Gluten-Free Indian Spiced Salmon with Dal and Raita image

Here's a tasty way to get your fish fix that your whole family will love.

1 cup plain fat-free yogurt
1 English (seedless) cucumber, diced
1/4 cup finely chopped fresh cilantro
2 green onions, finely chopped
2 teaspoons olive oil
1/2 cup finely chopped yellow onion
2 teaspoons ground cardamom
1 teaspoon salt
2 cups red lentils (dal), rinsed, drained
1 can (28 oz) fire-roasted diced tomatoes, undrained
3 cups water
1 tablespoon olive oil
1/2 teaspoon salt
2 tablespoons garam masala
8 salmon fillets, skin on (4 oz each)

Steps:

  • In medium bowl, mix Raita ingredients. Cover; refrigerate until ready to serve.
  • In 4-quart saucepan, heat 2 teaspoons oil over medium heat until hot. Add yellow onion; cook and stir about 4 minutes or until soft. Add cardamom and salt; cook and stir 30 seconds. Add lentils, tomatoes and water. Increase heat to medium-high; heat to boiling. Reduce heat to medium-low. Cover; cook about 30 minutes, stirring frequently, until lentils are soft and liquid is absorbed.
  • Meanwhile, in medium bowl, beat 1 tablespoon oil, 1/2 teaspoon salt and the garam masala. Add salmon; toss to coat.
  • Heat 10-inch skillet over medium-high heat. Place salmon fillets in skillet, skin side down. Cook 5 to 6 minutes on each side or until fish flakes easily with fork.
  • To serve, divide dal evenly among 8 serving plates. Top with salmon and raita.

1/2 cup coarsely chopped peeled fresh ginger
1/4 cup vegetable oil plus more
1 tablespoon plus 1 teaspoon garam masala
2 garlic cloves, coarsely chopped
2 teaspoons ground coriander
1 1/2 teaspoons ground cumin
1 2-pound center-cut piece of boneless salmon fillet, skin on
Kosher salt and freshly ground black pepper
1 cup plain whole-milk yogurt
3/4 cup finely chopped peeled, seeded cucumber
2 tablespoons finely chopped fresh cilantro, plus more for garnish
2 scallions, finely chopped
1 tablespoon fresh lime juice
Ingredient info: Garam masala, an Indian spice mixture, is available in the spice section of better supermarkets and at Indian markets.

Steps:

  • Prepare grill (medium-high heat). Purée ginger, 1/4 cup oil, 1 tablespoon garam masala, garlic, coriander, and cumin in a blender until coarse purée forms. Put salmon into a baking dish and season with salt and pepper. Coat salmon with ginger pureée. Let marinate at room temperature for 15 minutes.
  • Meanwhile, stir yogurt, cucumber, cilantro, scallions, lime juice, and remaining 1 teaspoon garam masala in a medium bowl. Season raita to taste with salt and pepper.
  • Brush the grill rack with oil. Brush off marinade for easier grilling, or leave it on for a better crust. Grill salmon, turning once, until it just begins to flake in center, 4-5 minutes per side. Transfer salmon to a platter. Garnish with cilantro. Serve with raita.

CORIANDER & MINT RAITA

1 tsp cumin seeds
1 tsp mustard seeds
1 small pack mint
1 small pack coriander
1 green chilli , ¾ roughly chopped, the remainder sliced, to serve
200g Greek yogurt
1 lime , juiced

Steps:

  • Toast the spices in a dry pan until fragrant, then tip into a mortar and grind to a powder with a pestle. Tip into a food processor with all the remaining ingredients except the lime juice. Blitz, adding a splash of water to loosen, then season and add the lime juice to taste. Leave in the fridge while you prepare the rest of the dishes. Scatter with the remaining chilli, to serve.

500g skinless salmon fillet, cut into 4cm cubes
For the marinade:
4 tablespoons Greek yogurt
1 tablespoon garlic granules
1 heaped tablespoon rose harissa
1 teaspoon ground turmeric
1 teaspoon paprika
Finely grated zest of 1 unwaxed lime and a good squeeze of juice
1 teaspoon olive oil
Generous amount of Maldon sea salt flakes and freshly ground black pepper
To serve:
Tortilla wraps
Sliced tomatoes
Finely sliced onion
Coriander leaves
Greek yogurt

Steps:

  • Preheat your oven to its highest setting (with fan if it has one). Line a baking tray with baking paper.
  • Mix all the marinade ingredients together in a mixing bowl. Add the salmon and turn until well coated in the marinade.
  • Spread the salmon out on the prepared baking tray and roast for 10 minutes until cooked through. Remove from the oven and serve immediately with tortilla wraps, tomatoes, finely sliced onion, coriander leaves and Greek yogurt.

1 tbsp tamarind paste
1 large lime , juiced
1 tbsp soft light brown sugar
½ tsp salt
1 tsp hot chilli powder
2 tsp ground turmeric
2 garlic cloves , grated to a purée
2cm piece ginger , peeled and grated to a purée
4 salmon fillets , 170-200g each
2 tbsp groundnut oil or ghee
2 dried Kashmiri chillies
rice , lime wedges and chutney, to serve

Steps:

  • Preheat oven to 200C/180C fan/gas 6. Mix the tamarind paste with the lime, sugar, salt, chilli powder, turmeric, garlic and ginger. Add enough water - you won't need much - to make sufficient marinade to coat the four pieces of fish. Turn the salmon over in the marinade, making sure it gets well coated, cover and put in the fridge for 1 hr (or 30 mins is fine if you're in a rush).
  • Heat the oil in a large frying pan and add the chillies. Fry over a medium heat for 30-40 secs, then add the salmon fillets. Brown the fillets on each side (including the skin), then transfer them to a roasting tin. Spoon some of the chilli oil from the pan over them. Bake in the oven for 12 mins, or until the fish is cooked right through to the centre (check with the tip of a knife). Serve with rice, lime wedges and an Indian chutney.

1 bag (1 lb) frozen bell pepper and onion stir-fry
1 medium zucchini, cut into julienne (matchstick-size) strips
1 salmon fillet (1 lb), cut into 4 pieces
2 tablespoons chopped fresh basil leaves
1/2 teaspoon seasoned salt
1 teaspoon gluten-free lemon-pepper seasoning
1/4 cup Progresso™ chicken broth (from 32-oz carton)

Steps:

  • Spray 12-inch skillet with cooking spray without flour; add oil and heat over medium heat. Add bell pepper stir-fry; cook 2 minutes, stirring occasionally. Stir in zucchini.
  • Place salmon, skin side down, in skillet, pushing down into vegetables if necessary. Sprinkle salmon and vegetables with basil, seasoned salt and lemon-pepper seasoning. Pour broth over salmon and vegetables.
  • Reduce heat to medium-low; cover and cook 8 to 10 minutes or until salmon flakes easily with fork. Remove salmon and vegetables from skillet with slotted spoon.
