GOAT CHEESE BISCUITS
If you like biscuits, and you love goat cheese, these fluffy creations are amazing. I saw them featured on Oprah, and after giving them a try, I understand why they're so popular!

Steps:
- Preheat your oven to 425.
- Place one 10-inch cast iron pan into the oven while it is preheating. Put flour, salt, baking soda and baking powder into a medium-sized bowl. Cut in the butter and goat cheese.
- Make a well in the middle of the ingredients and pour in the milk. Stir until the mix is moistened, adding an extra tablespoon of milk if needed.
- Remove skillet from oven and put in 1 tablespoons of butter. When the butter has melted, drop 1/4 cupfuls of batter into the pan. Brush the tops of the biscuits with melted butter.
- Bake from 14-16 minutes until browned on the top and bottom. Remove from the oven and sprinkle with the grated cheese. Enjoy warm!

I wanted to capture the flavor of cheese biscuits from a popular restaurant. So I took my favorite buttermilk biscuit recipe and added to it.

- In a large bowl, combine the first five ingredients. Add cheeses. , In a small bowl, combine buttermilk and oil. Stir into dry ingredients just until moistened. Drop by 1/4 cupfuls 2 in. apart onto a greased baking sheet. Sprinkle with additional Parmesan cheese if desired. , Bake at 450° for 10-12 minutes or until golden brown. Serve warm.

- Preheat oven to 450 degrees F (230 degrees C). Lightly grease a baking sheet.
- In a large bowl, mix together flour, baking powder, chives, garlic salt and salt. Cut in the shortening until the mixture has only small lumps. Add milk and cheese and stir until moistened. Drop dough by heaping spoonfuls onto prepared baking sheet.
- Bake in preheated oven for 12 to 15 minutes, until golden.
