Good-for-You Morning Muffins image

Rhonda Urich was thrilled when we lightened up her Morning Glory Muffins. "In fact, I made a double batch because they freeze so well," she writes from Loveland, Colorado. "My family can't wait to have them again, and I'm adding this makeover recipe to my list of favorites."

Yield 1-1/2 dozen.

Number Of Ingredients 19

1 cup all-purpose flour
1 cup whole wheat flour
3/4 cup ground flaxseed
3/4 cup sugar
2-3/4 teaspoons baking powder
2 teaspoons ground cinnamon
3/4 teaspoon salt
1/4 teaspoon baking soda
4 large egg whites, room temperature
1 large egg, room temperature
1/2 cup unsweetened applesauce
1/3 cup orange juice
1/4 cup canola oil
2 teaspoons vanilla extract
2 cups grated carrots
1/2 cup chopped pecans
1/2 cup sweetened shredded coconut
1/2 cup raisins
1 medium tart apple, peeled and shredded

Steps:

  • In a large bowl, combine the first eight ingredients. In another bowl, beat the egg whites, egg, applesauce, orange juice, oil and vanilla. Stir into dry ingredients just until moistened. Fold in the carrots, pecans, coconut, raisins and apple. , Coat muffin cups with cooking spray or use foil liners; fill three-fourths full. Bake at 350° for 15-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.

I like to grab one of these muffins with coffee on days when I get a late start to work. It's a quick hand-held breakfast.

Number Of Ingredients 11

1/4 cup butter, softened
1/2 cup packed brown sugar
2 large eggs
1 cup sour cream
1 cup shredded carrots
1/2 cup sweetened shredded coconut
1/2 cup raisins
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 cup chopped nuts

Steps:

  • In a small bowl, cream butter and brown sugar. Add eggs and sour cream; beat well. Stir in the carrots, coconut and raisins. , Combine the flour, baking soda and cinnamon; stir into creamed mixture just until moistened. Fold in nuts. , Fill greased or paper-lined muffin cups three-fourths full. Bake at 375° for 20-25 minutes or until a toothpick inserted in muffin comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

2-1/2 cups all-purpose flour
1-1/4 cups sugar
3 teaspoons ground cinnamon
2 teaspoons baking soda
1/2 teaspoon salt
3 eggs
3/4 cup applesauce
1/2 cup vegetable oil
1 teaspoon vanilla extract
2 cups grated carrots
1 medium tart apple, peeled and grated
1 can (8 ounces) crushed pineapple, drained
1/2 cup sweetened shredded coconut
1/2 cup raisins
1/2 cup chopped walnuts

Steps:

  • In a large bowl, combine the first five ingredients. In another bowl, combine the eggs, applesauce, oil and vanilla. Stir in carrots, apple, pineapple, coconut, raisins and nuts., Fill greased or paper-lined muffin cups two-thirds full. Bake at 350° for 20-24 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.

1 ¼ cups white sugar
2 teaspoons baking soda
2 teaspoons ground cinnamon
¼ teaspoon salt
2 cups shredded carrots
½ cup raisins
½ cup chopped walnuts
½ cup unsweetened flaked coconut
1 apple - peeled, cored and shredded
3 eggs
1 cup vegetable oil
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups, or line with paper muffin liners.
  • In a large bowl, mix together flour, sugar, baking soda, cinnamon, and salt. Stir in the carrot, raisins, nuts, coconut, and apple.
  • In a separate bowl, beat together eggs, oil, and vanilla. Stir egg mixture into the carrot/flour mixture, just until moistened. Scoop batter into prepared muffin cups.
  • Bake in preheated oven for 20 minutes, until a toothpick inserted into center of a muffin comes out clean.
