One summer my mother-in-law made us grilled peaches basted with a sweet and tangy sauce. These are so good I'm always tempted to eat the whole batch. -Kristin Van Dyken, West Richland, Washington

Yield 6 servings (1/2 cup glaze).

Number Of Ingredients 5

1/2 cup balsamic vinegar
1/2 cup honey
Dash salt
6 medium peaches or nectarines, halved and pitted
Vanilla ice cream, optional

Steps:

  • In a small saucepan, combine vinegar, honey and salt; cook and stir over low heat until blended, 2-3 minutes. Reserve 1/3 cup mixture for brushing peaches., Bring remaining mixture to a boil over medium heat; cook and stir just until mixture begins to thicken slightly (do not overcook), 4-6 minutes. Remove from heat., Brush peaches with some of the reserved balsamic mixture. Grill, covered, on an oiled rack over medium heat until caramelized, brushing occasionally with remaining reserved balsamic mixture, 6-8 minutes on each side. Serve with glaze and, if desired, ice cream.

1/2 cup plus 2 tablespoons honey
1/4 cup balsamic vinegar
1/2 teaspoon vanilla extract
1 8-ounce container crème fraîche
6 firm but ripe nectarines, halved, pitted

Steps:

  • Whisk 1/2 cup honey, vinegar, and vanilla in small bowl. Whisk crème fraîche and remaining 2 tablespoons honey in medium bowl to blend. (Glaze and crème fraîche mixture can be made 1 day ahead. Cover separately. Refrigerate crème fraîche mixture. Rewhisk both before using.)
  • Prepare barbecue (medium-high heat). Brush nectarines generously with half of glaze. Grill until heated through, turning occasionally, about 4 minutes. Arrange 2 nectarine halves, cut side up, on each plate. Drizzle with remaining glaze. Spoon some crème fraîche mixture into center of each nectarine half and serve.

4 medium nectarines or 4 medium peaches, peeled
1/4 cup orange marmalade
1 tablespoon margarine or 1 tablespoon butter
1 tablespoon orange juice
chocolate fudge topping

Steps:

  • Carefully remove and discard the pits from the nectarines or peaches, leaving the fruit whole.
  • For glaze, in a medium skillet combine the marmalade, margarine or butter and orange juice.
  • Heat over medium heat just until margarine and marmalade are melted.
  • Add fruit. Spoon glaze over fruit. Bring to boiling; reduce heat.
  • Cover and simmer for 7 to 9 minutes or until fruit is tender, gently stirring once.
  • To serve, divide fruit among 4 dessert dishes. Spoon glaze and chocolate topping over fruit.

4 boneless pork loin chops (6 ounces each)
1/2 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon pepper
3 tablespoons all-purpose flour
1 tablespoon canola oil
1 small onion, finely chopped
1 garlic clove, minced
3 medium nectarines or peeled peaches, cut into 1/2-inch slices
1/2 cup reduced-sodium chicken broth
1 tablespoon honey, optional

Steps:

  • Sprinkle pork chops with seasonings. Dredge lightly with flour. In a large skillet, heat oil over medium heat; cook chops until a thermometer reads 145°, 4-5 minutes per side. Remove from pan; keep warm., Add onion to same pan; cook and stir over medium heat 2 minutes. Add garlic; cook and stir 1 minute. Add nectarines; cook until lightly browned on both sides. Stir in broth and, if desired, honey; bring to a boil. Reduce heat. Simmer, uncovered, until nectarines are softened and sauce is slightly thickened, about 5 minutes. Serve with chops.

This is a very easy and delicious dessert - and looks great too! You could make your own custard if you prefer. Adapted from Super Food Ideas February 2003 edition. Correct quantity of strawberries and blueberries is 1 punnet each - have taken guess at weight to comply with 'Zaar posting rules.

1/4 cup brandy
2 tablespoons brown sugar
2 tablespoons strawberry jam
150 g strawberries, washed, hulled and quartered
150 g blueberries, washed and dried
4 nectarines, sliced
1 cup sliced almonds
500 ml prepared custard

Steps:

  • Gently heat brandy, sugar and jam in small saucepan until melted.
  • Place berries in a bowl.
  • Toss brandy mixture through.
  • Refrigerate.
  • Top berries with almonds.
  • Serve with custard and sliced nectarines on the side.
