to processor. Process until smooth. Add remaining garlic clove and next 3 ingredients. Pulse until smooth. Season to taste with salt and pepper. Transfer dip to 8-inch-diameter pie plate or quiche dish. (Can be prepared 2 days ahead. Cover and refrigerate.)
  • Preheat oven to 400°F. Top dip with cheddar. Bake until dip is heated through and cheese bubbles, about 20 minutes. Sprinkle dip with green onions and serve with tortilla chips.

  • Saute garlic in oil in medium skillet over medium heat. Add blackeyed peas and mash with a fork. Then add reserved liquid from peas.
  • Add chipotle powder, hot sauce to taste (a couple of drops is all I need since I'm not a native Texan), salsa (your choice of heat and flavor), green chilies and salt. Combine and continue to heat thoroughly. Add cheese (plenty, according to my husband, who IS a native Texan) and stir to melt just before serving.
  • Serve with tortilla chips. I also like to eat them "burrito-style". I recently discovered uncooked Roti-Chapati at Costco. They taste and behave exactly like whole wheat tortillas and go just great with this dip.
