- Preheat the oven to 425 degrees F. Heat the olive oil and butter in a large skillet over medium-high heat. Add the garlic and cook until softened, about 1 minute. Add the greens and 1/2 teaspoon salt; cook, stirring occasionally, until the greens wilt and most of the liquid evaporates, 5 to 7 minutes.
- Meanwhile, roll out the puff pastry on a lightly floured surface until large enough to fit in a 9-inch pie plate. Ease into the pie plate and trim the edge; crimp if desired. Scatter the goat cheese and Parmesan in the crust, then top with the sauteed greens.
- Whisk the eggs, heavy cream, nutmeg, 1/2 teaspoon salt and 1/4 teaspoon pepper in a medium bowl; pour over the greens. Bake until the crust is golden brown and the quiche is set, about 20 minutes. Slice into wedges.

- Preheat the oven to fan 170C/ conventional 190C/gas 5. Melt the butter in a medium saucepan and cook the green vegetables and onions for 5 minutes, stirring until starting to soften. Tip the milk and flour into the pan and stir over the heat until it thickens to a smooth sauce. Cool for 5 minutes or so, stirring to stop a skin forming.
- Beat the eggs into the sauce and generously season. Pour into the pastry case and scatter with the goat's cheese and tomatoes.
- Bake for 40 minutes until the filling is set, turning golden. Cool for a few minutes before taking from the tin. Serve with a green salad.

GOAT'S CHEESE & WATERCRESS QUICHE
A goat's cheese and watercress quiche that's gluten-free and truly flavoursome

- Put the flour and a pinch of salt in a large bowl. Rub in the butter until the mixture looks like breadcrumbs. Stir in the egg and about 1-2 tbsp water to form a soft dough. Knead well then wrap and chill for at least 30 minutes.
- Preheat the oven to 200C/gas 6/fan 180C. Knead the pastry again and roll it out to line a 20cm loose-bottomed flan tin (the pastry won't shrink, so no need to chill). Patch holes with spare pastry and brush the base and sides with egg.
- For the filling, fry the onion in the oil until just soft, add the watercress and cook until just wilted. Beat the eggs and milk and stir in the watercress mixture and goat's cheese.
- Season and if you like, add a pinch of nutmeg. Put the flan tin on a bakingsheet and bake the pastry blind for 5 minutes. Add the filling and bake for 15 minutes. Reduce heat to 180C/gas 4/ fan 160C and cook for 25-30 minutes or until lightly set.

QUICHE WITH HERBS AND GOAT CHEESE
This green quiche laden with herbs and with thin slices of fresh goat cheese baked on top has a Gallic rusticity. A proper quiche (also known as a tarte salée, or savory open pie) should have really good pastry and contain a soft, tender eggy custard. It should be light enough to serve as a first course, or in larger portions for a simple main course. It should be something to sing about.

- Bake prepared dough at 375 degrees for 15 to 20 minutes, until lightly browned. Patch any small holes with leftover dough. Cool.
- Make the custard: in mixing bowl, beat eggs. Whisk in half-and-half, salt, pepper, lemon zest, thyme, scallions and parsley. Set aside.
- Set tart pan on a baking sheet. Spread goat cheese slices evenly over bottom of pastry. Beat custard once more and carefully pour into shell. Bake at 375 degrees for 30 to 35 minutes, until top is golden and custard is set. Cool for 10 minutes. Serve warm or at room temperature.

TENDERSTEM AND GOATS’ CHEESE QUICHE RECIPE

- Start by making the pastry. Rub the flour, salt and butter together with your fingertips (or pulse in a food processor) until the mixture looks like breadcrumbs. Stir in the Parmesan and a grind of black pepper. Beat the egg yolk with 2 tablespoons cold water and add to the mixture. Bring together with a knife, adding a little more water if needed, then shape into a ball by hand. Pat out into a disc, wrap and chill for at least 30 minutes.
- Roll out the pastry on a floured surface and use to line a deep 23cm loose-based tart tin, pressing the pastry into the grooves, then trimming off the excess. Prick the base with a fork and chill for a further 30 minutes. Preheat the oven to 200°C, fan 180°C, gas 6.
- Line the tart case with a piece of crumpled baking paper and add baking beans or rice. Bake on a tray for 15 minutes, then remove the paper and beans, and return to the oven to cook for a further 5-10 minutes until the pastry is pale gold, crisp and dry. As soon as it comes out of the oven, brush with the lightly beaten egg white to help provide a leakproof seal to the pastry. Reduce the oven to 180°C, fan 160°C, gas 4.
- For the filling, toss the spring onions with the oil to coat and griddle for 4-5 minutes, turning regularly, until tender and slightly charred. Set aside on a plate to cool slightly. Meanwhile, add the Tenderstem to a pan of salted boiling water, return to the boil and cook for just 2 minutes. Refresh in cold water, drain well and pat dry on kitchen paper. Cut off the bottom half of the stems and chop these roughly. Scatter in the base of the tart case, along with half the griddled onions.
