I received this recipe from my boss, Glenn, and it's become my personal favourite meatloaf recipe. I personally like to double the topping, but then I like a lot of sauce :) I hope you enjoy it as much as my family does! Serve with Glenn's Thai Mashed Potatoes (also posted on Recipezaar).

1 lb ground lean pork
1 lb ground chicken or 1 lb ground turkey
1/4 cup fresh cilantro leaves, chopped
3 green onions, chopped
2 garlic cloves, minced
3 tablespoons oyster sauce
1 tablespoon fish sauce
2 teaspoons hot chili sauce
1/2 teaspoon black pepper
2 eggs
3/4 cup dry breadcrumbs (preferrably panko)
1/4 cup ketchup
1 teaspoon hot chili sauce
1 teaspoon soy sauce

Steps:

  • In a large bowl, combine pork, chicken, cilantro, green onions, garlic, oyster sauce, fish sauce, pepper, eggs, and bread crumbs. Combine thoroughly.
  • Pack into a 9 by 5 inch (2L) parchment lined loaf pan. Bake in a preheated 350 F (180 C) oven for 55 minutes.
  • Meanwile, in a small bowl, combine the ketchup, chili sauce and soy sauce. Spread over the top of the meatloaf . Return to oven and bake for 20 to 25 minutes or until a meat thermometer registers 170 F (77 C).
  • Let stand for 5 minutes. Pour off any accumulated juices. Cut into slices.

This is pure and simple, the perfectly seasoned, down-home version you remember from way way back. So next time you're missing mama's cooking or need a meal that'll go over well with the whole fam, turn to this can't-miss recipe.

1 lb lean (at least 80%) ground beef
1/4 cup finely chopped onion
2 eggs, beaten
1 cup Progresso™ plain bread crumbs
1 teaspoon Italian seasoning
1/2 cup ketchup
1/2 cup milk
1/4 cup ketchup

Steps:

  • Heat oven to 350°F. In large bowl, mix Meatloaf ingredients well. Press mixture in ungreased 8x4-inch loaf pan. Bake 40 minutes.
  • Remove from oven. Spread 1/4 cup ketchup evenly over top. Bake an additional 15 to 20 minutes or until meat thermometer inserted in center of loaf reads 160°F. Let stand 10 minutes before serving.

  • Pound the peanuts using a mortar and pestle, or chop them, until the largest pieces are no larger than ⅛ inch.
  • Unmold the meatloaf or leave it in the pan for serving. Pour the sauce over the finished meatloaf. Garnish with the bell pepper if desired. If you have extra sauce, serve it on the side in case you want more.
