Homemade Shake and Bake | Copycat Shake and Bake (Keto), is super easy to make, homemade, healthy, and tastes much better than the original. The best part - this recipe is sugar-free, gluten-free, low carb, keto-friendly, and all ingredients are pronounceable. You can feel good about that! 2-1/2 cups pork rind panko
1/2 cup almond flour
1 tsp kosher salt
1/2 Tbsp. celery salt
1/2 Tbsp. paprika
1/2 tsp pepper
1/4 tsp garlic powder
1/4 tsp garlic salt
1/4 tsp minced dried onions
1/8 tsp dried parsley
1/8 tsp dried oregano
1/8 tsp dried basil

Steps:

  • In a bowl mix all ingredients and transfer to an airtight container if storing for later. 1 recipe is an approximate equivalent to 2 packages of Shake and Bake seasoning.
  • Preheat oven to 400 degrees F. Transfer half of copycat shake and bake mixture to a gallon sized plastic bag or a bowl. This recipe will use 2 to 2-1/2 pounds of bone-in or boneless chicken or pork pieces.
  • Rinse chicken or pork pieces in water and place one piece at a time in a plastic bag. Shake bag until each piece is coated and then place on a foil or parchment lined baking sheet. Continue until all pieces are covered, throw away an excess copycat shake 'n bake left in the bag.
  • Bake bone-in chicken pieces for 45 mins, boneless chicken 20 to 25 minutes. Bake bone-in or boneless pork chops for 20 minutes (1/2" thick pieces). Temperature of chicken should reach 165 degrees F and pork 145 degrees F.

3 tablespoons vegetable oil
1 1/2 teaspoons salt
1 1/2 teaspoons paprika
1 1/2 teaspoons celery salt

1 pinch dried parsley
1 pinch dried oregano
1 pinch dried basil

Steps:

  • Place bread slices on a tray in a 350 degree oven until they are toasted and dried out, about 15 minutes, turning after 10 minutes.
  • Process to a fine powder in either a food processer or blender.
  • Combine all of the ingredients in a resealable plastic bag and shake.
  • Put in meat one piece at a time and shake to coat evenly.

This is my go-to recipe when I'm in a hurry. It's so easy, and yet so good. Because of the coating, the chicken is always extra juicy. Kids can't tell they're nuts (looks like breading) and love it. It's healthy (and grain-free for those with allergies). Everyone asks me for the recipe...that's my cue to add it to Allrecipes!

½ cup almond meal
1 teaspoon ground paprika
1 teaspoon sea salt
1 teaspoon ground black pepper
4 skinless, boneless chicken thighs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine almond meal, paprika, sea salt, and black pepper together in a resealable bag. Put each chicken thigh into bag, 1 at a time; close bag and shake until evenly coated. Place chicken in a glass baking dish.
  • Bake in the preheated oven until no longer pink in the center and the juices run clear, 25 to 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

I found this recipe on a nice German website about American food. It has become my standard coating mix for meat, fish and tofu. And I use it instead of breadcrumbs in meat balls or meat loafs. According to the site I got the recipe from, you can use the mix without egg and then bake your coated foods in the oven. As I didn't try that yet, I can't guarantee it will work. The recipe called for raw sesame seeds, but I think they're nicer when toasted. Also it only says to crush the corn flakes. That's okay, too, but I find it stucks better to the meat when powdery, so I use to blend everything. And of course you can add more or other herbs or spices to your taste!

3 cups unsweetened corn flakes
1/2 cup sesame seeds
4 teaspoons dried parsley
2 teaspoons salt
1 teaspoon paprika
1 taespoon mustard powder
1 teaspoon celery salt
1 teaspoon onion salt (or powder)
1 teaspoon black pepper

Steps:

  • Toast the sesame seeds in an ungreased skillet. Allow to cool.
  • Place everything in a food processor or blender and process until powdery. Depending on your liking make it more or less powdery, but don't overmix because the sesame seeds will become tahini --
  • Store in airtight container.
  • To coat, beat two eggs, toss meat, fish or tofu (or veggies) in eggs, then in coating mix. Fry.
  • Shake'n bake works very well with this.
  • Or use it in recipes calling for breadcrumbs - it adds a very nice flavor.

1 teaspoon ground black pepper

Steps:

  • Combine flour, cornmeal, cumin, onion powder, garlic powder, oregano, cayenne, salt, and black pepper in a large resealable bag. Shake well to combine.
  • To use: Remove 1/2 cup of the mixture and place in a smaller resealable bag. Cut chicken (or desired meat) into serving pieces and place into the bag, a few at a time. Shake until well covered.

Steps:

  • In a large resealable plastic bag combine the crumbs, oil, salt, paprika, celery salt, pepper, garlic salt, minced garlic, minced onion, basil, parsley and oregano. Seal bag and shake all ingredients together.
